Licorice root and warm earth accents fill in on the finish, with an iron note piercing through at the end. Reviews: Wine Advocate: Medium to deep garnet-purple colored, the 2018 Cabernet Sauvignon Estate offers up intense notes of crushed black currants, fresh blackberries and ripe red plums with hints of pencil lead, black raspberries, underbrush and unsmoked cigars plus a touch of tapenade. Medium to full-bodied, the palate delivers bold, crunchy black and red berry layers with a lively backbone and firm, grainy tannins, finishing long and energetic. Jeb Dunnuck: Taking lots of air to show at its best, the 2018 Cabernet Sauvignon Estate is a brilliant, classic, age-worthy wine from this great estate. It certainly shows the more structured, vibrant style of the 2018 vintage with lively acids, yet it has utterly classic Cabernet crème de cassis and almost blue fruits as well as Bordeaux-like notes of lead pencil, cedarwood, tobacco, and assorted floral nuances. Medium to full-bodied on the palate, it brings rock-solid intensity, perfectly ripe yet building, firm tannins, and again, the vintage's freshness, purity, and elegance. It reminds me of a top Saint-Julien and classic, old school, structured Cabernet that will reward bottle age. Producer Information Philip Togni planted their first vines near the top of Spring Mountain in the Napa Valley in 1981. Those phylloxera vulnerable rootstocks have now gone, replanted in the early nineties. Philip Togni's first wines were Cabernet and Sauvignon Blanc in 1983, but they have now concentrated their efforts on a very ageworthy Margaux-type blend of Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot, all grown on the 25 acre parcel where the family lives. Reviews: Wine Advocate: The 2019 Cabernet Sauvignon Estate is a classic Togni wine, meant to be laid down for at least a decade and capable of aging well for 20 years beyond that in a cool cellar. Hints of green olive and thyme add savory nuance to the raspberry and cassis shadings on the nose, while the medium to full-bodied palate is concentrated into a dense, streamlined shape that throws off waves of dusty tannins, buffered by hints of cedar and vanilla, with lingering cassis notes on the finish. Vinous: The 2019 Cabernet Sauvignon Estate is a classy, sophisticated wine that shows the more restrained side of the year and this site. I imagine the 2019 will flesh out in time. Bright acids, red-toned fruit, dried herbs, mint and silky tannins convey finesse more than power. I especially admire the aromatics today. Reviews: Wine Advocate: Medium to deep garnet-purple colored, the 2018 Cabernet Sauvignon Tanbark Hill Vineyard opens with fragrant scents of lavender, red Morello cherries, fresh black currants and black raspberries, plus hints of dried Provence herbs, pencil shavings and iron ore. Medium-bodied, the palate is bright, refreshing and elegant, offering plenty of crunchy red and black fruit with a soft texture and mineral-tinged finish. This is great value for a wonderfully pure, authentic taste of Napa! Wine Spectator: This red is distinctive, with a racy savory streak buried amid the mix of sassafras, menthol, loganberry, sweet bay leaf and juniper flavors. Juicy and racy in feel, with a tingle of iron through the finish. Approachable, but cellaring will coax more out of this. Reveals a bit of tarry grip on the finish, along with a cast iron hint, but should round into form soon enough. Reviews: Wine Advocate: It's telling that even Togni's 2019 Cabernet Sauvignon Tanbark Hill Vineyard—the early-drinking wine—needs a few years in the cellar. The barest hint of bell pepper accents bold cassis fruit and notes of wild thyme on the nose, while the medium to full-bodied palate is fairly open and generous, with enough suppleness to suggest only five years of cellaring will be necessary. Classically styled, it's streamlined in shape and long on the finish, ending with mouthwatering acids and soft tannins. Vinous: The 2019 Cabernet Sauvignon Tanbark Hill Vineyard is soft, open-knit and an absolute delight to taste today. Silky contours wrap around a core of red berry fruit, rose petal and spice. In the mouth, it's firmly buttressed by grainy tannins, with terrific acids that linger on the finish in mouthwatering fashion. Producer Information Philip Togni Vineyard is a small, family-owned Napa Valley wine producer, focused on producing high-quality wine from Cabernet Sauvignon. It is one of the oldest producers of the Spring Mountain District AVA (American Viticultural Area). The wine collection is simple, featuring varietal Cabernet Sauvignon sourced directly from the estate. This wine has strong characteristics of Spring Mountain, quite tannic in its youth but shows its elegance with age. For the impatient, the second label Tanbark Hill is a Cabernet Sauvignon produced from younger vines on the property, and is more approachable in its youth. Additionally, there is a sweet wine in the style of Constantia called Ca' Togni. The Philip Togni Vineyard was planted in 1981 by Philip Togni with his wife Birgitta, on an ideal ten acre (4 hectare) plot, 2000 feet (600 meters) above sea level. Today, Philip Togni is remarkably a self-contained producer, meaning that everything from vineyard management to winemaking, bottling and shipping is completed on site.

