Two years later, he located a winery facility on Anacapa Street, just two blocks from the Pacific Ocean.Santa Barbara Winery has become an extremely visible and successful wine concern, winning many medals for an array of wines. Lafond is now in the midst of a signifi cant expansion in order to meet the desires of the consuming public. Initially Lafond used grapes from outside the county, notably zinfandel from Bill York's vineyards in Templeton. York Winery, later York Mountain Winery, had its own historic allure: it was the oldest winery in San Luis Obispo County, and it had vinified grapes for the famous Polish statesman and virtuoso pianist Ignace Paderewski.Santa Barbara Winery is currently building a new facility at its vineyard on Santa Rosa Road that will more than double the winery's total production, from a current 20,000 to 44,000 cases. Only 125 km from the African coastline, conditions here are extreme. The porous, black volcanic soils have extremely high drainage, lowering the water content of soils that are only nourished by a few inches of rain per year. The winds that blow from the Sahara desert and Atlantic Ocean are so fierce that each vine is planted in small holes or hoyos, and further protected with stone walls. The hoyos also allow the vines to more quickly reach the organic matter located beneath the top layer of solidified lava. Virtually no vegetation can survive such inhospitable soil; the region is more reminiscent of a lunar landscape than the lush traditional image of a vineyard. Not surprisingly, yields are very low, and all vineyard work is meticulously done by hand. Farming is done organically and the winery is in the process of certification. Ignacio occasionally supplements each crop with purchased fruit from growers who share his vision of sustainable viticulture.

It is known for its elegant, balanced house style made from equal proportions of Chardonnay, Pinot Noir and Pinot Meunier. The Pol Roger champagne portfolio includes a non vintage brut, a vintage brut, a demi sec, a brut nature, a rosé and a blanc de blancs. The Cuvée Sir Winston Churchill Champagne was first released in 1975 to honor the great man, who had been close friends with Odette Pol Roger as well as a big fan of Champagne. The blend used in the Sir Winston Churchill cuvée is a closely guarded secret but is dominated by Pinot Noir for structure and strength and finished with Chardonnay for its elegance. Pol Roger grows just over half of its grapes on its 89 hectares (220 acres) of estate vineyards. The rest is supplied by contract growers with whom the company has long-term relationships. Everything is done by hand in the winery and Pol Roger is home to the largest remuage team in Champagne. The cellar of the champagne house is one of the deepest cellars in Epernay. The winery has had considerable investment in the last ten years. The house was officially established in 1849, although at least two generations had been involved in the growing Champagne industry before Pol Roger. In the mid-1850s, export became a key focus and the house began to eschew the traditional sweetness of Champagne, producing a drier style that was more in line with British tastes. The house grew throughout the 19th and 20th Centuries, remaining strong throughout the period of American Prohibition and the Russian Revolution. Today, Pol Roger produces around 1.8 million bottles a year.
