Distillery Information Maker's Mark is a Bourbon brand and distillery located in Loretto, Kentucky. The company in its modern form was founded in 1953 by Bill Samuels Senior, although the distillery has been active under various owners since 1805, and the Samuels family have been involved in whiskey production since 1780. The family still manages the operation, though it was sold to Hiram Walker & Son in 1981 and is now part of the Beam Suntory portfolio. Maker's Mark, like Old Rip Van Winkle, is a wheated Bourbon with no rye in the recipe. Other points of difference in production include a roller mill to stop grains scorching, slow cooking in open cookers, and the use of their own house jug yeast (a unique, in-house yeast culture). The spirit is distilled to 130 degrees proof (65 percent abv) in three copper beer columns with doublers, which are considered key in establishing the character of the white dog (new-make spirit). Oak barrels for the core product are air-dried and given a lighter char to avoid overly sweet aromas. The barrels are matured in black-painted warehouses around the property; to achieve consistency they are rotated between the cooler lower floors and the baking-hot upper floors.

He was born and raised on a farm just outside Frankfort, Kentucky, and he began working at the distillery (then called the O.F.C. Distillery) in 1897 as an office boy when he was 16 years old. Over the next few years he reportedly worked in every department, and in 1912 he was appointed superintendent of the distillery, its warehouse, and bottling shop – at the same time that the distillery was renamed to become the George T. Stagg Distillery. He became president of the whiskey plant in 1921. Blanton died in 1959.

The difference is achieved by using Springbank's three stills in different combinations as well as adjusting the peat levels. Longrow is the most traditional of the three; well-peated and distilled twice. Hazelburn is bereft of peat and enjoys a triple distillation and Springbank is lightly peated and, rather curiously, distilled two-and-a-half times. Both Hazelburn and Longrow have been revived recently after a few years of silence and both are named for ancient distilleries adjacent to the site. The buildings at the Springbank distillery are traditional and quite compact, though the facility boasts an onsite maltings which meets all of the malted barley requirements. The distillery sits in the centre of Campbeltown, a decidedly misunderstood Scotch whisky region. The malts from Campbeltown tend to be rather dry and a little briny, though much loved by connoisseurs. The distillery has a small capacity; just 750,000 litres annually, but nonetheless Frank McHardy, the production director, has deemed today’s Springbank market to be saturated. Accordingly, in 2008 distillation was temporarily halted, though the rest of the work continued.

Producer Information Edradour is perhaps best known as one of Scotland’s smallest distilleries, producing a mere 90,000 litres per annum with a work force of just three. Established in 1825 in the hills of Pitlochry, Edradour (pronounced ‘EDD-ra-DOWer’) maintains its heritage as an almost artisanal distillery. The heart of the range, a ten-year old, exhibits an unconventional charm, uncharacteristic of a highland single malt. Edradour was acquired in 1982 by drinks giant Pernod Ricard. Following the acquisition, three quarters of the distillery's yield was initially used in the production of blended whiskies, notably including ‘House of Lords’ and the auspiciously named ‘King’s Ransom’. It was not until Signatory acquired the distillery in 2002, that Edradour concentrated its efforts, almost solely, on producing single malts. Renowned for experimenting with various outlandish wood finishes, Edradour has released various malts matured in some rather interesting casks, a ‘Chardonnay Finish’, a ‘Côte de Provence’ and a curious ‘Tokaji Wood Finish’ being among the number. Signatory moved its base of operations to Edradour after building a bottling plant and warehouse at the site. In 2003, Edradour experimented with a peated single malt, named ‘Ballechin’, with peat levels of 50ppm, launching it in 2006. A new bottling of Ballechin has and will be released every year, each time finished in a different wood, until it has reached full maturity at ten years.

Distillery Information Maker's Mark is a Bourbon brand and distillery located in Loretto, Kentucky. The company in its modern form was founded in 1953 by Bill Samuels Senior, although the distillery has been active under various owners since 1805, and the Samuels family have been involved in whiskey production since 1780. The family still manages the operation, though it was sold to Hiram Walker & Son in 1981 and is now part of the Beam Suntory portfolio. Maker's Mark, like Old Rip Van Winkle, is a wheated Bourbon with no rye in the recipe. Other points of difference in production include a roller mill to stop grains scorching, slow cooking in open cookers, and the use of their own house jug yeast (a unique, in-house yeast culture). The spirit is distilled to 130 degrees proof (65 percent abv) in three copper beer columns with doublers, which are considered key in establishing the character of the white dog (new-make spirit). Oak barrels for the core product are air-dried and given a lighter char to avoid overly sweet aromas. The barrels are matured in black-painted warehouses around the property; to achieve consistency they are rotated between the cooler lower floors and the baking-hot upper floors.

Distillery Information One of Scotland's most famous distilleries, Ardbeg is located on the isle of Islay, off the rugged west coast of Scotland. Founded in the early 1800s by John McDougall, the distillery has long been renowned for the heavily peaty spirits that flows from its stills. Ardbeg fell silent for eight years in the 1980s and distillation ceased. It was closed again the mid-1990s shortly before it was acquired by Glenmorangie, who restored the distillery to its former glory.