Grippy yet inviting, with the flavors melding wonderfully through the long finish, where a sense of freshness pervades. Reviews: Wine Advocate: The flagship wine, the 2014 Cabernet Sauvignon Estate from his vineyard high on Spring Mountain is a blend of 82% Cabernet Sauvignon, 15% Merlot, 2% Cabernet Franc and 1% Petit Verdot. It seems slightly more approachable and civilized for a young Togni wine, with a dense ruby/purple color, loads of blackcurrant, licorice, and graphite, some earth and spice, but very subtle earth nuances. It is full-bodied and rich, but the tannins are well-integrated and don’t scream as loudly as some vintages of Togni can. For Togni, this is probably one of his more forward and precociously styled Cabernets. It will probably approach drinkability in several years, but don’t discount its aging potential, as this easily has 20-25 years of cellaring potential. Vinous: Togni's 2014 Cabernet Sauvignon Estate is quite dark and powerful, but also very much medium in body. Graphite, smoke, savory herbs, mint, leather and a core of inky dark red and purplish fruit infuse this deep, beautifully layered Cabernet Sauvignon. The 2014 is a wine built on energy and aromatics that won't hit its stride until at least age ten. Producer Information There are few winemakers still living with the kind of history that Philip Togni has under his belt. Long before his eponymous winery was even conceived, he was crafting some of the most iconic wines in California. After a year at Mayacamas (1959), he became the founding winemaker for Chalone, worked at Inglenook for a year, became the founding winemaker for Chappellet (producing the acclaimed 1969 Cabernet Sauvignon that is still regarded as one of the greatest ever produced in California), and finally at finished out the 1970’s at Cuvaison. In 1981, while still employed at Cuvaison, he began planting his own vineyard on Spring Mountain and...

It possesses a dense purple color as well as a sweet nose of cedar, smoke, white chocolate, blackberries, and cassis. This wine is ageing very gracefully indeed, and benefits from decanting. Reviews: Wine Advocate: Philip Togni is one of California’s most foresighted winemakers, holding back a small amount of wine and releasing it at age ten. This year, small quantities of the 1995 Cabernet Sauvignon Estate were released, and, as I almost invariably do, I rated it higher than I did initially. It is a classic Cabernet Sauvignon that apparently turns to Bordeaux for elegance, structure, and complexity, yet retains Napa’s extraordinarily sweet, rich, concentrated fruit. This profound 1995 still tastes like an adolescent. For my palate, it will benefit from another 4-5 years of bottle age, and should last easily for another 20-25 years. It is unquestionably one of California’s as well as the world’s greatest Cabernet Sauvignons. Vinous: Togni's 1995 Cabernet Sauvignon Estate is simply dazzling. Deep, unctuous and explosive, this Cabernet Sauvignon screams with the essence of exotic spices, iron, graphite, leather, smoke, game and dark fruit. The 1995 gets better and better with time in the glass, revealing myriad shades of dimension and extraordinary balance. Although stunning today, the 1995 has at least another decade ahead of it. The 1995 was made from the original vines that were ten years old at the time. Reviews: Wine Advocate: The 2001 Cabernet Sauvignon Estate is deep garnet-purple colored with a gorgeous, meat and yeast extract-laced nose with notions of ceps and truffles over a core of crème de cassis, blackberry compote and star anise plus hints of camphor and potpourri. Medium-bodied, fine, fresh and delicately played with loads of spice and savory layers, it finishes on a compelling perfumed note. Vinous: Full, bright ruby-red! Pure and complex if subdued on the nose, offering