The name is of course a reference to the solera ageing system, which Starward spins its own take on to age this whisky. A little marzipan lingers underneath. Palate: A rich, but well-balanced palate begins with toasted oak and more jammy fruit compote – damsons, black currants and dried figs – before creme brulee, milky coffee and winter spice notes emerge. The brand currently works out of a purpose-built distillery in Melbourne’s Docklands Precinct, which was established in 2016. This move allowed Starward to double its capacity to 50,000 nine-litre cases annually. The distillery also features on-site maturation warehouses and state-of-the-art visitor facilities including a bar. The tools and ingredients to create an authentically Australian whisky include barley sourced from between Hunter Valley in Northern Sydney and the Adelaide Hills and apera and red wine casks from Victoria to mature the whisky. The distillery refers to the amount of time a whisky spends in cask as ‘Melbourne years’, which refers to the phenomenon that occurs when whisky is aged in a warmer climate, which affects the maturation process and has the apparent influence of accelerating it. Starward continue to create affordable, approachable and modern whisky with a uniquely Australian character.

Made from grapes harvested at its Las Cruces vineyard in Chipiona, before maturing in Jerez de la Frontera. Packed with intensely rich, sweet fruit notes, this will pair well with good cheese and should add some fantastic sweetness to cocktails. Distillery Information Bodegas Lustau is a famous Sherry producer in Andalucia and is arguably the most recognized fortified wine producer in the world. It was was founded in 1896 by José Ruiz-Berdejo as an almacenista, which also grew its own vines. Almacenistas generally bought young wine (Ruiz made his own) and matured them in their own soleras, before selling them to larger houses, who would either blend it with older wine, or mature it longer in their larger soleras. It wasn't until the 1950s that Ruiz's son-in-law Emilio Lustau Ortega began bottling and exporting his own wine. Now based in Jerez, Lustau is the only winery that has sites in all three cities of the Sherry triangle: Jerez de la Frontera, El Puerto de Santa María and Sanlúcar de Barrameda. Lustau buys fruit from vineyards, while also maintaining two of its own. The first is the Montegilillo vineyard, which is on the white limestone albariza soil local to the region. The second is the Las Cruces vineyard, which is on sandy coastal soils. Lustau now produces a range of Sherry, but achieves the most recognition for its Almacenista collection. Continuing the tradition, the collection is series of single offerings from smaller producers that Lustau bottles and distributes. The style of the local producer is maintained and their name is featured on the bottle.

Size: 350ML Proof: 80 (40%ABV) Origin: United Kingdom Distillery: Miller's Here we have the Solera Reserve edition of Martin Miller's 9 Moons gin. Whereas the original expression is matured in bourbon casks, this bottling spent its nine moons (or in layman's terms, months) in a French oak solera cask over in Iceland. It'll be intriguing to compare the two cask types against each other, we reckon. Distillery Information Martin Miller’s London Dry was launched in 1999, launched around a decade ahead of the gin boom. Martin Miller quested to create a seductive gin so good that it would rejuvenate the market, experimenting with different combinations and proportions of botanicals. The gin is distilled at Langley’s distillery in the west midlands using traditional methods, with the help of the beloved copper pot still named ‘Angela’. Once the distillation is over, slightly absurdly, the gin is then taken on a 3,000 mile round trip to Iceland to be blended with some of the world’s purest water. Sadly, Martin Miller passed away in 2013, though he left behind him a heritage that will long be remembered.

After blending, the sherry is returned to a solera for further maturation. This aging process intends to recreate that of 17th Century wine casks, which were strapped to ships headed for the Indies, with the resulting wine said to boast a characteristically smooth and complex nature. A super sipper for after supper, whether you're having cake or a cheeseboard.
