Flavours of smoked pears, refreshing lemons and a creamy mouthfeel, and hints of sweet fennel make this irresistible. Producer Information Filipa Pato’s and William Wouters’ philosophy is simple. First, to create authentic wines without make-up. Second, to focus on indigenous grapes only, namely Baga, Bical, Arinto, Cercial and Maria Gomes. They have practiced biodymanic viticultural practices since 2014 and, in 2021, attained biodynamic certification for their vineyards, which predominantly comprise old vine parcels. In the winery, minimal intervention is the goal, allowing the grapes to express the true nature of the vineyards from which they come. The couple’s range is sophisticated and gastronomic as one would expect given they hail from families of wine growers and restaurateurs respectively.

Producer: Bodegas Lustau Vintage: NV Size: 750ml ABV: 20% Varietal: Palomino Country/Region: Spain, Andalucia Dark bronze colour with golden rim. Pungent nutty aromas with a smoky wood background. Rich flavors of bitter chocolate, walnuts and baked chestnuts. This Oloroso wine has an intense, concentrated aftertaste, lightened by a tangy acidity. Producer Information Bodegas Lustau is a famous Sherry producer in Andalucia and is arguably the most recognized fortified wine producer in the world. It was was founded in 1896 by José Ruiz-Berdejo as an almacenista, which also grew its own vines. Almacenistas generally bought young wine (Ruiz made his own) and matured them in their own soleras, before selling them to larger houses, who would either blend it with older wine, or mature it longer in their larger soleras. It wasn't until the 1950s that Ruiz's son-in-law Emilio Lustau Ortega began bottling and exporting his own wine. Now based in Jerez, Lustau is the only winery that has sites in all three cities of the Sherry triangle: Jerez de la Frontera, El Puerto de Santa María and Sanlúcar de Barrameda. Lustau buys fruit from vineyards, while also maintaining two of its own. The first is the Montegilillo vineyard, which is on the white limestone albariza soil local to the region. The second is the Las Cruces vineyard, which is on sandy coastal soils. Lustau now produces a range of Sherry, but achieves the most recognition for its Almacenista collection. Continuing the tradition, the collection is series of single offerings from smaller producers that Lustau bottles and distributes. The style of the local producer is maintained and their name is featured on the bottle.

Producer: Luis Pato Vintage: 2020 Size: 750ml ABV: 12.5% Varietal: Bical Country/Region: Portugal, Beiras Producer Information Luis Pato is a high-profile, well-regarded and innovative wine producer in the northern Portuguese region of Bairrada. The proprietor, Luis Pato, is a champion of the local red grape Baga and produced his first wine from the variety in 1980. Today, Pato has a diverse wine portfolio that includes still, sweet, and sparkling wines. The estate is made up of 60 hectares (148 acres) of vineyard land spread throughout nine vineyards around Bairrada. The more southern of these have chalky-clay soils, while the more northerly vineyards are composed of sand. Along with Baga, the vineyards are planted with a combination of Touriga Nacional, Tinto Cão, Bical, Maria Gomes and Cerceal da Bairrada. Pato himself is widely credited with helping to revive both Baga and the Bairrada region. He planted ungrafted Baga vines, destemmed the variety for vinification (which was unusual at the time) and began aging Baga in new French oak barrels – also a novelty. Pato also explored blending the Baga variety with Touriga Nacional. In 1999, Luis Pato began to label his wines with the regional denomination, Beiras. Luis Pato's top wines include the single-vineyard reds Vinha Pan, Vinha Barrosa, and Quinta do Ribeirinho Pé Franco. The latter is a concentrated red wine made from low-yeilding, ungrafted Baga. He also makes premium white wines, led by Vinha Formal – a wine made from 100 percent Bical grown on chalky-clay soils.