scents of plum, briary dark berries, spice cake and dark chocolate. Densely packed, fine-grained and concentrated, conveying a lovely restrained sweetness and excellent depth of texture. No rough edges here in spite of the wine's seriously firm structure. Intense, sharply delineated mountain berry flavors convey a medicinal reserve, a distinctly savory quality and lovely juicy energy. This Cabernet is still a bit ungiving but its acid backbone and firm but harmonious tannins promise more positive evolution ahead. An excellent showing for this palate-staining wine, which will be long-lived and may yet gain in breadth. The fleshy feel lets everything linger on the finish, with a tarry tug at the very end. Vinous: The 2012 Cabernet Sauvignon is stunningly beautiful, especially in the way it brings together intense, voluptuous fruit and structure. Racy and polished in the glass, the 2012 races across the palate with intense dark red stone fruit, spice, cedar, tobacco and floral notes, all in an energetic, vibrant style that suggests 25-30 years of aging will be a breeze. More backward than other great vintages such as 2007, 2005, 2004, 2002 and 2001, this medium to full-bodied, substantial 2008 needs 3-4 years of cellaring and should age for 15-20+ years. Reviews: Wine Spectator: Deep garnet-purple in color, the 2013 Cabernet Sauvignon Estate offers up a crème de cassis, violets, dark chocolate and licorice core with nuances of lavender, unsmoked cigars, beef drippings and iron pan plus a touch of baking spices. Medium to full-bodied with a solid frame of plush tannins and great freshness, it has a wonderful core of muscular fruit and plenty of power juxtaposed by bags of finesse in the multilayered finish. Vinous: A majestic, towering wine, the 2013 Cabernet Sauvignon Estate is even more striking in bottle than it was from barrel. Deep, unctuous and remarkably vivid for such a big, intense wine, the 2013 simply conquers all of the senses, from the intellectual to the hedonistic. A host of dark red cherry, pomegranate, spice, mint and floral notes meld together in the glass, but the 2013 is a wine to admire for its total sense of completeness. The palate is medium-bodied, elegant and refreshing with a beautiful quiet intensity and great freshness, finishing long and earthy. The 2014 is a wine built on energy and aromatics that won't hit its stride until at least age ten … I tasted a large number of wines during my most recent visit to this benchmark estate on Spring Mountain. Best to cellar short-term, although it's less rustic and backward at this stage than in previous vintages. Reviews: Wine Advocate: The 1997 Cabernet Sauvignon has to be one of the great buys left for profound Napa Cabernet... Brilliant notes of cedar, spice box, cassis, smoke, and licorice soar from the glass, as if this wine were pretending to be a first-growth Pauillac. Full-bodied, powerful, still with a boatload of tannin to resolve, and just a faint lightening of the dense purple color at the rim, this is a brilliant wine from a vintage that produced relatively quick-evolving wines, but no such thing is tolerated at Philip Togni. This is a great Cabernet Sauvignon with the exuberance, purity, and richness of fruit that Napa provides, but with a Bordeaux structure that Togni, with his Bordeaux upbringing, somehow builds into the wine. Vinous: I have always adored Togni's 1997 Cabernet Sauvignon Estate because it captures both the natural intensity of the year and the vibrancy that makes these wines so compelling. Powerful and explosive, with huge density, the 1997 hits the palate with waves of dark fruit intermingled with savory herb, charcoal, tobacco and grilled herb overtones. Even with all of its intensity, the 1997 has enough textural richness to drink for another 10-15 years, maybe more, as there is