Producer Information Denis Varnier is only the third generation of winemakers at this estate, but grape growing in the Fannière family (Denis’ mother’s side of the family) dates back to 1860. Although the estate is small at just over 4 hectares, Varnier-Fannière’s holdings are impressive, averaging 45 years in age. Denis’ holdings are in three grand cru villages in the northern Côte des Blancs. He has as much land in Cramant as he does in Avize, with a smaller holding in the village of Oiry. His wines are precise and terroir expressive, in the direction of Avize “graphite”, while also being delicious and pleasurable. They exude class and fastidious detail. For a taste of absolute Avize, taste the Cuvée Saint Denis hailing from a single-site of 70 year-old vines, from the monocru Clos de Grand Pere. The Avize slopes are planted entirely with Chardonnay. The grapes from the steep slopes provide better and more delicate wines, but, in blending, the more robust specimens from the relatively flat terrain lower down in the village hold their own. The Brut Souverain is the house's most important wine, both in terms of fame and production, and is made of roughly equal parts Pinot Noir and Chardonnay, with a smaller proportion of Pinot Meunier. Her oldest son was very sick, and she could find no doctor or hospital that could cure him. There were many weeks and months of searching for an answer. Finally, as a last desperate measure, she took him to see an older couple in a nearby village who practiced homeopathic medicine. Under their guidance, Vincent, Françoise’s son, was soon on the mend. She swore off modern medicine and, within months, had removed every chemical or synthetic material from her tiny winery; Françoise became a biodynamic winemaker before virtually anyone in the wine trade had ever heard of the term. Today the estate is still small (8.4 hectares), and Françoise is doing things her way. While others champion the better-known Chardonnay and Pinot Noir, she is in love with Pinot Meunier, and this variety features heavily at this address. This is not uncommon as the Marne Valley is known for the quality of its Pinot Meunier, and Françoise only farms small amounts of Chardonnay (13%) and Pinot Noir (9%). In addition to her reliance on Pinot Meunier, Françoise is also patient with her Champagnes, and most bottles spend more than six years on the lees and frequently far longer. Low or zero dosage is the rule, chez Bedel. Located on the extreme western edge of Champagne, Françoise farm vines near the village of Crouttes-sur-Marne on the far edge of the Marne Valley – they are far closer to Paris than the city of Reims! The terroir here is dominated by clay with touches of limestone and gravel. Combined with the Pinot Meunier grape, this leads to wines with heft and weight with long, lingering acidity. We don’t often think of decanting Champagne, but these are wines that are transcendent when exposed to air – they are wines of great soul and depth.

Quite delicate and smooth texture on the long finish. Producer Information Domaine de la Grand'Cour is a Beaujolais estate with the majority of its vineyards in Fleurie. It produces a number of red wines sourced from different vineyards in Fleurie and Brouilly, all from the Gamay wine grape variety. The domaine was founded in 1969 by Jean Dutraive, making it one of the oldest estates in the region. It farms a little more than 10 hectares (24 acres) of vineyards with fewer than 1000 cases produced annually from each plot, with some variation depending on the vintage. In the winery, the domaine practices a number of minimalist winemaking techniques. All the fruit is hand-harvested, wild yeasts are used for fermentation and carbonic maceration is kept at low temperatures. Aging often takes place in used Burgundy oak barrels but depending on the vintage and the cuvée, cement vats and used wooden foudres can be employed. All wines produced by Domaine de la Grand'Cour has no filtering or fining techniques applied prior to bottling.

Quite delicate and smooth texture on the long finish. Producer Information Champagne Henriot is an independent, family-owned house in Champagne. The Brut Souverain is the house's most important wine, both in terms of fame and production, and is made of roughly equal parts Pinot Noir and Chardonnay, with a smaller proportion of Pinot Meunier. The Henriot family control roughly 35 hectares (87 acres) of vineyards, scattered around the Vallée de la Marne, Montagne de Reims and the Côte des Blancs. These provide around 20 percent of the company's needs, with most of the remainder supplied by regular contract growers. Pinot Noir is selected mainly from the premier and grands cru vineyards on the northern slope of the Montagne de Reims, while the Chardonnay comes largely from the Côte des Blancs. Chardonnay is Henriot's most important variety, and the portfolio has both a generic Blanc de Blancs wine and the premium Cuve 38, sourced exclusively from grand cru vineyards. Henriot also makes a Demi-Sec and Rosé Brut, as well as a Vintage Brut and Rosé. Previously named the Cuvée des Enchanteleurs, the Cuvée Hemera is at the very top of the range and is only produced in the best years. The first vintage of the Cuvée Hemera was the 2005. The Henriot family came from Lorraine originally, but moved to the Champagne region in 1640 and began to broker wines and acquire vineyards. Henriot was established in 1808 and in 1850, the business was declared the official supplier to the Imperial and Royal Court of Austria. It is now part of a wider group that includes Bouchard Père et Fils in Burgundy, William Fèvre in Chablis, and Villa Ponciago in Beaujolais.

Producer Information Champagne Jacquesson is a Champagne producer in Dizy in the Marne Valley (just north of Épernay), with a relatively short history going back to 1978, when the Chiquet family bought the marque and moved it to their family estate. In 1988, Jean-Hervé and Laurent Chiquet took over and have overseen a rapid rise to prominence: in the 2005 La Revue Des Vins De France, Jacquesson was rated third best of all houses after Bollinger and Krug. There is no conventional non-vintage cuvée – instead Jacquesson makes the Cuvée 700, which is more of a series of yearly releases blended from several vintages. Each of the 700 wines features the principal trio of Champagne varieties Chardonnay, Pinot Noir and Pinot Meunier, though there is considerable variation in terms of exact percentages. Jacquesson also produces a 700 DT range, with "DT" standing for Dégorgement Tardif, or late disgorging. Jacquesson also have a range of single-vineyard wines from Dizy, including a rosé; a vintage Blanc de Blancs from Avize; and a vintage wine from across the company's vineyard holdings in the Grande Vallée de la Marne, and in the Côte des Blancs. The base wine is vinified in large old oak casks. Smaller 500-liter oak casks may be used for extended aging or stocking of reserve wines before bottling. Jacquesson's style, while individual (not least due to its aging in oak casks), is not without its detractors. However, overall, the wines are critically well-regarded and often highly rated.

Producer Information Champagne Charles de Cazanove, though now based in Reims, was founded in Avizé, in the Côte des Blancs subregion of Champagne, in 1811 by Charles Gabriel de Cazanove – a 24-year-old glassmaker. Nearly one hundred years later, mirroring the royal patronage of many Champagne houses of the late 19th Century, King Edward VII of England was having stock specially imported from France with his own personal label. From the 1950s the Martini and Rossi company gained increasing control of the house. It was owned by Moët and Chandon from 1983 to 1985 before being sold to an Epernay distributor. In 2004, it was purchased by the Rapeneau family, owners of the GH Martel Champagne house. It now falls within the wider GH Martel group. The Charles de Cazanove portfolio cosists of three basic tiers of wines, which are topped by the Grand Apparat cuvée and the deluxe Stradivarius range. Grand Apparat is a predominantly Pinot Noir-based Champagne Blend (with over 50 percent Pinot Noir, 30 percent Chardonnay and just over ten percent Pinot Meunier) while Stradivarius is Chardonnay-dominant (roughly 70 percent Chardonnay to 30 percent Pinot Noir). In addition, chef de cave Christophe Rapeneau makes a sibling range labelled as Champagne Vieille France, which is now marketed separately but is often listed as a sub-brand of Charles de Cazanove.