Reviews: Wine Advocate: Bedrock's 2018 Pato Vineyard Heritage Wine emerges from a site in Contra Costa County planted in 1905 own rooted vines. Here the presence of Petite Sirah and a warmer microclimate yield a red wine of real breadth, richness and power. The 2018 needs time to be at is best, but it possesses dazzling intensity, structure and energy. In a word: dazzling. James Suckling: Brooding and potent, but retains just enough polish, offering vivid blackberry, cured meat and dried sage flavors that build toward fine-grained tannins. Producer Information Bedrock Wine Co. is a Sonoma-based wine company founded in 2007 by owner and winemaker Morgan Twain-Peterson. The label was created as a way for Peterson to showcase the quality of red and white grapes produced from ancient vines and distinct appellations in Sonoma, California including Sonoma Valley, Carneros, and Bennett Valley. The palate is quite gentle for a VORS. Very polished and round, with a pungent, intense feeling, it feels extremely old. Reviews: Wine Advocate: The NV Oloroso Solera de su Majestad VORS produced from Palomino grapes from the Carrascal vineyard, has aged in a solera for over 30 years. It has a bright mahogany color and a subtle nose of noble woods, walnuts, aromatic herbs, and a touch of brandy. The palate is quite gentle for a VORS. Very polished and round, with a pungent, intense feeling, it feels extremely old. One of the best Olorosos around, it’s old enough to have that extra complexity, but not to be too aggressive, as Olorosos can easily get when they’re very old. James Suckling: Very dark brown. Fresh acidity, intense long flavours lingering into a warm finish. Beautiful… but no giveaway. Producer Information The origins of the Bodega Valdespino date back to 1264 A.D. The first member of the Valdespino family to cultivate and age Sherry wines was Don Alfonso Valdespino, one of 24 Christian Knights who fought for King Alonso to re-conquer the City of Jerez from the Moors. As a reward for a successful battle, the King rewarded the Knights, including Don Alfonso Valdespino by giving them land in the City of Jerez.Although commercial activities are recorded as far back as 1430, the company was not registered until 1875. In 1883 the House of Valdespino became a purveyor of Sherry to the Royal House of Spain and in 1932, they also became purveyors of Sherry to the Royal House of Sweden.

Producer: Bodegas Lustau Ratings: WE 90 D 90 Vintage: NV Size: 750ml ABV: 20% Varietal: Sherry Blend Country/Region: Spain, Andalucia East India is an appealing deep tawny brown, and offers a complex, mature nose of burnt sugar, spices, raisins, chocolate, walnuts and orange peel. It is sweet and full-bodied, with a smooth, almost treacle-like consistency, but good balancing acidity. There is a faint rancio character that adds complexity, and a fresh, everlasting finish. Reviews: Wine Enthusiast: This traditional wine from Lustau is made in the Cream style. It's dark and pretty, with PX-ish prune and caramel aromas. It's not as thick as Pedro Ximénez, and thus isn't syrupy. But it's certainly rich and full of cookie, molasses, maple and brown sugar flavors. For anyone who likes a sweet Sherry that's balanced, this is a good place to go. Decanter: Inviting, with hints of orange blossom, raisin and pickled walnut aromas, smoked nut, citrus peel and peppery spice on the palate.

This bottle, corked and stapled, then ages for many years in the cellars on its fine lees. Producer Information In 1743, the Grumier family was already living in Venteuil and growing vines. The generations succeeded one another as history unfolded, and it was in 1928 that Amand Grumier decided to keep his harvest and make his first Champagne. His wife Aline helped and supported him in this venture which few vintners dared to try in those difficult times for winegrowers. When his son Maurice came back from the war in 1945, he took over the vineyard and turned it into a prosperous business. He added his first name to the brand “Maurice Grumier” and we still use this brand name today.Maurice died in an accident in 1968, leaving Guy and his wife Françoise to run the vineyard. In the thirty years that followed, they expanded the domain and modernised it, developing sales while constantly seeking the highest quality for their products. In 1999, Fabien graduated from viticultural college and joined them on the estate. In 2005 his wife Helène arrived at the vineyard. Together they developed new cuvees and progressively turned to exporting some of their Champagnes to Italy, Switzerland, Japan, etc.