still quite a bit of structure and tannin. Hints of cedar, tobacco, crushed leaves and game add the closing shades of nuance. Uncompromisingly dry yet surprisingly supple on entry, then intense, sharply delineated and alive in the middle palate, showing a repeating pungent wild herb quality to its intense dark berry flavors. Not at all a sweet style but subtle and extremely long, with the tannins remarkably suave for mountain fruit. There's a peppery, savory energy here that I love but also plenty of body and palate presence. Finishes with terrific lift and emerging notes of leather and pine needles. A bit sauvage and idiosyncratic, this Cabernet is the full Togni. Reviews: Wine Advocate: The 2010 Cabernet Sauvignon impresses for its length and total class. Mocha, game, smoke, graphite and plums are all supported by veins of cool, insistent minerality. This isn’t a blockbuster Cabernet, rather it is a wine that impresses for its finesse and precision. Sweet red cherries, mint, pencil shavings and violets are some of the notes that are layered into the super-refined finish. As always, Togni’s Cabernet Sauvignon is distinguished for an extraordinary bouquet that recalls some of the great wines of the Medoc and the structure to age gracefully for years. It will be interesting to see if the 2010 blossoms in bottle. Vinous: What a thrill it is to revisit the 2010 Cabernet Sauvignon Estate, a wine that has delivered on all the potential I sensed back when I first tasted it from barrel nearly a decade ago. Time flies. In the glass, the 2010 is dark, heady and rich, with striking aromatic nuance and tons of complexity. Unctuous dark fruit, grilled herbs, cloves and licorice build into the intense, exotic finish. It is a classic Philip Togni wine at its first plateau of maturity. In 2010 the harvest took place entirely in October. Because of the cold growing season, the crop was thinned significantly in order to allow for the fruit to ripen. Yields were down approximately 50%. Producer Information Philip Togni Vineyard is a...

Reviews: Wine Advocate: Each year Togni releases about 100 cases of a 10-year old Cabernet... It is a fabulous example of Togni’s visionary winemaking style. This inky/ruby/purple-tinged wine still tastes like a young adolescent. The extraordinary aromatics offer up scents of smoke, spices, sweet blackberries and cassis, saddle leather, and pain grille. With fabulous texture and sweet tannin, this remarkably young wine is a profound example of mountain Cabernet Sauvignon that should last for another two decades or more. Producer Information Pedroncelli Winery & Vineyards is a wine estate in Dry Creek Valley, an AVA in California's Sonoma County. The vast range includes Cabernet Sauvignons, Zinfandels, Pinot Noirs, Chardonnays, Sauvignon Blancs and other blends. The Mother Clone vineyard is one of the estate's most prized plots. It is home to some of the original Zinfandel vines which can be over 100 years old. The winery also purchases grapes from various other Dry Peak vineyards such as the Bushnell Vineyard and the F. Johnson Vineyard. It sources Pinot Noir from properties in the Russian River Valley. The vineyards are managed sustainably with particular sensitivity to the environment. This approach includes soil management, water management, pest management and general habitat management. The winery has an onsite tasting room for visitors. The history of the business can be dated back to 1927 when Giovanni and Julia Pedroncelli decided to buy a hillside property in Geyerserville with 25 acres dedicated to Zinfandel. The business is still owned by their descendants. In the early years, the business survived prohibition by selling grapes to home winemakers and when prohibition was lifted in the '30s, Giovanni was quick to apply for a license to legally produce wine.

