Francis Boulard's first contact with wines came about thanks to his grandfather, Julian: at 14, the young Francis was given permission to hold the handles of the plough behind Bijou the horse, a sturdy Ardennes horse. His grandfather was in fact one of the last to resist the galloping mechanisation which followed the end of WW II, still using a horse to plough his 2 hectares (5 acres) of vines. Julien Boulard sold his still wines to champagne houses. It was his son, Raymond Boulard who decided to vinify and bottle champagne in 1952. Producer Information Bouchard Père et Fils is a sizable and historic Burgundy wine estate, based in Beaune. The largest vineyard owner in the Côte d'Or, it produces more than 100 wines mostly made from Pinot Noir or Chardonnay, in a range that also includes appellations in the Maconnais, Côte Chalonnaise and Beaujolais regions. The vineyard holdings total around 130 hectares (320 acres), spread across 450 parcels, including 12 hectares (30 acres) of grand crus vines and 74 hectares (183 acres) of premier crus, and four monopole vineyards. Bouchard makes wines from some of Burgundy's most famous vineyards, including Montrachet, Corton-Charlemagne and Chambertin. Its portfolio also includes a range of wines at premier cru and village level, as well as under the more generic Bourgogne appellation. Since 2005, Bouchard's wines have been made at a custom-built winery in Savigny-lès-Beaune. Burghound: One of the two best wines Sylvie Esmonin has ever made (along with the 93) with wonderfully complex aromatics of Gevrey earth, black fruits and a touch of secondary aromas followed by flavors offering grand cru depth and weight. Impressively long and displaying plenty of richness, this is an outstanding 1990. The most recent bottle still displayed the above quality but the tannins are a bit chunky and while this is still intense and impressive, it lacks the overall refinement of a genuinely great wine. He wanted to live a rural life and first tried cultivating flowers, then breeding vines, but couldn’t make a living, so instead worked as a builder. After losing two fingers in an accident he recovered in his hometown of Chignin and (surrounded by his family's vines) decided to give winemaking a try.Settling down in Chignin with his wife Christine in 1990, he gradually built up his holdings to 8ha of primarily rented vines 'en fermage' (5ha) whilst working as a landscaper.Increasingly unhappy with using chemicals in their vineyards and with the compaction caused by too much tractor use, Gilles and Christine embraced organic practices in the late 1990s, with certification following in 2002. It was at this point that Gilles became obsessed with making top-class wines – he moved towards biodynamic viticulture and reduced the holdings to a more manageable 6ha, the other 2ha are rented to his cousin Adrien Berlioz and other young vignerons in the area.In 2016 the Berlioz changed the name of the estate to Domaine Partagé translating as the 'shared domaine', reflecting the years of human encounters with workers, vignerons and customers, all of whom have helped the domaine to progress to where it is today: one of the most iconic in Savoie and France.

The slopes found in this area around Gervans, Crozes-Hermitage and Larnage are part of the original Crozes-Hermitage classification from 1937 (the southern sections of Les Chassis and Mercurol were added in 1952) due to their close resemblance to the noble hill that looms over them. Once at the helm, his first action was to convert everything to organic farming. The wines are typically floral and elegant. The house places emphasis on Chardonnay in relation to this house style. However the core Grand Brut bottling comprises 40 percent Pinot Noir, the same of Pinot Meunier and 20 percent Chardonnay. Dosage is 8 to 10 grams per liter of sugar. The Blanc de Blancs is 100 percent Chardonnay and 8g/l dosage. The Blason (coat of arms) range is completed by the Blason Rosé. Producer Information Bruno Paillard was born in Reims in 1953 into an established family of Champagne "vignerons" and brokers. He started his own brokerage in 1975 and founded his own Champagne house in 1981. In fact, it is the youngest prestige house to be created since World War II. Bruno Paillard is synonymous with quality. One hundred and twenty five acres of Grand Cru and Premier Cru vineyards provide the exceptional Pinot Noir, Pinot Munier and Pinot Chardonnay grapes which are used in the production of three luxury cuvees and one vintage Champagne. Each wine is produced in the traditional method and under the personal supervision of Bruno Paillard at his striking, state-of-the-art glass and stainless steel facility just outside Reims. Producer Information Champagne Carbon was created 2011 by Alexandre Mea, heir in the fifth generation to the Devavry family, who set up their viniculture in Champillon in 1920 – incidentally just eleven years after Ettore Bugatti had founded his factory at Molsheim 300 km eastwards. While the Devavry family has always been a smaller but highly exquisite viticulturist, Alexandre Mea however sensed the opportunity to create something even more exclusive than the oldest vintages of his grandfather. After more than four years of research and development into a bottle wrapped in carbon as an advanced technological counterpoint to the traditionally selected and hand-processed grapes of the vineyard – 15 hectares in size – he founded Champagne Carbon in 2011. Only the finest fruits from Grand Cru and Premier Cru regions are harvested, picked by hand in a process that involves the entire team, including CEO, Alexandre Mea. The growth of these grapes is carefully monitored by Alexandre. There is only a small window during harvesting season in which the grapes can be collected, chosen for their size, fulness and color. To be closer to the product, Alexandre even built his house on the vineyard. Just as Bugatti, for Carbon the final product is achieved through the best process. Where large producers may store their wines in big stainless-steel vats, Champagne Carbon is held in traditional oak barrels. They must be turned, cleaned and delicately refilled each day to account for evaporation; a task that falls to one man, who cares for every barrel individually at Champagne Carbon’s Maison. These barrels provide a core structure to the wine as it draws flavor out of the wood; notes of spices that provide a depth and character often not found in wines produced on a more industrial scale.

Subtle and complex Producer Information Champagne Henri Giraud is the one of the oldest Champagne houses still owned by its founding family – the Giraud-Hémart family who have farmed vines in Aÿ since 1625. However, it is only since current head Claude Giraud took over that the wines have been released under the family name. An annual production of around 250,000 bottles is sourced from 10 hectares (25 acres) of estate vineyards, spread over 35 plots, plus fruit bought mostly from family and friends. The flagship release is the rich, voluptuous Fût de Chêne, a Pinot Noir-dominant Champagne blend. Aside from the Blanc de Blancs and the Code Noir Blanc de Noirs, the white wines are typically 70-percent Pinot Noir with 30-percent Chardonnay.
