In most years, especially warm years, Coeur de Cuvée is quite a bit more open and voluptuous, but the 2015 does not come across like that at all. Rather, it is super-classic in bearing, with tons of gravitas from the 60-year-old vines just waiting to emerge. There are non of the awkward herbal notes that penalize so many wines. It is one of the newer domaines in Burgundy, with the first vintage being 1999. Today, holdings cover nearly 40 hectares (98 acres) in 30 different appellations throughout the region. The winery itself is located in the village of Premeaux which is situated between the Pinot Noir-dominated Côte de Nuits and the Chardonnay-dominant Côte de Beaune. Domaine de la Vougeraie has plots in six grand cru, eight premier cru and 11 village appellations. It is currently run by the fourth generation Pascal Agrapart as a récoltant-manipulant (RM) house, meaning it grows its own grapes – mostly Chardonnay – on 12 hectares (20 acres) of chalky soils in the Côte des Blancs. Pascal has recently been joined at the estate by his eldest son, Amboise. The Agrapart vineyards are plowed and treated with homemade composts. In the winery, grapes are fermented with wild yeasts and the base wines undergo a long aging on lees in oak barrels before the second fermentation adds the sparkle. Producer Information Champagne Leclerc Briant is an American-owned Champagne producer based in the town of Épernay, in the heart of the Champagne region and in the Vallée de la Marne subregion. The house was initially established in the village of Cumières, just northwest of Épernay in 1872 by Lucien Leclerc. The business moved into Épernay in 1955, at around the same time company moved from straighforward Champagne producer to that of a négoce (buying-in grapes and wines for production). The name change to Leclerc Briant also dates back to this time with then-proprietor Bertrand Leclerc (the third generation at the helm since 1872) marrying Jacqueline Briant. The house was acquired in 2012 by private-equity billionaire (and former Domino's pizza CEO) Mark Nunnelly and his wife Denise Dupré, a former Harvard Adjunct Faculty Member and board member of Boston University. Leclerc Briant is run by CEO Frédéric Zeimett. As well as working with a range of growers across the region, the estate also boasts a tiny plot of vines in central Épernay, dubbed "La Croisette". Grapes from this vineyard are made into a single vineyard label. Producer Information Domaine de la Grange des Pères is a star producer in the Languedoc region of France, which produces small quantities of two of the most sought-after and expensive wines in the region. The small amounts available on export markets often sell out as soon as, or even before, shipments arrive. The domaine was established in 1989 by the late founder Laurent Vaillé who repurposed land acquired by his grandather in the 1950s. The domaine overlooks the Hérault river, just south of the town of Aniane, close to Mas de Daumas Gassac. The land is rich in limestone, boulders, and glacial scree and required a great deal of dynamiting and bulldozing to produce an ideal terroir. Two wines are made under the IGP de l'Hérault classification. The red is mostly made from Syrah and Mourvèdre, with smaller proportions of Cabernet Sauvignon and Counoise. The varieties are vinified separately and aged separately in 228-liter barriques, and blended when fully finished, before settling and bottling. The use of Cabernet Sauvignon means the wine cannot be labeled as Languedoc AOC/AOP. The white wine is based on Roussanne with around 10 percent each of Marsanne and Chardonnay. In the mid-18th Century the Gosset family discovered bubbles in their wine as it began to ferment in bottle and, since then, Gosset Champagne has been almost continuously produced. The Gosset winery is still located in Aÿ, and all of the wines are produced there. Chardonnay, Pinot Noir and Pinot Meunier grapes are mostly purchased from grape growers who have vines located in grand and premier cru sites around the region. The varieties and plots are all vinified and kept separate until after fermentation, and then blended before bottling. The wines do not go through malolactic fermentation, giving them slightly higher levels of acidity (freshness) while they are bottled, aged and released. It is a fine wine, balanced and poised between fruit and yeasty maturity. Drink now. Producer Information Champagne Perrier-Jouët is a Champagne house based in Épernay, founded in 1811. The wines are typically floral and elegant. The house places emphasis on Chardonnay in relation to this house style. However the core Grand Brut bottling comprises 40 percent Pinot Noir, the same of Pinot Meunier and 20 percent Chardonnay. Dosage is 8 to 10 grams per liter of sugar. The Blanc de Blancs is 100 percent Chardonnay and 8g/l dosage. The Blason (coat of arms) range is completed by the Blason Rosé. This features 50 percent Pinot Noir and 25 percent each of Chardonnay and Pinot Meunier, with dosage as for the Grand Brut. 10 to 15 percent of the Pinot Noir is still red wine. All three of these wines feature up to 15 percent reserve wines (i.e. older than the current vintage). The famous Belle Époque champagne is a deluxe vintage cuvée. It is produced only in the best years, with around 30 wines being made to date. A 45 percent component of Pinot Noir from the Montagne de Reims is carefully selected for subtlety to complement the Chardonnay (50 percent) from the Grand Crus of Cramant and Avize. Pinot Meunier contributes just 5 percent. The Belle Époque Rosé reverses the proportions of Chardonnay and Pinot Meunier. 11 percent of the Pinot Noir is still red wine. Belle Époque Blanc de Blancs is the rarest bottling in terms of production volumes (40,000 bottles or less). It is sourced from two of the best parcels of Chardonnay. These three wines are all aged for at least six years before release with a dosage at 8 g/l. The vineyards of Perrier-Jouët encompass 65 hectares (161 acres), with each plot being picked and vinified separately before being blended into its eventual cuvée. The blend is chosen by Séverine Frerson, the eighth cellar master in two centuries.