Producer: Far Niente Vintage: 2018 Size: 750ml ABV: 14.5% Varietal: Cabernet Sauvignon Country/Region: United States, Napa Valley The 2018 Far Niente Estate Bottled Cabernet Sauvignon is a bold, refined Napa Valley red, primarily sourced from Oakville, Stelling, and Sullenger vineyards. It offers intense aromas of boysenberry, dark cherry, cassis, and toasted oak. The palate is fleshy and, yet, soft and supple, with fine-grained tannins, dark chocolate, and cocoa notes, leading to a long, polished finish. Producer Information Far Niente Winery was established in Napa Valley, California, in 1885 by John Benson. It is a producer of premium Cabernet Sauvignon and one of the most storied California wineries. Benson was the uncle of American impressionist painter Winslow Homer and a "forty-niner" – he travelled to California in 1849 during the California Gold Rush that saw a huge influx of people into the region. Benson bought land in Oakville and had a gravity-flow winery built and vineyards planted. The estate was profitable until Prohibition (1920-1933) caused the winery to be abandoned. In 1979 Gil Nickel bought the winery and adjacent vineyards and began to refurbish them. The Benson name was kept until the words "far niente" were found inscribed in stone at the front of the winery – part of the Italian expression il dolce far niente or 'without a care'. A red wine made from Cabernet Sauvignon and a white wine made from Chardonnay are the only wines produced, and the first vintages (1979, ’80, ’81) were vinified offsite until the restoration was completed in 1982. The winery is now on the National Register for Historic Places. In 1998 a bottle of Far Niente Sweet Muscat from 1886 was discovered in a private California cellar. The bottle looks to be the oldest intact bottle of Californian wine, and the label is believed to have been illustrated by Winslow Homer. There are several vineyards in the Oakville appellation that provide grapes for the Far Niente wines. The Martin Stelling vineyard provides fruit for the Cabernet Sauvignon, and bounds Heitz Cellar's famous Martha's Vineyard, as well as Harlan Estate. Fruit for the Chardonnay comes from several vineyards in Coombsville, a cooler area just east of Napa town. In 1989, Gil...

Approximately three hectares (seven acres) of Futo's original land had previously been planted to vine back in the 1980s. In 2004, Futo Wines expanded its vineyard holdings with the acquisition of an adjoining two-hectare (six-acre) plot. The Oakville winery was completed in 2008, and four years later, Futo Wines increased its vineyard hectarage with an additional 16-hectare (40-acre) property in the Stags Leap District. Futo's Oakville vineyards are planted on sandstone and shale slopes elevated above the valley floor. These plots have been divided into 25 blocks that are mainly planted to Cabernet Sauvignon, with additional sections of Cabernet Franc, Petit Verdot and Merlot. These grape varieties are blended to produce the flagship Futo Oakville estate red wine. The Futo 5500 label is a Cabernet Sauvignon-based wine made from Futo Wines' 5500 Estate in the Stags Leap District. This site – a former rock quarry – is typified by steep terraces planted to Cabernet Sauvignon vines. The estate's third wine – the Futo OVSL – is red blend sourced from both the Oakville (OV) and Stags Leap District (SL) vineyards.

It’s full-bodied with firm, tight-grained tannins. Rich in flavor with a saline edge on the finish. Reviews: Wine Enthusiast: This is such an outstanding wine at any price, but here we’re talking about outstanding value as well. Notes of iron and crushed rock lead to a lengthy balance of juicy red fruit and clove. With small amounts of Merlot, Malbec, Saint-Macaire and Cabernet Franc, it shows a deft hand at blending, with lasting notes of black pepper and nuanced oak. Decanter: Charred wood, pipe tobacco and black cherries on the nose. Texturally, the most focused and persistent of the O’Shaughnessy Cabernets. The palate is both generous and nimble, showing substantially chewy, textbook Howell Mountain tannins. A rustic Cabernet housed in a contemporary core. Producer Information O'Shaughnessy Estate Winery is a Californian wine producer based in the Napa Valley. It was founded in 1990 by Betty O'Shaughnessy Woolls and Paul Woolls, who initially intended to cultivate white grape varieties. This changed with the acquisition of additional vineyards in Howell Mountain and Mount Veeder that were subsequently planted to Cabernet Sauvignon and other red grape varieties typical of Bordeaux. The wine portfolio features a trio of Cabernet Sauvignon wines, sourced from Mount Veeder, Napa and Howell Mountain. Depending on the vintage, these wine spend up to two years maturing in the cellar prior to vintage. The winery is situated in the hills overlooking St Helena and comprises an 11,000 square foot cellar drilled into the hillside. The estate owns a total of three vineyards in the Howell Mountain AVA. Approximately 18 hectares (44 acres) of these vineyards are planted to Cabernet Sauvignon and a further 2ha (6 acres) are planted with Cabernet Franc, Petit Verdot, Merlot, Malbec, Carmenere, Saint-Macaire and Gros Verdot. The estate has additional vineyards within Mount Veeder and Oakville.

