The wines are made at Mineral Springs Ranch, located just southwest of Portland in Yamhill-Carlton District, a subregion of the Willamette Valley. Mineral Springs Ranch spans 97 hectares (240 acres) of land, planted to 13 hectares (32 acres) of vines. Most of this vineyard land is dedicated to Pinot Noir, with just a single hectare (2.5 acres) of Chardonnay. The ranch is a biodynamic farm and the vineyards (and resulting wines) are certified biodynamic and organic. Producer Information The Goutorbe-Bouillot house is a small grower Champagne estate located in the village of Damery just west of Epernay. Family-owned and run since 1911, the 8 hectares of 35 different parcels of vineyards extend over the Vallée de la Marne with a focus on Pinot Meunier, Chardonnay and Pinot Noir grapes. The union between Jules Goutorbe and Louise Bouillot was the origin of the creation of Champagne GOUTORBE-BOUILLOT. Starting in 1775 the families had been involved in the Champagne business and had been selling their wines to the large Champagne houses. Today the estate is owned by the Papleux family, and Bastien, the great grandson of Jules and Louise, makes the wine and manages the business. The vineyards extend over a region called Vallée de la Marne (close to Epernay), where, traditionally, the grape variety Pinot Meunier is dominant. The Goutorbe-Bouillot house is following that tradition, although Chardonnay is becoming more important. Currently more than half of Goutorbe-Bouillot's vineyards are planted to Pinot Meunier. The average age of the vineyard parcels is around 35 years old, though some parcels were planted in 1930 and are almost a century old. With great care for quality and the health of the vines, Goutorbe-Bouillot is now certified as "viticulture durable", which is the highest European standard of sustainable agriculture. Goutorbe-Bouillot Champagnes are produced by a method similar to the Solera system. Each year they use 50% of this reserve wine in the blend. This means that the wine contains some of all the earlier vintages in decreasing proportions. This perpetual reserve was started in 1980 for the Carte d'Or and in 2000 for the other non-vintage cuvees. The aim is to give more maturity and complexity to the wines. In order to keep the natural acidity and aromas from the grapes, the house blocks malolactic fermentation. Thus the wines are fresher in their youth but gain more complexity with aging.

Producer Information Champagne Paul Bara is a Grand Cru Champagne producer of the Bouzy commune. The Champagne house is widely known as the most renowned producer of the region. The estate was first constructed as an agricultural farm in 1860, but it wasn't until 1965 that the building was converted to a winery. Paul Bara first started to produce the eponymous brand in the 1950s and today, the estate is managed by his daughter Chantale Bara. Paul Bara is a rare récoltant-manipulant (meaning the house produces champagne from grapes grown by themselves) of Bouzy, a major of producers here are large, corporate Champagne houses. Estate vineyards are all Grand Cru and found within the commune of Bouzy in the Montagne de Reims subregion. The deep and chalky soils here are excellent terroir to create wine with intense fruit and mineral complexity. The Bara family have cultivated 11 hectares of vineyards, 9.5ha of Pinot Noir and 1.5ha of Chardonnay in Bouzy for seven generations. Grapes are hand-harvest prior to a whole-bunch press in both a wooden-basket and a modern electric press. Each plot is kept seperate throughout the fermentation process with the white and rosé wines prevented from malolactic fermentation. The Brut "L'Annonciase se Paul Bara" Blac de Noir is produced in commemoration of a family ancestor; Annonciade was a daughter of a local winemaker who married into the family to Auguste Bara, a young cooper. The tale begins with Cleto Chiarli, the proprietor of the Modena restaurant Osteria dell’Artigliere in the mid-1800s. As was common for restaurateurs and innkeepers in those days, Chiarli made his own wine to sell at the osteria. Naturally, the wine was made from Lambrusco, the area’s primary grape variety, and it was well-received by customers—so much so that in 1860 Chiarli was emboldened to found Emilia Romagna’s first wine-producing company, the Cantina Cleto Chiarli. By the turn of the 21st century, the business was in the hands of Cleto Chiarli's great-grandsons Mauro and Anselmo Chiarli, and they decided to move to a new production center that would focus on more or an artisanal, quality-driven style. Producer Information This magnificent property overlooks the village and was built on the foundations of the feudal castle by the Marquis de Dampierre, a French peer who had bought the estate in 1773 in order to hunt wolves. The tower and wing were added in the 19th Century. Solidly built of dressed stone and firmly sited at the base of a mound, the