They aspired to create something that fused their respective backgrounds and heritages, as well as representing their journey together. As a consequence, London to Lima Gin was born! The name reflects the journey that Alex and his family took. Prior to leaving the UK in 2012, Alex became a liverymen of the Distillers and it was then that he began to hone his own distillation technique. Size: 500ML Proof: 90 (45%ABV) Origin: France Distillery: Metté A classic flavour of eau de vie from Metté, this expression is made with wild raspberries, bringing a palate filled to the brim with vibrant fruits notes to the table. Distillery Information Founded in 1962 by Jean-Paul Metté, distillerie metté is a family business located in the village of Ribeauvillé, Alsace. For more than fifty years, the distillery has been producing exceptional eaux-de-vie and liqueurs based on traditional craftsmanship passed down from generation to generation. At the heart of their approach, the quality of the fruits used is paramount. Contrary to popular belief, the fruits used for distillation are not spoiled products, but top-quality fruits. Producers who work with the distillerie metté know how high the requirement of the master distiller is, and therefore strive to deliver impeccable fruit. The distillation process itself is very meticulous and respectful of tradition. The naturally sweet fruits are fermented in barrels for six to eight weeks, while the berries, flowers and spices are macerated in a wine brandy. The precise timing of distillation is chosen by the distiller, Timothée Traber, based on the smell, taste and appearance of the fruit. The fruits are then distilled in small traditional copper stills, the same as those used by Jean-Paul Metté. The eaux-de-vie are distilled twice to ensure a perfect balance, and the stills are carefully cleaned between each distillation to preserve the taste of the brandy.

Whiskey: Miyagikyo Aromatic Yeast - Nikka Discovery 700ML A Japanese single malt that explores and celebrates fermentation and the fruity, floral notes formed during that part of the production process. Order from the Largest & Most Trusted Premium Spirits Marketplace! Featured in ROLLING STONE MEN'S JOURNAL US WEEKLY ALL ORDERS PLACED ARE GUARANTEED and WILL NOT be cancelled like with other retailers. Many other small liquor store sites will end up cancelling your order due to the high demand and unavailability. Size: 700ML Proof: 94 (47%ABV) Origin: Japan Distillery: Miyagikyo A Japanese single malt that explores and celebrates fermentation and the fruity, floral notes formed during that part of the production process. In contrast to many Scottish producers, for example, Nikka (and other Japanese producers) use various yeast strains, and experiment with many more. These strains are closely protected, and it's great to see a couple of releases highlighting their contribution - the other being the peated Yoichi Aromatic Yeast from Nikka's other malt whisky distillery. Miyagikyo Aromatic Yeast - Nikka Discovery 700ML Tasting Notes Nose: Refined, full of ardour. The very exuberant first nose (lavender, marshmallow, marsh mallow plant) is also softly liquoricey and lush (malted barley). Allowed to breathe, succulent perfumes of comté cheese, flowering meadow, and fruits (peach, pear, apricot) intensely take hold of the olfactory arena. Palate: Radiant, well-balanced. The full-bodied attack is at first refreshingly herbaceous (barley field, fern). Very delicately, the mid-palate then becomes wonderfully rich (brioche, leavened baguette). Finish: Long, silky. Closely linked to the end of the palate, incredibly fresh flavours of herbal tea (sage, camomile, verbena) cross through the start of the finish. Distillery Information Miyagikyo distillery, formerly Sendai and Sakunami, was founded in 1969 as Nikka’s second distillery after the celebrated Yoichi on Hokkaido. As with Yoichi thirty-four years earlier, Miyagikyo was the brainchild of the great Masataka Taketsuru. Supposedly he stumbled upon the picturesque location by chance, instantly realising its potential as a prime spot for whisky production. The distillery has eight pot stills and two pairs of Coffey stills making its capacity more than double that of its more famous elder brother. Award winning in their own right, Miyagikyo’s whiskies are softer than those made at Yoichi making them vital for a number of Nikka products.

Size: 700ML Proof: 96 (48%ABV) Origin: Japan Distillery: Yoichi Fruity, floral, peated Japanese single malt from Yoichi distillery on Japan's nothernmost main island, Hokkaido. It's one of a pair of exciting Nikka releases based around aromas and flavours from fermentation and yeast, the other being Miyagikyo Aromatic Yeast, an unpeated whisky from Yoichi's sister distillery. Utilising their experience of using and experimentating with various different yeast strains, Nikka fermented this batch of whisky at a low temperature for a particularly estery character said to be akin to a fine daiginjo sake. Yoichi Aromatic Yeast - Nikka Discovery 700ML Tasting Notes Nose: Fine, distinguished. On the first nose, a herbaceous, salty and empyreumatic (sleet) peat clearly dominates. Allowed to breathe, it makes way for fruits (apple, pear, Canary melon), flowers (lily, carnation) and mint, all of which bring lots of momentum to the aroma palette. Gradually, it becomes increasingly milky (cream, coconut), exotic (pineapple, yellow kiwi) and medicinal (ointment, Arnica). Palate: Firm, lively. Giving its own take on the herbaceous, salty and empyreumatic register of the first nose, the attack also evokes a field of barley swept with sea spray. The more earthy and rooted mid-palate pours blocks of peat onto the tongue. The floral (tulip, cyclamen) and fruity (Mirabelle plum, greengage plum) end of the palate is also rustic and marine. Finish: Long, crisp. Unexpectedly, the start of the finish invites us to bite joyfully into whole bunches of white grapes. Flavours of plum and pulp bring lots of smoothness to the end of the palate. On the retro-nasal olfaction, evoking an evanescent peat, a fine layer of liquorice delicately coats the taste buds. The empty glass releases wisps of translucent smoke. Distillery Information The Yoichi distillery (formerly known as the Hokkaido distillery) was the first of Nikka’s distilleries, founded by the great Masataka Taketsuru back in 1934. Following his studies of whisky making techniques in Scotland, Taketsuru built his distillery in the town of Yoichi on the islands of Hokkaido, the northernmost of Japan’s main islands, as he thought it most matched the environment of Scotland. A picturesque location - the distillery is surrounded by mountains on...

Using an artisanal stone mill to grind grains like corn and rye into meal, Sugarlands Distilling Company then mixes in pure Smoky Mountain water to create the mash. From there, the liquid is transferred to the fermenter to simmer for a few days, and when the time is right, that "wash" is pumped into the copper pot still where it is heated and distilled. The alcohol vapor filters through the copper pipes and rises through the plates of the distillation column, down through the chilling column to cool and is finally poured out of the Spirit Safe.