Producer Information Domaine de la Vougeraie, based in Premeaux just south of Nuits St Georges, was created in 1999 when Jean-Claude Boisset of the Boisset group decided to group together all the vineyard holdings of his various negociant companies acquired over the years. The name comes from the significant holdings – and indeed Jean-Claude Boisset’s home – in the village of Vougeot. The winery is located however in the old Claudine Deschamps (Madame Jean-Claude Boisset) cellars in Prémeaux. The Domaine was put together from the various vineyard holdings which had accrued through the Boisset acquisitions of Burgundian houses over the years. Pascal Marchand was put in charge in 1999, with Bernard Zito in the vineyards, which were farmed biodynamically. Pascal produced powerful wines, fairly heavily extracted in his early vintages but clearly was subsequently moving to a softer approach by 2004.

Producer Information Domaine des Comtes Lafon is a wine producer in Burgundy making some of the most lauded (and highly priced) white wines from Chardonnay in the region. It is located in Meursault in the Côte de Beaune subregion, but has vineyards in three other villages: Chassagne-Montrachet, Volnay and Monthélie. Comtes Lafon's house and cellar were built in 1869 by the Boch family, but its reputation as a winery was most heavily influenced by Jules Lafon, who married Marie Boch in 1894. Lafon bought many of the significant premier cru plots in Meursault and Volnay, and in 1919, parcels in the grand cru Le Montrachet vineyard. Domaine des Comtes Lafon saw an extended period of sharecropping after Jules Lafon's death and the future of the estate became uncertain. It was Jules' grandson René Lafon who took an interest in the winery and fought to stop the division of the vineyards – a move that secured the future of the domaine. Despite René's intervention, many of the lease agreements with the sharecroppers remained in place for decades. Comtes Lafon was making highly regarded whites in many vintages but without consistency. It wasn't until René's son, Dominique, facilitated the end of the sharecropping agreements in the late 1980s and early '90s that Domaine des Comtes Lafon was able to reach its full potential. In 1995, it adopted organic practices and since 1998 has been entirely biodynamic. Comte Lafon's stand-out wine is its single grand cru Montrachet, which has consistently been listed as one of the most expensive wines in the world. The domaine also has a range of premier cru white and red wines and while the whites have always been highly regarded, its red wines have gained new recognition for their quality in more recent vintages. In 1999 Comtes Lafon expanded into the Mâcon in southern Burgundy with a second label: Les Héritiers du Comtes Lafon.

Producer Information The vineyard of Chateau Angélus is situated in a natural amphitheatre overlooked by the three Saint-Emilion churches. In the middle of this special site, the sounds were amplified and the angelus bells could be heard ringing in the morning, at midday and in the evening. They cadenced the working day in the vineyards and villages, calling the men and women to stop their labours for a few minutes and pray. Less than a kilometre from the famous Saint-Emilion bell tower, situated on the much-vaunted south-facing “foot of the hill”, Angélus has been the life work of eight generations of the Boüard de Laforest family. In the first-ever classification of Saint-Emilion wines in 1954, Chateau Angélus was a Grand Cru Classé. Producer Information Francois Cotat is a Sancerre wine producer of old-style Sauvignon Blanc, based in the commune of Chavignol. The estate's distinctive Sancerre wines are met with high acclaim from critics as well as consumers. The Cotat family has been producing Sauvignon Blanc and small portions of Pinot Noir from the slopes of the esteemed Monts Damnés vineyard since the 1940s. Today, the estate is run by cousins Pascal and Francois Cotat whom produce wine in separate cellars, but uphold the traditional winemaking techniques implemented by their fathers, founders Paul and Francis Cotat. In the winery, grapes are fermented in barrel using wild yeasts and are bottled unfined and unfiltered. The estate's other top vineyards include Monts Damnés, Caillots, La Grande Côte, and Les Culs de Beaujeu. Chavignol is characterized by a unique type of chalky limestone soil called 'terres blanches' which contributes a distinct minerality to Sauvignon Blanc. In the vineyard, Sauvignon Blanc is handpicked relatively late, allowing for flavor compounds to reach full maturity. This contributes the weighty texture of the finished wines, as well as higher levels of residual sugar and alcohol. For this reason, wines by Francois Cotat have sometimes been declassified to Vin de France status, though their prestige remains. Francois Cotat also produce a rosé from its small plot of Pinot Noir.
