It grows a range of grape varieties that are common on Long Island including Merlot, Chardonnay, Cabernet Franc and Cabernet Sauvignon, as well as the more unusual Trebbiano and Pinot Noir. Wölffer has built a reputation for its rosé, which is in high demand during summer. The portfolio consists of several different rosés from different blends, in both still and sparkling styles. Christian Wölffer first planted the vineyard in 1988 on a former potato farm. It is one of the few wineries in the Hamptons AVA on Long Island's South Fork, which is dwarfed in production by its more densely planted neighbor, the North Fork AVA. The most highly regarded range from the company is the barn series, inspired and named after the historic 1906 barn building on the estate property. The winery, owned by Chuck and Anne McMinn, is acclaimed for its wines made from Cabernet Sauvignon from their Estate and Aida vineyards, as well as and old-vine Zinfandel from the latter. The estate was founded by Teresa Norton and Tom Paine in 1989, who planted a three acre (1.2 hectare) vineyard on their Saint Helena property. They named it for their address – 2929 on California's State Route 29. Vineyard 29's first vintage was in 1992, and was made at Grace Family Vineyards by Gary Galleron. In 1995, renowned winemaker Heidi Barrett came on as winemaker and, in 1999, the equally lauded Philippe Melka took the reins. In 2000 the McMinns bought the winery, and added the Aida Vineyard to the portfolio, as well as building a new state-of-the-art winery and hiring high profile viticulturist David Abreu. Everything from temperature to humidity is monitored by computer, and moisture probes were installed in the vineyards to measure when and how much to irrigate the vines.

Producer Information Hourglass Wines is a small Californian winery in Napa Valley with a reputation for limited-production Cabernet Sauvignon. It was founded in the 1990s by Jeff Smith, who took over farming the vineyard that his father Ned had planted in the 1970s. Smith replanted the 5 acre (2 hectare) vineyard with Cabernet Sauvignon in 1992. His family had been growing and selling Zinfandel from the vineyard to local producers since 1976, but the spread of phylloxera in California in the late 1980s and early 1990s was killing the vines. Cabernet Sauvignon replaced the Zinfandel and the vineyard was named Hourglass Vineyard after the topography of the valley, shaped by the surrounding Mayacamas Range. The inaugural vintage was in 1997. In 2006, Hourglass Wines expanded with the purchase of the 22 acre (9ha) Blueline Vineyard. Merlot, Cabernet Franc, Petit Verdot and Malbec joined the Cabernet Sauvignon plantings and the winery expanded its range to include Bordeaux-style blends along with its varietal wines. It has since added Sauvignon Blanc to the portfolio as well. All the wines are labeled under the Napa Valley viticultural area, though Hourglass Vineyard is in the St Helena AVA and Blueline is in Calistoga. The wine is sold through allocation via mailing list, and has a waiting list, much like many other small "cult" wineries in Napa Valley.

Producer Information Since 1971, some of California's most ageworthy and intensely-flavored Cabernet Sauvignons have been made from grapes grown at the Eisele Vineyard, located on a benchland near the northern end of Napa Valley, just east of Calistoga. Protected by the Palisades Mountains to the north and cooled by westerly breezes from the Chalk Hill Gap, this 38-acre vineyard is planted on warm cobbly soils that produce a low-yielding crop of exceptionally concentrated fruit. Bart and Daphne Araujo acquired the Eisele Vineyard in 1990, and committed to producing only wines of the highest caliber and distinction.