Reviews: Wine Advocate: Take one sniff of the 2018 Estate Cabernet Sauvignon, and you know it’s Red Mountain—the wine opens with a particular dustiness commonly associated with Red Mountain terroir. Aromas of dusty plum, black cherry skin, currant and cassis are lifted by dusty purple flower and elegant oak spices of cinnamon, nutmeg and vanilla. Full-bodied, the wine is generous on the palate with ripe yet slightly rustic tones of dust-covered berries and a beautifully framed structure with succulent tannins. The wine ends with a long, gripping finish and is food-friendly now but will do well with two to three more years of cellar aging. The wine fermented with native yeast and saw 80% new French oak. It’s a beauty. Jeb Dunnuck: The 2018 Cabernet Sauvignon Red Mountain Estate is much more dense, tannic, backward wine compared to the Walla Walla Estate release. Its deep purple/plum color is followed by a masculine bouquet of crushed rocks, tobacco, iodine, and lead pencil. This carries to a full-bodied Red Mountain Cabernet with gorgeous overall balance, ripe yet building tannins, an undeniable sense of minerality, and a blockbuster finish. Possessing a liquid rock-like minerality (it seems to have been filtered through a bed of rocks), it's mostly educational at this young age and deserves 4-5 years of bottle age. It should keep for 2-3 decades in cold cellars. Producer Information It is both passion and obsessive attention to detail that push Force Majeure to raise the standard for Washington winegrowing. Inspired by the vineyards of Bordeaux, Hermitage, Priorat, and Cote Rotie, we challenged existing viticultural practices and embarked on an ambitious plan to pioneer the very first vineyard on the steep, upper slopes of Red Mountain. This Herculean effort involved the careful matching of varietal and clonal selections, trellising and irrigation to the nine distinct soil types formed by the ancient Missoula floods, winds and volcanic...

It is located in the eastern foothills of the Palisades Mountain range in Calistoga and produces a large range of wines sourced from multiple vineyards. The Venge wine portfolio is focus on full-bodied red blends such as the Zinfandel-based blend Scout's Honor and Cabernet Sauvignon Family Reserve, sourced from the Oakville Estate. Venge also produces a range of single-vineyard wines including a Cabernet Franc from the Sugarloaf vineyard and a Syrah from the Stagecoach vineyard. Production for each wine is only a few hundred cases, and with their high scores in the press, they sell out quickly and often. In the winery, all red wines are fermented with native yeasts, are aged in a combination of new and old French oak barrels. A majority of white wines go through malolactic fermentation and are aged on their lees, making them rich and creamy on the palate. Venge was founded in 1976 when proprietor Nils Venge purchased a 17 acre (7 hectare) vineyard in Oakville. Planted to Cabernet Sauvignon and Merlot, this vineyard has porous alluvial soils on an ideal hillside slope to maximise the sushine hours and encourage ripening.

It is particularly known for its Cabernet Sauvignon and also produces one of California's top-rated and most serious Sauvignon Blanc wines. There are 40 acres (16 hectares) of vines on the estate property, plus 52 acres (21 hectares) at the Rossi Estate on the Rutherford Bench. Frog's Leap also sources grapes from several leased plots and long-term contracted vineyards. All the vineyards owned by the estate and the partner growers have been farmed organically since the late 1980s, and many aspects of biodynamics are implemented. Cover crops and insect borders are used to encourage biodiversity. Frog's Leap's flagship wine is its Cabernet Sauvignon, which is now grown on the Rossi Estate vineyard, and has been estate-grown since 2012. The Sauvignon Blanc is also made from estate fruit in Rutherford, while the Chardonnay is sourced from the well-known Truchard Vineyard in Carneros. The Zinfandel, which is restrained in style compared with many from the region, is co-fermented with a significant portion of Petite Sirah, Carignan and also some Valdiguie. The portfolio is completed by a Rutherford Merlot, a Petite Sirah and the Provence-style rosé La Grenouille Rougante Pink. The business was founded by John Williams and Larry Turley in 1981 at the latter's property in Napa, which had formerly been a frog farm. The first release was a Sauvignon Blanc and a Zinfandel made from fruit purchased from Spottswoode. Owner John Williams also worked as winemaker at Spring Mountain before concentrating full time on Frog's Leap from 1985. Williams became outright owner in 1993 when Turley sold his interest to found Turley Wine Cellars, and Frog's Leap moved to its current location in Rutherford.

