The name Chêne Blue means "Blue Oak" and derives from an old oak tree that succumbed to the droughts of 2005. The trunk and branches have been painted in Bordeaux Mixture by the artist Marco Nucero, giving the tree a blue-green color. There are around 30 hectares (75 acres) of vines. They are planted mainly with Grenache (25 or more years old) and Syrah (40-plus years old). There are smaller quantities of Mourvèdre, as well as the white grapes Rousanne, Marsanne, Viognier and Clairette. The vines lie at an altitude of 550m (1600ft), making it one of the higher vineyards in the South of France. This increases variations in day/night temperatures, which slow ripening to a degree, thus promoting grape quality. Harvests can take place up to three weeks after vineyards on the Rhône valley floor. The main downside to this is an increased exposure to bad autumnal wweather. The site gains more than 300 days of sunshine per year. Fruit ripens reliably and does not suffer from rot. Winds such as the Mistral contribute to flavor development, though the hilly terrain gives protection from weather extremes.

He wears shorts come hell or high water, hail, wind or rain. You only have to observe his soil-encrusted hands to realise that he spends his entire life in the vineyard. Wine is definitely his passion. One suspects that Monthélie is rather unfairly known (if at all) as simply “that village next door to Meursault”. However, Eric’s wines are certainly putting such ignorance to shame. The bio-dynamic viticultural methods set in place since 1996, some of the Côte d’Or’s lowest yields (often on a par with Domaine Leroy), rigorous grape selection and a minimal intervention winemaking policy conspire to produce some of the purest, finest and most complex Burgundy available. Focusing almost entirely on white wines made from Chardonnay, the Domaine makes four grand cru wines and four premier crus in Puligny-Montrachet. The Domaine was founded by Joseph Leflaive, a former engineer. In 1905, he purchased vineyards in Puligny-Montrachet which had been ravaged by phylloxera, and set about replanting and expanding them. Upon his death in 1953, his sons Vincent and Jo took over the running of the estate, and are widely credited with building up the reputation that Leflaive enjoys today. In 1990, cousins Anne Claude and Olivier Leflaive took over the running of the estate, with Olivier leaving in 1994 to run his own negociant business. Anne Claude converted the vineyards to biodynamics and is considered a pioneer of that movement in Burgundy. After her death in 2015, her nephew Brice de la Morandiere has taken over the running of Domaine Leflaive. Domaine Leflaive's most important wine is arguably the Montrachet Grand Cru, which, depending on vintage, can fetch upwards of $5000 a bottle. The domaine also has land in Chevalier-Montrachet, Batard-Montrachet, and Bienvenues-Batard-Montrachet, and makes a grand cru wine from each. Additional to this, there are several premier cru wines, the most important of which is probably the Les Clavoillon, which was one of the wines included in the 1976 Judgment of Paris. Producer Information Domaine Pascal Jolivet is a wine producer based in Sancerre but producing wines from across the wider Loire, including neighboring Pouilly-Fumé and in the Loire Valley, considerably further west. Jolivet also produces a South African Sauvignon Blanc, named Metis, in conjunction with the Klein Constantia estate outside Cape Town. Pascal Jolivet established his eponymous domaine in Sancerre in 1987 after years working in sales for the likes of Champagne Pommery. Jolivet himself came from a family of cellarmasters and wine merchants in Pouilly-Fumé. By 1990 Jolivet was building his own winery and five years later had acquired vineyards across both the Sancerre and Pouilly-Fumé appellations. A new winery was built ten years later. At around this time, Jolivet also purchased vineyard plots in the Loire Valley, to the west, near the town and appellation of Touraine. From these holdings, Jolivet produces his Attitude range of red, rosé and white wines, bottled under the IGP Val de Loire title. In all, Jolivet counts 120 hectares (300 acres) of vineyard holdings across the Sancerre and Pouilly Fumé regions, and 60 hectares (150 acres) in the Loire Valley, roughly 180km (110 miles) to the west. These holdings account for 80 percent of production, with a further 20 percent of Jolivet's fruit sourced from growers. The grapes – mostly Sauvignon Blanc and some Pinot Noir – are typically hand-harvested and vinified separately according to their origin to allow for terroir expression in the final batch. The Sancerre grapes come from limestone, flint, and clay soils, while the Pouilly-Fumé grapes originate from a range of Ice-Age subsoils. Jolivet is known as a proponent of fermenting wines with indigenous yeasts and in 1991 he made his first vintage via natural fermentation, whereby no yeasts are added to start the fermentation process. This, along with the use of gravity in the winery and long lees maturation, have become part of Jolivet's house style.