Chateau overlooks the village and the valley of the Landion, the source of which is situated under the Chateau cellars and still supplies it with water today. The main door of the Chateau comes from the former feudal castle demolished in 1770 and is in the Louis XIII style with its fine sculptural decorations of grapes and vine branches. Vines have been grown on the slopes of Bligny for many centuries. The Marquis de Dampierre, who owned the Bligny glassworks, lived in the chateau in the heart of the village. He also owned the surrounding hillsides. The vineyards provided for his personal wine consumption, and the wine was mostly still. In 1871, the Marquis de Dampierre lost his son, killed at the front. Contrary to certain draft schemes, the railway did not come through Bligny: it was routed instead through Bar-sur-Aube. The glassworks was therefore moved to Bar. Phylloxera sounded the death knell of the Bligny vineyards. Its reconstruction began in the early 19th Century when the chateau was passed on to Baron de Cachard. Louis XVIII had made him a noble and given him the title of Baron. Baron de Cachard gave the estate a new lease of life as a wine-producing establishment: he decided to plant a large vineyard, which earned him the nickname of “Gentleman Wine-maker”. Baron de Cachard had been aware of the former excellent reputation of the wines in the region. Producer Information Champagne Ruinart was one of the first Champagne houses, established in 1729. It takes its name from the Benedictine monk Dom Ruinart, whose writings on Champagne were passed down through his family and resulted in the Maison Ruinart we know today. Dom Ruinart was born in Champagne in 1657, and died in 1709. He moved from his home to an abbey just outside of Paris, where he began to learn about the "wine with bubbles", which was very popular among the young aristocrats of the time. He believed it could be made best on the soils of his hometown. Upon his death in 1709, he left many books containing his writings on this to his nephew Nicolas Ruinart and, 20 years later, Maison Ruinart was founded. The Ruinart house was passed through the family for the next two centuries, during which time they were the first to ship rosé Champagne, as well as being the first to ship their bottles in wooden cases. Producer Information Jean Voirin, who owned some vines and sold all his grapes in bulk, decided to begin bottling his own champagne at the end of World War II. The Jumel family started producing champagne around the same time—René Jumel had a transport business and his wife's family had some vines that they cultivated. As the champagne market grew, René began selling some of his trucks and buying vineyards around the Côte des Blancs, which his wife, Paulette Richomme, worked and oversaw. Between 1950 and 1970, all the grapes were sold in bulk. In the early 1970’s, Francoise Jumel (daughter of Paulette and René) began bottling champagne with her husband Gilles Voirin under the name Voirin-Jumel. That year they sold nearly 10,000 bottles. In the 1990s, Francoise's children, Patrick and Alice, along with Patrick's wife Valerie, began running the domaine. Today it is a true family affair, and they own 11 hectares of vines in 11 different villages (broken down to approximately 10% Cramant, 20% Chouilly, 10% Avize, 5% Oiry, 10% Oger, 10% Mareuil-sur-Ay, 10% Vertus, 15% Verneuil and the remaining 10% in 3 other villages). Each lot of grapes is vinified separately and each tank goes through malolactic fermentation. In January, the wines are stabilized. Shortly thereafter, the vins clairs (still wines) are tasted and it is determined which lots will be used for each specific release. All the champagnes are given very low dosages, and are aged for 3-4 years minimum, thus ensuring fresh, lower-acidity champagnes that really highlight their varied terroirs. The portfolio is centered around the zesty, refreshing Cordon Rouge Brut, which is based on the classic Champagne blend, along with a range of other styles including brut rosé, demi-sec, vintage and blanc de blancs. The top wine is the Cuvée R. Lalou, a limited release vintage Champagne made from selected grand cru parcels and named after René Lalou, a former head of the company. Producer Information Domaine Petit & Bajan crafts “grower” Champagne, a récoltant-manipulant house that grows its own grapes and makes its own wine all on site. This qualitative difference is crucial for those seeking the ultimate in Champagne flavor and character. The estate’s vineyards are split between the Côte des Blancs and the Montagne de Reims, with just over two acres of Chardonnay vines in Avize, Cramant and Oger, and five acres of Pinot Noir in Verzenay. All vineyards are rated grand cru and are cared for sustainably. Crucially, the estate aims to harvest only perfectly ripe fruit, resulting in many local growers finishing the harvest before they even start.