The baking spices soon follow, leaning clove initially but with plenty of cedar and vanilla. Still subtle, the ripe fruit elements, mostly cassis and fig at this stage, lurk beneath the surface along with beautiful hints of graphite and toasted sage, awaiting additional time in glass. Still very tightly wound, it’s the texture and mouthfeel that drive the palate initially. The tannins in particular are somewhat coarse but not so angular to overshadow the abundant dark fruit. The dynamic tension on the midpalate serves to focus and magnify the layers of black cherry, cocoa powder, and black pepper, before turning slightly earthy and dusty. The structure is pronounced, but still harmonious and well defined. It’s in the transition to the finish that the acidity materializes in almost candy-like fashion. Reviews: Decanter: Considerably more depth than the Napa Valley release, although a bit shy on the nose at first. Classy notes of cassis, currants, and violets all emerge from the glass, and it’s already drinking beautifully. Producer Information Founders George and Daniel Daou began searching for the vineyards that would comprise the DAOU estate in the mid 2000s - their objective was to find the perfect terroir for producing world-class Cabernet Sauvignon. They eventually settled on an estate in the Adelaida District AVA in San Luis Obispo County, specifically a plot once singled out by oenologist André Tchelistcheff as being of great potential. It's rare to find high quality Cabernet Sauvginon in Paso Robles, rare even to find anyone vinifying the grape here, but the high altitude of the site combined with a forensic approach in the vineyard and winery have allowed the team at DAOU to produce some truly fantastic wines. The flagship Cabernet Sauvignons are dense, intense reds that are set to age for many decades. Mayote is a Cabernet Sauvignon / Syrah blend while the estate Chardonnay is a surprisingly elegant entry in the portfolio.

The palate explodes with ultra-perfumed, ultra-layered black and blue fruits with ubiquitous, pixelated tannins that serve to support the plush fruit, replete with juicy freshness that continues to call you back for another sip on the very long, perfumed finish. It's a beautiful Cabernet Sauvignon that will age well in the cellar but is approachable straight from the bottle. Jeb Suckling: A rich, complex chardonnay with aromas of grilled pineapples, lemon curd, spiced pears, lanolin, crushed stones and salted butter. Grilled hazelnuts and vanilla, too. Full-bodied and buttery, yet long, driven and vibrant. Excellent concentration. Reviews: Wine Advocate: The very deep, purple-black colored 2018 Cabernet Sauvignon is made from 100% Cabernet Sauvignon. It takes a fair amount of swirling to unlock an incredibly intense nose of dark chocolate, warm cassis, baked plums and Morello cherries plus touches of red roses, violets, pencil shavings, cinnamon stick and dusty soil with a hint of iron ore. The full-bodied palate is so exquisitely elegant, charged with electric black and red fruits and a firm frame of super-ripe, grainy tannins and bold freshness, finishing very long and very perfumed. This is pure energy in a glass! James Suckling: Blackberry, dried-blueberry, bitter-chocolate and some volcanic-ash and burnt-orange aromas. Crushed stone and subtle vanilla notes, too. It’s full-bodied with firm, chewy tannins framing a deep core of dark fruit. Dense, muscular and firmly structured. So long. Goes on for minutes. Elegance with power. Really love the beautiful refinement and integrity to this. Captures the essence of the vintage. Reviews: Wine Advocate: Deep purple-black in color, the 2018 Cabernet Sauvignon Altagracia slowly grows on the nose, developing into profound scents of black currant cordial, baked plums and wild blueberries with suggestions of bouquet garni, black pepper, pencil lead and fertile loam plus a touch of beef drippings. Medium to full-bodied, the palate is delicately played with beautiful definition and lots of red berry and earthy accents intertwined with the black fruits.