The palate has a sweet, rich and fleshy sultana and raisin finish. Reviews: Wine Advocate: The Pedro Ximenez Solera 1927 is non-vintage, but does have some 1927 material in it. This is totally dark brown/amber with notes of figs, toffee, caramel syrup, molasses and coffee. It is dense, super sweet, intense, rich and an amazingly, unctuously textured, thick beverage to consume slowly and introspectively after a meal. Drink now through 2050, or even longer. Wine Enthusiast: One of the world's best PX wines is Solera 1927, the pride of Alvear. Whatever solera stocks went into this bottling were well selected. Aromas of maple and fine wood turn to fig and caramel. Saturation and weight on the palate are expected, but this has some (though not a lot) acidic cut. Deep flavors of fig and Nutella finish with nuttiness and warmth. Producer Information Bodegas Alvear is one of the largest and best-known producers in Andalucia, in southern Spain. It was built in 1729 by Diego de Alvear y Escalera in what is now the Montilla-Moriles DO, and its wines are competitive even with the great sherry producers of Jerez. The winery's success came out of a contract Diego won to ship wine to England in the late 18th Century, and today 40 percent of Alvear's production is for the international market. The estate owns a number of vineyards in Montilla-Moriles and buys fruit from other producers in the region. Located south of the city of Córdoba, Montilla-Moriles is most famous for wines similar stylistically to sherry (the classic Amontillado style of Sherry actually means "in the style of Montilla"). Pedro Ximénez (often dubbed "PX") is more commonly used in Montilla-Moriles than Palomino (which is predominant in Jerez). The solera system is still used to age the wines, often under a flor. Across its multiple properties, Bodegas Alvear boasts the ability to age 5 million liters of wine in oak butts at once. One of its most well-known wines is the PX de Solera 1927, which identifies the Solera the wine was aged in as beginning in 1927. The original Alvear estate, the bodega "de la Casa", has Montilla's oldest solera barrel system,...

Producer: Bodegas Alvear Vintage: 1910 Size: 375ml ABV: 15% Varietal: Pedro Ximenez Country/Region: Spain, Montilla-Moriles Solera 1910 starts with notes of molasses, honey, oak spice (vanilla bean, nutmeg, and cinnamon), and dried black fruits (fig, prune, and raisin). The finish melts into rich notes of mocha, demerara sugar, and espresso. The original Alvear estate, the bodega "de la Casa", has Montilla's oldest solera barrel system, which houses 200-year old Amontillado. Falling interest in both sweet wines and fortified wines has meant that the Alvear PX de Solera 1927 has become a phenomenal bargain for a high-quality, complex wine.

Size: 750ML Proof: 95 (47.5% ABV) Origin: United States Distillery: Distillers Way LLC. Matured in a solera system where younger whiskies are slowly added into older barrels over time, the Doc Swinson rye is bottled at 47.5% after an additional maturation in rum casks. If you're a fan of the Basil Hayden Caribbean Cask series, you'll definitely want to check this one out. A blend of mash bills aged 4-6 years in new oak and bottled without chill filtration, this edition took Double Gold honors at the SF Spirits Competition. Never too sweet on the palate, the honeyed notes from the rum gently coat the spicy and herbaceous character of the rye, still shining through at 95 proof. Distillery Information The Doc Swinson’s Collection began with an extremely small cache of Bourbon Barrels that were just too good to pass up. It has since grown into a unique and on occasion extremely rare, collection of American whiskies. The proof is in the palate. Each whiskey brought in is personally tasted by the three of us at Doc Swinson’s. If it’s good we will find a place for it in either the Flagship, Exploratory or Rare Release series. When it comes to finishing techniques, we look to the old-world traditions that have stood the test of time, from Scottish whiskey blenders to the timeless sherry pyramids of the Spanish solera. However, sometimes we stumble upon a whiskey that needs no perfecting and we simply bottle at cask strength. Whatever whiskey comes through these doors, our small group of tastemakers at Doc’s work hard to create flavor profiles that hold our expectations of great whiskey to a higher standard; and that starts by always letting the whiskey shine.

