The bottles are slowly turned on the riddling rack until the next is facing down and the yeast settles in the neck of the bottle. The yeasts are then “dégorgéd” after the designated aging period for the wine. Dégorging is done by hand for all bottles, to ensure the highest quality. Nothing has changed at Mestres since they produced their first bottle of Cava, and you can taste the respect for their terroir and authenticity in their wines.

Producer Information Viñedos del Contino is a wine estate in Rioja Alavesa known for its ageworthy red wines based on Tempranillo, and often featuring Graciano. It was founded in 1973 as a partnership between the owners of Finca San Rafael in Alavesa, and a group of directors from CVNE. Since the end of 2013 the CVNE group has owned 95 percent of the company. Along with Remelluri, Contino is regarded as a pioneer of single-vineyard wines and the château concept in the region. This is in contrast to the traditional system of wineries being supplied by network of small growers. There are 62 hectares (153 acres) under vine in Laguardia, on alluvial pebble soils within a bend in the Ebro river, protected by the Cerro de la Mesa (Table Hill). Individual plots are cultivated seprately; fruit is all harvested by hand. The estate combines a modern winery with a 16th-Century cellar for aging wines in optimum temperatures and humidity levels. López de Heredia Viña Tondonia is a Rioja producer that is widely regarded as one of the world's greatest wine estates. It was founded in 1877, and is well known for its traditional winemaking approach. It is particularly associated with its Tempranillo-based wines from the Tondonia vineyard, to the extent that this now forms part of the company name. The Tondonia vineyard extends for over 100 hectares (250 acres) in a picturesque site next to the Ebro river. The soil is made up of alluvial clay with a high limestone content, which has proved an excellent terroir for the Tempranillo and Garnacha vines that are planted there. Tondonia provides the grapes for López de Heredia's top wines, both red and white. The flagship wine from the company is the dry, vanilla-laden López de Heredia Gran Reserva. Producer Information Dominio del Águila is a wine estate and microbrewery based in the village of La Aguilera, in the Ribera del Duero wine region of northern central Spain. The winery was established by Jorge Monzón and Isabel Rodero. The pair make a range of wines, predominantly from the local staple Tinta del País (Tempranillo). Following enology studies in Bordeaux and Burgundy, along with stints at Domaine de la Romanée-Conti and Vega-Sicilia, Monzon spent nine years winemaking at fellow Ribera del Duero mainstay Bodega Arzuaga-Navarro. Then, in 2010, Monzon and partner Rodero established Dominio del Águila in the small village of La Aguilera. The pair make a small range of wines from 30 hectares (74 acres) of old vines around the village.
