Today, Olivier Leflaive (which is based in Puligny-Montrachet) has 17 hectares (42 acres) of estate vines, as well as approximately 100 hectares (247 acres) of growers' vines. These are spread across the Côte de Beaune, Côte Châlonnaise, and Chablis, although the most important holdings are in Meursault and Chassagne-Montrachet. Olivier Leflaive produces wines from several Grand Cru vineyards, including Le Montrachet, Corton-Charlemagne and Bâtard-Montrachet, and several notable premier cru vineyards, such as Meursault Charmes and Puligny-Montrachet's Les Pucelles. It is known particularly for its gutsy, spicy red wine from the Syrah grape. Pierre Gonon established his eponymous estate in 1988 and today, it remains family owned and operated. The 10 hectares (25 acres) of vineyards are situated on the best granite hillside sites at Tournon, Mauves and Saint Jean de Muzols. These vineyards have been certified organic since 2004. In the winery, Syrah grapes are partially de-stemmed, and then vinified with natural yeasts in large open vats. A twice daily pump-overs or punch-downs regime is employed to ensure a slow and control estraction of tannins. The wines are aged for 14 to 16 months in 600 liter barrels, with no new oak at all. Pierre Gonon's key wine, in terms of production, is its Saint-Joseph red, but it also makes small amounts of an IGP Ardèche Syrah that spends ten months in large barrels. The Saint-Joseph Blanc Les Oliviers is sourced from a 2ha (5 acre) plot. It is a blend of Marsanne and Roussanne, fermented in large casks, then aged in barriques and larger barrels for 11 months, with regular lees stirring. The vines and fields were mainly located in Marsannay-la-Côte and the wine was primarily sold to wine merchants. In 1962, Albert married Odile Guyard, the oldest daughter of a large family. Georges Guyard, Odile’s father, was a small land owner and nurseryman by trade. He decided to rent some vineyards, then bought the land to gradually expand his own estate. Because he wanted to spare his horses the commute between the two villages (7 km), he then chose to swap Gevrey-Chambertin Grands Crus (Lavaux Saint-Jacques) for some land in Marsannay-la-Côte!!!... Since 1990, Olivier Guyot manages the estate on his own, with vineyards that go from Marsannay-la-Côte to Gevrey-Chambertin. Today the estate comprises of small plots spread on 15 hectares. The blend is 75% Graciano, 20% Tempranillo and 5% Garnacha with 14.3% alcohol and 5.6 grams of acidity. The destemmed grapes fermented with a three-week maceration, and the wine matured in 500-liter oak barrels for 12 months, followed by a further 26 months in 1,000-liter oak foudre. This is ripe, powerful and round, aromatic and expressive, in a much more powerful year (because of the character of the year), because the vinification and élevage were the same. The very high percentage of Graciano is very noticeable, making the wine very spicy, with lots of notes of freshly cracked black peppercorn. There's more natural concentration of the fruit, low yields, and Rivière was careful with the extraction. It has abundant but fine-grained tannins, plenty of energy and good balance. This should develop nicely in bottle. It's the most powerful vintage and the most powerful wine in the portfolio in 2019. Wait a bit. 1,300 bottles were filled in February 2022. Producer Information Pierre-Olivier Garcia began his venture in 2016 with a small parcel of vines in Nuits-Saint-Georges and an old house in the centre of Nuits which he restored and converted into a winery. From the beginning, the project aimed to restore biodiversity in the vineyards, something he felt had been lost due to the focus on single-crop farming across the region. This ‘eco-attitude’ means Pierre-Olivier experiments with cereals, ploughing, planting trees and even using chickens to graze the land, in an attempt to bring back bees and butterflies to his 0.4 hectares of vineyard. In addition, he sources grapes from a network of grower friends, with whom he works closely, in order to have as much control over the quality as possible. Pierre-Olivier Garcia is an advocate of low-intervention winemaking. He uses no new oak, believing its character inhibits the wine’s ability to express its origin. He also pioneered ‘baie par baie’, or ‘berry by berry’, a painstaking process which involves hand-cutting each individual grape from the bunch, with the stalk intact. This technique takes 30 people an entire day to complete a single barrel, yet Pierre-Olivier perseveres with this practise since it results in enhanced aromas and complexity in the finished wine. The Aligoté ‘Les Champs Tions’ is a serious style of Aligoté sourced from grapes grown in Fixin and vinified solely in oak. Made using 50% whole-bunch fermentation, the Marsannay ‘Clos du Roy’ has aromas of crunchy red fruits, floral notes and fine tannins, an intense wine for this level. The three Nuits-Saint-Georges wines, ‘Les Herbues’, ‘Les Charmois’ and ‘Les Grandes Vignes’, are made using different ratios of ‘baie par baie’, whole bunches and destemmed grapes. While all displaying delicate floral aromas and velvety tannins, each shows a strong expression of their ‘climat’ within this famous village. Finally, the Corton Grand Cru is made using 100% ‘baie par baie’, the result is an intense, deep and energetic wine with subtle floral character, vibrant fruit and very fine tannins.
