Until recently the Ledru estate was 6 hectares in size but family disputes have resulted in her vineyards being reduced to a 2.5 hectares. 2ha Pinot in Ambonnay and .5ha Chardonnay in Bouzy. The wines are all classically vinified in tank with no oak maturation and malo-lactic fermentations occur. Yields are low, chaptalization is avoided, no filtration, no cold stabilisation, dosages are all low and minimal amounts of sulphur are used during the appropriate wine making processes. Bottles are disgorged by hand. The entire wine making process is manual and labour intensive – and the results speak loud. The Ledru style focuses on purity, complexity, power and yet all of this is enclosed in an elegant framework. The novice may think that oak is utilised somewhere in the wine making process, but you would be wrong. Precisely manicured and maintained vineyards are the key. “Great wines start in the vineyard” – and Marie-Noëlle is the perfect example. The Péters family has grown grapes on the Côte des Blancs for six generations, beginning in 1858 when Gaston Péters of Luxembourg married into a family of local growers. The wines are made exclusively from estate vineyards, which is unusual in the region. Producer Information The Montgueux hill is located 10km away from Troyes in the southern region of Champagne. The vineyards are renowned for the typicity of the Chardonnay grapes. Facing South East the vines are planted on Upper Cretaceous chalk and clay. Hélène maintains a grass-cover between the vines. The age of these vineyards and the wine-making processes enables the production of generous, complex and highly subtle wines. Vines were first cultivated in the 12th century and almost disappeared at the end of the 1800s thanks to phylloxera. After the First World War the Beaugrand family was the first to replant its hillsides. Montgueux acquired the Champagne appellation in 1927 and the first bottles were put on sale in 1930. The main street in Montgueux is named ‘Leon Beaugrand’ as mark of respect for the Beaugrand family who pushed for AOC status in 1927. The quality of the grapes, which are harvested manually, is a result of the careful selection of the best vines, based on their genetic features and on the specificities of each plot. After pressing the grapes slowly and adapting the vinifcation in stainless steel vats to each plot’s particular features, the blend is followed by a second fermentation in the bottles. A quintessential Cava producer, Goulart pioneered the traditional method sparkling wine production in Spain. They source their fruit from 50 acres of mostly Xarel.lo, which are harvested at dawn to guarantee freshness. Xarel·lo is a grape of character and structure, which makes it suitable for long aging cavas. Following the practice of the best wineries of Champagne, Roger Goulart caves were excavated 100 feet underground: a mile of tunnels that provide the best conditions all year-round for the second fermentation inside the bottle. During bottle aging, “deplacé” is performed by hand until disgorgement and bottling. Their Gran Reservas are only disgorged under purchase order to provide their bubbles in their best condition.

Producer Information Champagne Perrier-Jouët is a Champagne house based in Épernay, founded in 1811. The wines are typically floral and elegant. The house places emphasis on Chardonnay in relation to this house style. However the core Grand Brut bottling comprises 40 percent Pinot Noir, the same of Pinot Meunier and 20 percent Chardonnay. Dosage is 8 to 10 grams per liter of sugar. The Blanc de Blancs is 100 percent Chardonnay and 8g/l dosage. The Blason (coat of arms) range is completed by the Blason Rosé. This features 50 percent Pinot Noir and 25 percent each of Chardonnay and Pinot Meunier, with dosage as for the Grand Brut. 10 to 15 percent of the Pinot Noir is still red wine. All three of these wines feature up to 15 percent reserve wines (i.e. older than the current vintage). The famous Belle Époque champagne is a deluxe vintage cuvée. It is produced only in the best years, with around 30 wines being made to date. A 45 percent component of Pinot Noir from the Montagne de Reims is carefully selected for subtlety to complement the Chardonnay (50 percent) from the Grand Crus of Cramant and Avize. Pinot Meunier contributes just 5 percent. The Belle Époque Rosé reverses the proportions of Chardonnay and Pinot Meunier. 11 percent of the Pinot Noir is still red wine. Belle Époque Blanc de Blancs is the rarest bottling in terms of production volumes (40,000 bottles or less). It is sourced from two of the best parcels of Chardonnay. These three wines are all aged for at least six years before release with a dosage at 8 g/l. The creation of the champagne range followed the development of the vine nursery, a family tradition born in the beginning of the 20th century and which represents the first stage of the production of champagne wines. Emile Goutorbe was already a nurseryman when his son Henri was born in Aÿ in 1922. Since the 1970s, René GOUTORBE has continued developing the vineyards and has been in charge of producing the cuvees. His children Elisabeth, Bertrand and Etienne share his passion and are involved in building the reputation of our wine and of our region. The quality of the grapes, which are harvested manually, is a result of the careful selection of the best vines, based on their genetic features and on the specificities of each plot. After pressing the grapes slowly and adapting the vinifcation in stainless steel vats to each plot’s particular features, the blend is followed by a second fermentation in the bottles. Their champagnes are aged on lees in the bottles for at least three years in their historic cellars.

