Distillery Information The Springbank distillery produces three uniquely different Scotch single malts: Longrow, Hazelburn and Springbank. The difference is achieved by using Springbank's three stills in different combinations as well as adjusting the peat levels. Longrow is the most traditional of the three; well-peated and distilled twice. Hazelburn is bereft of peat and enjoys a triple distillation and Springbank is lightly peated and, rather curiously, distilled two-and-a-half times. Both Hazelburn and Longrow have been revived recently after a few years of silence and both are named for ancient distilleries adjacent to the site. The buildings at the Springbank distillery are traditional and quite compact, though the facility boasts an onsite maltings which meets all of the malted barley requirements. The distillery sits in the centre of Campbeltown, a decidedly misunderstood Scotch whisky region. The malts from Campbeltown tend to be rather dry and a little briny, though much loved by connoisseurs. The distillery has a small capacity; just 750,000 litres annually, but nonetheless Frank McHardy, the production director, has deemed today’s Springbank market to be saturated. Accordingly, in 2008 distillation was temporarily halted, though the rest of the work continued.

Distillery Information Dalmore was founded by Alexander Matheson in 1839 and now stands as Whyte and Mackay’s largest distillery as well as being the flagship for the brand. The house style is undeniably one of rich, full-bodied whisky, with orange, chocolate and coffee flavours and Dalmore whisky is regularly enjoyed as a post dinner digestif. Matheson sold to Andrew and Charles Mackenzie in 1867, who introduced the 12-pointed Royal Stag emblem. Complex multi-cask maturation was also a philosophy pioneered by the Mackenzies - a tradition kept alive today – enhancing and complementing The Dalmore’s distinctive house style. Dalmore’s original stills that date back to 1874, with four stills dating from the 1960s that are identical in their distinctive stumpy shape but twice the size. The flat tops unusually provides reflux in the wash stills, but increases copper contact while the spirit stills have water jackets to increase reflux again. The distillery has shell-and-tube condensers, but for the spirit stills these are horizontal so as to mimic worm tubs and bring more wright to the spirit. Due to the unorthodox nature of the set-up, the proces is still very manual, with still temperatures, spirit strength, and cut points regularly tweaked to achieve the right balance. The result is complex, full-bodied, and robust new make spirit, which allows the whisky to develop rich depth of flavour through long maturation in the world’s most exquisite casks, with sherry casks from Gonzalez Byass a regular favourite. The distillery itself looks incredible, overlooking the Cromarty Firth. In 2022, it produced a record 4.5m litres of pure alcohol (lpa) but a £40m doubling of production capacity was scheduled for completion in 2024. A new, twin still house on the site of Dalmore’s now demolished Saladin box maltings (made obsolete in the 1980s) boasts a mash tun, wooden washbacks, and four stills as well as panoramic views. Blanton, who the company claims spent most of his life preserving the tradition of handcrafted bourbon. Blanton worked at the facility now known as the Buffalo Trace Distillery for approximately 55 years. He was born and raised on a farm just outside Frankfort, Kentucky, and he began working at the distillery (then called the O.F.C. Distillery) in 1897 as an office boy when he was 16 years old. Over the next few years he reportedly worked in every department, and in 1912 he was appointed superintendent of the distillery, its warehouse, and bottling shop – at the same time that the distillery was renamed to become the George T. Stagg Distillery. He became president of the whiskey plant in 1921. Blanton died in 1959.

Distillery Information Maker's Mark is a Bourbon brand and distillery located in Loretto, Kentucky. The company in its modern form was founded in 1953 by Bill Samuels Senior, although the distillery has been active under various owners since 1805, and the Samuels family have been involved in whiskey production since 1780. The family still manages the operation, though it was sold to Hiram Walker & Son in 1981 and is now part of the Beam Suntory portfolio. Maker's Mark, like Old Rip Van Winkle, is a wheated Bourbon with no rye in the recipe. Other points of difference in production include a roller mill to stop grains scorching, slow cooking in open cookers, and the use of their own house jug yeast (a unique, in-house yeast culture). The spirit is distilled to 130 degrees proof (65 percent abv) in three copper beer columns with doublers, which are considered key in establishing the character of the white dog (new-make spirit). Oak barrels for the core product are air-dried and given a lighter char to avoid overly sweet aromas. The buildings at the Springbank distillery are traditional and quite compact, though the facility boasts an onsite maltings which meets all of the malted barley requirements. The distillery sits in the centre of Campbeltown, a decidedly misunderstood Scotch whisky region. The malts from Campbeltown tend to be rather dry and a little briny, though much loved by connoisseurs. The distillery has a small capacity; just 750,000 litres annually, but nonetheless Frank McHardy, the production director, has deemed today’s Springbank market to be saturated. Accordingly, in 2008 distillation was temporarily halted, though the rest of the work continued.

Distillery Information Dalmore was founded by Alexander Matheson in 1839 and now stands as Whyte and Mackay’s largest distillery as well as being the flagship for the brand. The house style is undeniably one of rich, full-bodied whisky, with orange, chocolate and coffee flavours and Dalmore whisky is regularly enjoyed as a post dinner digestif. Matheson sold to Andrew and Charles Mackenzie in 1867, who introduced the 12-pointed Royal Stag emblem. Complex multi-cask maturation was also a philosophy pioneered by the Mackenzies - a tradition kept alive today – enhancing and complementing The Dalmore’s distinctive house style. Dalmore’s original stills that date back to 1874, with four stills dating from the 1960s that are identical in their distinctive stumpy shape but twice the size. The flat tops unusually provides reflux in the wash stills, but increases copper contact while the spirit stills have water jackets to increase reflux again. The distillery has shell-and-tube condensers, but for the spirit stills these are horizontal so as to mimic worm tubs and bring more wright to the spirit. Due to the unorthodox nature of the set-up, the proces is still very manual, with still temperatures, spirit strength, and cut points regularly tweaked to achieve the right balance. The result is complex, full-bodied, and robust new make spirit, which allows the whisky to develop rich depth of flavour through long maturation in the world’s most exquisite casks, with sherry casks from Gonzalez Byass a regular favourite. The distillery itself looks incredible, overlooking the Cromarty Firth. In 2022, it produced a record 4.5m litres of pure alcohol (lpa) but a £40m doubling of production capacity was scheduled for completion in 2024. A new, twin still house on the site of Dalmore’s now demolished Saladin box maltings (made obsolete in the 1980s) boasts a mash tun, wooden washbacks, and four stills as well as panoramic views. Over the next few years he reportedly worked in every department, and in 1912 he was appointed superintendent of the distillery, its warehouse, and bottling shop – at the same time that the distillery was renamed to become the George T. Stagg Distillery. He became president of the whiskey plant in 1921. Blanton died in 1959.