Smooth and full bodied on the palate with excellent length. Producer Information The origins of the Jose Estevez S.A wine cellars (Bodegas) are from the Jose Lena Rendon and Co. enterprise, which was established in 1809 for ageing Sherry and Brandy. In 1894, Mr. Ruiz, the principal shareholder, changed the name of the company to his own: Felix Ruiz and Ruiz, S.A. At this time, the business reached as far as Northern Europe and South America. Since 1974 the Estevez family has managed the entire company and in 1984 the name of the company was changed to Jose Estevez S.A. In keeping with the traditions of a family business, great importance has been given to the care of the ageing of the wines. In 1982, Jose Estevez de los Reyes bought a large proportion of shares in the Marques del Real Tesoro bodega, taking over the whole company in 1985, injecting financial and professional support. By 1989 the Estevez family held a 95% share of the company. The same year, 1989, the Estevez family drew up a plan to merge the two companies, JOSE ESTEVEZ, S.A. and MARQUES DEL REAL TESORO, S.A., investing in a "brand new" facility, the actual headquarters. These buildings include the new offices, ageing cellars, bottling plant, refrigeration plant, warehouses, laboratories and controlled fermentation plants. This new structure reinforces the new Bodegas José Estévez, S.A., equipped with the most modern machinery and technology in Spain. Following this philosophy of expansion, in May 1993, the international brand of Fino wine "Tio Mateo", is acquired, as well as its complete "Solera". One of the oldest wineries in Jerez, A.R. VALDESPINO, is acquired in September 1999; and in 2007, the Estévez family takes control of "Hijos de Rainera Pérez Marín y M. Gil Luque", proprietors of the well-known Manzanilla "La Guita", from Sanlucar de Barrameda, which is the market leader in Spain.

Rich, generous, fleshy and racy, with delicious notes of pastry, peach, apple and spice. Producer Information Bérêche et Fils is a historic Champagne house, founded in 1847. Today, it cultivates 10 hectares (25 acres) of vineyards spread across three main areas in and around Ludes and Ormes in Montagne de Reims, as well as Vallée de la Marne. Raphaël Bérêche inherited the family estate in 2004 and, four years later, was joined by his brother Vincent. Since then, the brothers have expanded the family's vineyard holdings with the purchase of a small grand cru vineyard plot in Mailly in 2012. Together, they have converted the estate to organic farming methods and have also begun to use biodynamic viticultural practices. The estate's vineyards are divided into 21 parcels planted to a combination of Chardonnay, Pinot Noir and Pinot Meunier. These vineyard parcels are kept separate throughout the vinification and aging stages, with fermentation occurring in the presence of natural yeasts. The wines are disgorged manually and a small dosage added before bottling without filtration. The Bérêche et Fils portfolio includes non-vintage and vintage Extra Brut, Brut, Rosé, Blanc de Blancs and Blancs de Noirs wines, as well as a Brut Réserve. The Bérêche brothers have also created the "Raphaël et Vincent Bérêche" brand under which they produce a range of Champagnes from purchased grapes.

The portfolio is centered around the zesty, refreshing Cordon Rouge Brut, which is based on the classic Champagne blend, along with a range of other styles including brut rosé, demi-sec, vintage and blanc de blancs. The top wine is the Cuvée R. Lalou, a limited release vintage Champagne made from selected grand cru parcels and named after René Lalou, a former head of the company. Champagne Mumm owns around 220 hectares (540 acres) of vines, with many in some of the top grand cru vineyards in Champagne. These holdings make up approximately 25 percent of Mumm's production, with the remaining grapes coming from independent growers, with whom Mumm has long-standing relationships in order to help maintain a consistent style in the finished product. The Cordon Rouge is aged for two and a half years, with vintage wines spending nearly five years in bottle. These are aged in Mumm's 25km (15 miles) of cellars, which are home to almost 25 million bottles of wine. P.A. Mumm et Cie, and released the first Cordon Rouge, with its iconic red sash, in 1876. Mumm has expanded beyond Champagne, opening Mumm Napa in the Napa Valley in 1983. For decades, principally in the latter half of the 20th Century, Mumm – and its cordon rouge label – had become associated with sporting feats. Before the era of sponsorship deals, a Mumm representative would be on hand with a bottle or more to hand...
