The variety was Publican, and the whisky was aged for a minimum of 11 years in 16 oloroso sherry butts. During maturation, layers of dried fruits and rich spices have infused into the whisky, which balance beautifully with the natural citrus sweetness and peat smoke of Kilchoman. Kilchoman 100% Islay 11 Year Old Sherry Cask Matured (2025 Release) Single Malt Scotch Whisky 700ML Tasting Notes Nose: Orange peel, dried fruits, light peat smoke and sweet spices. Palate: Rich smoke, and dark chocolate with honey, cooked apples, and malty sweetness. Finish: Grilled fruits, plums, currants and lasting wood smoke. Distillery Information The Kilchoman whisky distillery was founded in 2005 at the Rochside Farm, not far from Machir Bay at Islay’s West Coast. Kilchoman is Scotland’s most Westerly whisky distillery and draws its water from a spring on Cnoc Dubh, just above Rochside Farm. The Kilchoman distillery is the brainchild of Anthony Wills, a former wine industry professional who wished to found a small-scale, traditional distillery. Subsequently Mark and Rohaise French, of the Rochside Farm, were keen on using local produce (and had their own food label, Islay Fine Food), so the idea of establishing an artisan, traditional distillery fitted in perfectly with their ethos. The farm is entirely self-contained, Barley is grown and malted at the distillery, maturations will take place onsite, as will bottling. The resultant single malt Scotch whisky will not undergo chill-filtration nor will spirit caramel be added, the standard strength will be at 50% abv, reduced with Islay water. Distillation commenced in November of 2005 and 80% of the spirit is matured in ex-bourbon casks, from Buffalo Trace distillery in Kentucky, the remaining spirit will be matured in Oloroso sherry butts. There is a visitor centre on the site and a Kilchoman new make spirit has already been released, exhibiting a distinct nuttiness and a sumptuous peat even at this early stage.

Distillery Information The Kilchoman whisky distillery was founded in 2005 at the Rochside Farm, not far from Machir Bay at Islay’s West Coast. Kilchoman is Scotland’s most Westerly whisky distillery and draws its water from a spring on Cnoc Dubh, just above Rochside Farm. The Kilchoman distillery is the brainchild of Anthony Wills, a former wine industry professional who wished to found a small-scale, traditional distillery. Subsequently Mark and Rohaise French, of the Rochside Farm, were keen on using local produce (and had their own food label, Islay Fine Food), so the idea of establishing an artisan, traditional distillery fitted in perfectly with their ethos.

The Kilchoman distillery is the brainchild of Anthony Wills, a former wine industry professional who wished to found a small-scale, traditional distillery. Subsequently Mark and Rohaise French, of the Rochside Farm, were keen on using local produce (and had their own food label, Islay Fine Food), so the idea of establishing an artisan, traditional distillery fitted in perfectly with their ethos.

Annandale Man O’Sword Vintage 2015 Oloroso Sherry Butt Cask #755 Whisky 700ML Tasting Notes Nose: Rich notes of damp charcoal, leathery oak and pipe tobacco are joined by sweet stewed orchard fruits, fiery spice, and flamed citrus. Palate: A balance of peat smoke and tobacco with toffee apples and burnt orange, backed by vanilla fudge and poached pear. Finish: Sweet fruits and rich smoke linger, with creamy notes of burnt custard in tow. Distillery Information Annandale Distillery was established way back in 1836 by George Donald, an Elgin-based excise officer who named the site after the valley it sits in just 15 minutes from the English border. Using water from the Guillielands Burn for cooling and power and from Middleby Burn for the whisky, the Lowland site functioned for nearly a century, once capable of making 28,000 gallons of spirit annually and even passing through the hands of John Walker & Sons before whisky making ceased in the early 1920s. It was later a production line for the Provost porridge oats breakfast cereal brand, but before long the buildings fell into a state of disrepair. That’s how things remained until 2007 when Annandale caught the eye of a husband-and-wife/business partner team. Professor David Thomson, an expatriate Scot, was looking for a project that would anchor his life back to his native Scotland while Teresa Church was keen to find work that supported her enduring passion for restoring old buildings. Annandale ticked all the boxes and so began an extensive £10.5 million restoration project that culminated in the restoration of Annandale Distillery in 2014. Whisky flowed from the stills on Annandale again on 3 November 2014. The whole production setup was built under the guidance and supervision of the late, great Dr. Jim Swan, who had known Thompson since the mid-1980s after they’d met at a sensory conference in London. Swan advised the use of traditional wooden washbacks and helped source high-quality casks. The distillery produces both peated and unpeated single cask, single malt bottled at cask strength, often inspired by Scottish heroes.
