Each whisky was hand-selected based on its quality and depth of flavor. The backbone of the blend is composed of single malt whisky sourced from the Tamdhu Distillery. The whisky was distilled on September 29, 1989, and matured in a cask that was previously used to mature bourbon (Cask #8150) for 23 years. The Tamdhu whisky contributes bold notes of sharp fruit, barley and spices to the flavor profile of blend. The Strathmill Single Malt Whisky used in the blend was distilled on May 25, 1991, and also matured in an ex-bourbon barrel (Cask #1289) for 21 years. The Strathmill whisky contributes lighter notes of salt, black pepper and chilies to the blend. (Publican barley is more resilient to Islay's harsh weather than traditional strains of barley.) Once the barley has been harvested, it is malted at the distillery's malthouse — Kilchoman is one of just six distilleries in Scotland that continues to malt its own barley — before being dried over a peat flame for ten hours. After the barley has been peated to approximately 20 phenol parts per million, the grains are fermented for three to four days in stainless steel washbacks before being twice distilled through Kilchoman's copper-pot stills. In order to subsidize some of their business early on, Kilchoman sold entire casks to retailers or importers. Luckily they still continue this program. Kilchoman is Scotland’s most Westerly whisky distillery and draws its water from a spring on Cnoc Dubh, just above Rochside Farm. The Kilchoman distillery is the brainchild of Anthony Wills, a former wine industry professional who wished to found a small-scale, traditional distillery. Subsequently Mark and Rohaise French, of the Rochside Farm, were keen on using local produce (and had their own food label, Islay Fine Food), so the idea of establishing an artisan, traditional distillery fitted in perfectly with their ethos.
