Distillery Information Bernard and Rosemary Walsh created the Hot Irishman Limited in 1999, with the desire to blend and bottle the perfect Irish Coffee recipe. Expanding upon its success, in 2005 the couple attempted to rival the big Irish cream liqueur brands by creating a recipe that brought things back to basics, with The Irishman Irish Cream liqueur, made using 100% Irish dairy cream and premium Irish whiskey. However, it wasn’t until 2006 that the Walsh’s began to venture head-on into the world of whisky, when they signed a long-term supply agreement with Irish Distillers – the Whiskey Supply Agreement - allowing for the distilling and laying down of Irish whiskey stock to its specifications. This facilitated the 2007 launch of The Irishman Whiskey, the first singular whiskey released by Walsh, which was followed in 2009 by Writers Tears. The whiskey is both rich and oily on the mouthfeel with notes of sticky orange marmalade, treacle, dark muscovado sugar and warming spices. The bottle has been presented in a beautiful wooden case with a modern take on the traditional Dunvilles mirror alongside a book and 20cl sample of the 41 Year Old Port Mourant Demerara Rum. Dunville's VR 18 Year Old Port Mourant Rum Finish Single Malt Irish Whiskey Tasting Notes Nose: The first impression is equilibrium, the balance between spirit, rum and wood notes is exceptional. That subtle layering of sweet molasses over the magnificently clean barley leads into rich, oily, viscous aromas, a richness of red toffee apples, pear drops giving way to baked pear, sweet vanilla crème anglaise, and warm apple strudel. That same warmth that speaks to the cask strength of this whiskey, but with strength rather than burn. There is no suggestion of youth anywhere on the nose, this whiskey speaks well of its age and maturity. Palate: Perfect texture, sweet oak layered with dark treacle molasses, thick dark muscovado sugar with sweet wood vanilla. Stewed fruits, candied orange, verging on marmalade, with hints of cinnamon, cloves, nutmeg and luxurious rum ice cream. Then comes the merest suggestion of smoke from the barrel char, and of old sun dried leather that adds even more richness, depth and complexity to the whiskey. Finish: Finally those rum casks take over, with sticky toffee pudding, well done crème brulee, blue mountain latte, banana bread and rum ice cream carrying through to the finish. This is a whiskey that responds to warmth and develops in the glass. Distillery Information The Echlinville Distillery was founded on the Ards Peninsula in Northern Ireland by Shane Braniff in 2012. The location is known for its temperate climate and saline air. The distillery was founded in 2013, however the estate is around 280 years old. They use a floor malting technique and the distilling is done in both copper and column stills.
