Producer Information This domaine has been working biodynamically since 2000. In a region where the tendency is to continually shy away from natural farming, this represents an extreme outlier. I’ve had the wines on rare occasions over the years, but my first real exposure was at the domaine this year when I got to taste one of the only verticals he’s ever poured. For the first time in my life I was really moved by a line up of Champagne, as a wine. All the base wines go through malo and are fermented with natural yeasts. They just have more weight and personality than my general perspective of Champagne and without the steroid effect of dosage. As an entrance into a big world of which I’m poorly versed, starting with Léclapart is about as good a place as I can imagine.

Together they are implementing the experience and knowledge of David in biodynamic agriculture as well as the French school of good winemaking. Its objective is to create a great white wine, without flower veil and without fortification, based on the respect and care of the soul of Jerez: the Albariza land and the Palomino grape. Located within the best vineyard lands of Sanlúcar de Barrameda, in the historic “Pago Miraflores”, taking advantage of the cool climate of the Atlantic Ocean, they have recovered three hectares of mostly old vineyard from ancient mass selections of Palomino fino and Muscat from Chipiona. They use minimal intervention techniques to make the wine: they add minimum sulphur (only 10% of what is usual), they do not use selected yeasts or acids to rectify the acidities, they preserve the lees and they bottle without filtering. Overcoming the risks, with delicate and careful work, the result they achieve is sublime: a dry, saline and mineral white wine, with subtle aromas, long on the palate, and absolutely gastronomic.

The story of Plumerai starts with my dad's past experience growing table grapes. Producer Information Emmolo Wine Company is a Napa Valley wine producer, focused primarily on a small collection of two varietal wines – a Sauvignon Blanc and a Merlot. The brand was established by Cheryl Emmolo in 1994, although the property in Rutherford has been in the family since the 1920s. The estate is now run by Emmolo's daughter, Jenny Wagner, and is part of the Wagner Family of Wine portfolio which includes the well-known wineries Caymus Vineyards, Mer Soleil, Red Schooner and Conundrum. The Emmolo Merlot is sourced from estate vineyards in Napa Valley that have been in the family for multiple generations. Various canopy management techniques are employed to ensure that yields are kept low to produce grapes with concentrated flavor compounds. The Sauvignon Blanc is sourced from both the estate in Napa Valley and an external grower in the Suisun Valley AVA (American Viticultural Area). The Suisun Valley recieves cool breezes from the San Francisco Bay throughout summer, allowing the Sauvignon Blanc to retain precious acidity levels. Both vineyards are dry-farmed. The latest innovation from the Emmolo portfolio is the Plumerai Sauvignon Blanc Reserve. As an experiment, the grapes were brushed early in the growing season to remove more than half of the grapes on each bunch. This labour-intensive process produced low yields of intensely concentrated grapes.

The American Dream was realized in 1888, with a business loan from Charles Wacker, when Louis Glunz was able to set up a shop as a wine, beer and spirit merchant on Wells Street and Division Street. In 1992, the third generation and forth generation of the Glunz family opened their winery specializing in small batched fortified wines. It takes its name from the Benedictine monk Dom Ruinart, whose writings on Champagne were passed down through his family and resulted in the Maison Ruinart we know today. Dom Ruinart was born in Champagne in 1657, and died in 1709. He moved from his home to an abbey just outside of Paris, where he began to learn about the "wine with bubbles", which was very popular among the young aristocrats of the time. He believed it could be made best on the soils of his hometown. Upon his death in 1709, he left many books containing his writings on this to his nephew Nicolas Ruinart and, 20 years later, Maison Ruinart was founded. The Ruinart house was passed through the family for the next two centuries, during which time they were the first to ship rosé Champagne, as well as being the first to ship their bottles in wooden cases. From humble beginnings, the house now produces almost 2 million bottles a year and is currently owned by luxury brand superpower LVMH. Ruinart owns vineyards across the Champagne region, predominantly in the Côtes de Blancs and the Montagne de Reims. The house style is Pinot Noir-dominant, but the wine's flavor profile tends to favor Chardonnay. In fact, Ruinart's prestige cuvée, Dom Ruinart, is a Blanc de Blancs made entirely from grand cru Chardonnay grapes, predominantly from the Avize, Chouilly and Le Mesnil vineyards. This wine is aged for 10 years in the underground cellars, which were acquired in the 18th Century and lie under the city of Reims. These cellars, which are 8km (5 miles) long and three levels deep, hold many of the oldest expressions of Ruinart. The non-vintage wines, which include a brut, rosé and blanc de blancs, are aged for three years before release. All of the wines are vinified in stainless steel, using inert gas to prevent oxidation. Dosage is limited and this helps to reinforce the fresh, flinty and integrated style of Ruinart Champagne.