Nearly one hundred years later, mirroring the royal patronage of many Champagne houses of the late 19th Century, King Edward VII of England was having stock specially imported from France with his own personal label. From the 1950s the Martini and Rossi company gained increasing control of the house. It was owned by Moët and Chandon from 1983 to 1985 before being sold to an Epernay distributor. In 2004, it was purchased by the Rapeneau family, owners of the GH Martel Champagne house. It now falls within the wider GH Martel group. The Charles de Cazanove portfolio cosists of three basic tiers of wines, which are topped by the Grand Apparat cuvée and the deluxe Stradivarius range. Grand Apparat is a predominantly Pinot Noir-based Champagne Blend (with over 50 percent Pinot Noir, 30 percent Chardonnay and just over ten percent Pinot Meunier) while Stradivarius is Chardonnay-dominant (roughly 70 percent Chardonnay to 30 percent Pinot Noir). In addition, chef de cave Christophe Rapeneau makes a sibling range labelled as Champagne Vieille France, which is now marketed separately but is often listed as a sub-brand of Charles de Cazanove.

It was founded in 1838 by wine merchants William Deutz and Pierre-Hubert Geldermann. Deutz is well-known for its balanced, elegant wines made from the classic Champagne blend of Chardonnay, Pinot Noir and Pinot Meunier. The core wines in the portfolio are the Brut Classic and Brut Rosé. Taittinger's Brut Reserve NV is composed of 40 percent Chardonnay, with the two Pinots making up the remainder. This makes for a fresh and reasonably delicate house style. In addition to this, Taittinger makes a range of Champagne styles, including a demi-sec, several rosés and an array of single-vineyard, vintage and otherwise limited-edition wines. The Brut Souverain is the house's most important wine, both in terms of fame and production, and is made of roughly equal parts Pinot Noir and Chardonnay, with a smaller proportion of Pinot Meunier. The Henriot family control roughly 35 hectares (87 acres) of vineyards, scattered around the Vallée de la Marne, Montagne de Reims and the Côte des Blancs. These provide around 20 percent of the company's needs, with most of the remainder supplied by regular contract growers. Pinot Noir is selected mainly from the premier and grands cru vineyards on the northern slope of the Montagne de Reims, while the Chardonnay comes largely from the Côte des Blancs. It was founded in 1890 by Desiré Vilmart and has passed down the family since. Vilmart produces wines from 11 hectares (27 acres) of vineyards in and around the village, with about 60-percent planted to Chardonnay and 40-percent to Pinot Noir. It is a so-called "grower" Champagne house, which means it only makes wines from vineyard plots that it owns, rather than buying in grapes, which is common for the larger houses. Vilmart's standard cuvée is Chardonnay-dominant, with Pinot Noir contributing around 30-percent. On top of this, the house produces a range of other wines, including the flagship Grand Cellier d'Or vintage wine, also Chardonnay-dominant, made from the oldest plots of vines.
