Writing. Studying. Teaching. Preaching. Making Music. And reinterpreting the history and the present of this legendary, yet often misunderstood, region in southern Spain. One part of this project of reinterpretation is a book: Los Sobrinos de Haurie. Los Sobrinos de Haurie is unique in its focus on the development of the complex methods of wine production in the area in the 19th century, and Ramiro and Willy are committed to documenting the intricacies and complexities of winegrowing, winemaking, and wine aging in Jerez and Sanlúcar in this poorly understood period. The second half of the 19th century was an era of dynamic innovation in Jerez and Sanlúcar, seeing the proliferation of Palomino, the development of the solera alongside the endurance of static aging processes, and the gradual invention of the systems of Sherry classification. Their archival and historical work revives and illuminates the complexity of viticulture in El Marco de Jerez, tracing the interrelations of soil, pago (the ancient, well-mapped vineyard areas of Jerez planted on the area’s signature varied Albariza soils), grape, and aging methods over the long history of the region’s wine. The other half of this project is the rejuvenation of an historic bodega: M. Antonio de la Riva. To understand why Willy and Ramiro would want to revive an old name from Sherry’s past, it is important to understand their perspective on the history of Jerez, and the current situation of Jerez wine today.

Producer Information Domaine J.M. Boillot (also known as Domaine Jean-Marc Boillot) is a Burgundy wine estate producing pure, aromatic wines from Pinot Noir and Chardonnay. The operation is based in Pommard but it makes a large range of wines from numerous appellations mostly located in the Côte de Beaune. Jean-Marc Boillot worked with his grandfather Henri Boillot between the late 60s and 1984 when he became winemaker for Olivier Leflaive. He created his own domaine in 1989 after inheriting vines from his grandfather, and later from his maternal grandmother, Etienne Sauzet's daughter. His brother Henri runs Domaine Henri Boillot in Volnay. Winemaking differs considerably between the red and white wines. The Pinot Noir fruit is destemmed and undergoes a cold maceration before fermentation. After basket pressing, it is aged in barrels (around 50 percent new oak) for around 16 months without racking. The Chardonnay grapes are pressed in pneumatic presses. The juice is racked off the heavy lees then fermented in oak barrels. The white wines are aged for around 11 months in oak, around 30 percent of which is new. The wines are not racked, although the lees are stirred weekly. Wines are sampled just before bottling to determine whether fining or filtration are required. In addition to its Burgundy wines, J.M. Chapoutier is one of the most recognizable – and sizeable – producers in the Rhône Valley. It is known for its wines from both the north and south of the valley, but in particular for its red and white Hermitage wines, made from Syrah and a blend of Marsanne and Roussanne, respectively. The family's history in the Rhône dates back to 1808, but it wasn't until 1879 that Polydor Chapoutier transitioned the family from growing grapes to making and trading wine. The small amounts available on export markets often sell out as soon as, or even before, shipments arrive. The domaine was established in 1989 by the late founder Laurent Vaillé who repurposed land acquired by his grandather in the 1950s. The domaine overlooks the Hérault river, just south of the town of Aniane, close to Mas de Daumas Gassac. The land is rich in limestone, boulders, and glacial scree and required a great deal of dynamiting and bulldozing to produce an ideal terroir. Vaillé already had a solid track record, having worked with Coche-Dury in Meursault, Gérard Chave in Hermitage, and Eloi Dürrbach at Domaine Trévallon in Provence. Moreover, he sourced cuttings of the highest quality from the last two estates to plant nine hectares (22 acres) of red grapes and a single hectare (2.5 acres) of white. It is one of the newer domaines in Burgundy, with the first vintage being 1999. Today, holdings cover nearly 40 hectares (98 acres) in 30 different appellations throughout the region. The winery itself is located in the village of Premeaux which is situated between the Pinot Noir-dominated Côte de Nuits and the Chardonnay-dominant Côte de Beaune.Domaine de la Vougeraie has plots in six grand cru, eight premier cru and 11 village appellations. The Roumier story began when Georges Roumier married Genevieve Quanquin in 1924. Quanquin had family vineyards in Chambolle-Musigny, which Roumier began to expand upon. Instead of buying plots outright, Roumier used the French sharecropping/lease system of métayage, whereby an individual cultivates the land for the owner in exchange for a proportion of the produce, to build up the domaine's range. Roumier began with small plots in Musigny, moving onto Bonnes Mares as well as securing two plots in Clos de Vougeot. Most recently, Domaine Georges Roumier expanded into Ruchottes-Chambertin, where it is entitled to two thirds of the harvest from a 0.5 hectare (1.2 acre) parcel owned by Michel Bonnefond. Producer Information The Domaine des Enfants was founded by Swiss-born Marcel Bühler in 2006. As a child, Marcel found his dreams to be with gardening, but as happens often with childhood ambitions, he grew up forgetting this dream and followed other pursuits. After many years, he suffocated from his discontent with the path he chose to take. He was reminded of his lost inner child, l'enfant perdu. This is when he changed direction to follow his childhood gardening dreams. However, as child he was unaware that his dream of a garden would in fact be that of vineyards. Things inevitably change over time, and in 2011 Marcel was joined by his wife, Oregon-born Carrie Sumner. This of course was eventually followed by the birth their son Jordi in 2014. Domaine des Enfants has now become a family business, and there is now a "we". The three of us are working together alongside Bernard Bascou, our vineyard manager. Not only do we all work together, but we also must always depend on each other. Through natural circumstances in January 2023, we have faced the death of our horse and partner Nina. This loss forces us to reevaluate how we work, and how we will continue in the future. It's a difficult truth, but this leads us to ripping out many of our 100 year old vines to replant with young vines we can work sustainably without the assistance of our horse. For us, these young vineyards represent new life in honour of our beloved Nina. As with everything, we will see where this leads us, and perhaps it will lead us to a future in biodynamics.

The domaine's Chardonnay grapes go through a soft press before being fermented in mostly neutral French oak barrels. The grand cru Corton-Charlemagne Le Charlemagne is typically aged in around 50 percent new oak, whereas wines at village level usually have a much lower percentage of new oak. The Pinot Noir grapes are fermented with native yeasts and are then aged in French oak, usually for between 12 and 18 months. Once the wines have completed their barrel age they are softly pumped into stainless steel tanks where they are blended and allowed to rest. The wines are then bottled without filtration or fining.