Producer Information Bertrand Machard de Gramont created the estate in 1984 after having worked in Chambolle Musigny at Comte de Vogue. In 2001, the production area was expanded to 6 hectares thanks to the spectacular replanting on the terraces of the “Vallerots” plot, on virgin soil which had been partly abandoned since Phylloxera. Bertrand’s daughter, Axelle Machard de Gramont, is the current owner and winemaker of the domaine. As the granddaughter of a Dufouleur, Axelle has winemaking in her blood, however when she was 20, she took what became a 15-year hiatus to Paris where she became a real city girl. Living there made her aware of ecology and also gave her the opportunity to taste organic wines which were just becoming popular in Paris wine bars at the time. She returned to the domaine in 2004 to join her father in the family business. It was due to her – and despite concern from her father – that the domaine converted to organic production, and was certified in 2014. Today she runs the domaine and she ferments all her wines using natural yeast. Where new oak is used, it is done so sparingly, and all the wine is unfined and unfiltered with limited amounts of sulfur. Very minimal intervention is the goal.

They are made by Nikos Karatzas. He works as a negociant, sourcing indigenous and rare grape varieties grown on excellent terroir by passionate grape growers across the country. Producer Information Domaine Henri Boillot is a wine producer based in Meursault known for its red and white wines from Côtes de Beaune appellations. The estate was named Domaine Jean Boillot until 2005, but was changed when Henri Boillot bought out his siblings in order to distinguish it from his brother's new Domaine Jean-Marc Boillot. Henri had previously set up Maison Henri Boillot for négociant wines and retains these labels to distinguish them from estate wines. A majority of Boillot's white wines are sourced from premier crus in Meursault and Puligny-Montrachet, including the entire 4 hectare (10 ac) Clos de la Mouchere vineyard. The domaine's Pinot Noir-based wines come from premier crus in Savigny, Beaune and Volnay. In the vineyard, Boillot avoids the use of insecticides and herbicides. Heavy pruning takes place in spring to limit yields and fruit is harvested as late as possible to ensure maximum phenolic maturity. The Henri Boillot winery is situated in Meursault. The white wines are fermented in 350-liter barrels and bottled after 18 months of barrel ageing. The Pinot Noir is fermented in stainless steel tanks with some stems retained, and then sees 18 months of barrel aging. The premier and grand cru wines under the Maison Henri Boillot label are sourced from single-vineyard plots with single owners to preserve the authenticity of the site.

Producer Information Wölffer Estate Vineyard is a producer and winery on New York's Long Island. It grows a range of grape varieties that are common on Long Island including Merlot, Chardonnay, Cabernet Franc and Cabernet Sauvignon, as well as the more unusual Trebbiano and Pinot Noir. Wölffer has built a reputation for its rosé, which is in high demand during summer. The portfolio consists of several different rosés from different blends, in both still and sparkling styles. Christian Wölffer first planted the vineyard in 1988 on a former potato farm. It is one of the few wineries in the Hamptons AVA on Long Island's South Fork, which is dwarfed in production by its more densely planted neighbor, the North Fork AVA. The 22 hectares (54 acres) of Wölffer vines originally went by the name Sagpond Vineyards until 1997, when the estate winery was completed and the label was rebranded. The Wölffer estate vineyard is hand harvested and the red grapes are de-stemmed and hand-sorted. The winery also produces ciders under the No.139 label and the Noblesse Oblige Méthode Traditionelle sparkling rosé from Chardonnay and Pinot Noir.
