Producer Information The Goutorbe-Bouillot house is a small grower Champagne estate located in the village of Damery just west of Epernay. Family-owned and run since 1911, the 8 hectares of 35 different parcels of vineyards extend over the Vallée de la Marne with a focus on Pinot Meunier, Chardonnay and Pinot Noir grapes. The union between Jules Goutorbe and Louise Bouillot was the origin of the creation of Champagne GOUTORBE-BOUILLOT. Starting in 1775 the families had been involved in the Champagne business and had been selling their wines to the large Champagne houses. Today the estate is owned by the Papleux family, and Bastien, the great grandson of Jules and Louise, makes the wine and manages the business. The vineyards extend over a region called Vallée de la Marne (close to Epernay), where, traditionally, the grape variety Pinot Meunier is dominant. The Goutorbe-Bouillot house is following that tradition, although Chardonnay is becoming more important. Currently more than half of Goutorbe-Bouillot's vineyards are planted to Pinot Meunier. The average age of the vineyard parcels is around 35 years old, though some parcels were planted in 1930 and are almost a century old. With great care for quality and the health of the vines, Goutorbe-Bouillot is now certified as "viticulture durable", which is the highest European standard of sustainable agriculture. Goutorbe-Bouillot Champagnes are produced by a method similar to the Solera system. Each year they use 50% of this reserve wine in the blend. This means that the wine contains some of all the earlier vintages in decreasing proportions. This perpetual reserve was started in 1980 for the Carte d'Or and in 2000 for the other non-vintage cuvees. The aim is to give more maturity and complexity to the wines. In order to keep the natural acidity and aromas from the grapes, the house blocks malolactic fermentation. Thus the wines are fresher in their youth but gain more complexity with aging.

Vinous: The 2019 Gevrey-Chambertin Champs-Chenys offers mostly red berry fruit on the nose, which is maybe just a little smudged compared to Roty’s other Village Crus at the moment. The palate is medium-bodied with a fresh entry and a fine bead of acidity. The precise, chalky-textured finish compensates for the aromatics. I am sure the nose will gain more clarity during the remainder of élevage. Producer Information Domaine Joseph Roty and Domaine Philippe Roty are leading Burgundy domaines, with some of the largest cult followings in the country. The Rotys have been producing wine in Gevrey-Chambertin since 1710, and the range of Pinot Noir and Chardonnay wines from their 12 hectares (30 acres) of vines are considered some of the best made on the Côte d'Or. Domaine Joseph Roty is the core estate. Joseph himself, who died in 2008, was a legendary figure in the region, not only for the quality of the wines, but for his reluctance to speak to journalists and share details of their winemaking methods. His son Philippe, who had some parcels in Marsannay, set up an additional domaine with an address across the road from Joseph Roty. A smaller number of wines is made under the Philippe Roty label. Sadly, Philippe passed away in 2015 aged just 46, and the combined operation is now by run his mother and brother Pierre-Jean, who has long been in charge of the vineyards. It has been reported that at least some of Philippe's personal vines are being incorporated into the Joseph Roty label. Producer Information Domaine de la Vougeraie is an estate created through the amalgamation of several vineyard holdings acquired by the Boisset family in Burgundy's Côte d'Or. It is one of the newer domaines in Burgundy, with the first vintage being 1999. Today, holdings cover nearly 40 hectares (98 acres) in 30 different appellations throughout the region. The winery itself is located in the village of Premeaux which is situated between the Pinot Noir-dominated Côte de Nuits and the Chardonnay-dominant Côte de Beaune. Domaine de la Vougeraie has plots in six grand cru, eight premier cru and 11 village appellations. The grand cru plots are in Charmes-Chambertin, Bonnes Mares, Musigny, Clos de Vougeot, Corton le Clos de Roi and Corton Charlemagne. Domaine de la Vougeraie also has a monopole over the Vougeot premier cru climat Les Clos Blanc de Vougeot. This small site, which sits adjacent to Clos de Vougeot and is surrounded by Pinot Noir vineyards on all sides, makes some of the most sought-after white wines in Burgundy. It is planted with Chardonnay and very small amounts of Pinot Gris and Pinot Blanc, atop soils of white clay and silt. The domaine's Chardonnay grapes go through a soft press before being fermented in mostly neutral French oak barrels. The grand cru Corton-Charlemagne Le Charlemagne is typically aged in around 50 percent new oak, whereas wines at village level usually have a much lower percentage of new oak. The Pinot Noir grapes are fermented with native yeasts and are then aged in French oak, usually for between 12 and 18 months. Once the wines have completed their barrel age they are softly pumped into stainless steel tanks where they are blended and allowed to rest. The wines are then bottled without filtration or fining.

Producer Information Domaine Rapet Père et Fils is a Burgundy wine estate situated in the village of Pernand-Vergelesses. The family-owned domaine can trace its foundations back to 1765, and is today managed by Vincent Rapet. Since taking over the reins in the 1990s, Vincent Rapet has overseen the construction of a new winery in 2003, and has expanded the domaine's vineyard holdings. The domaine now spans 18 hectares (44.5 acres) of land that encompasses three grand cru vineyard sites in Corton, and ten premier cru vineyard plots across the villages of Beaune, Pernand-Vergelesses and Savigny-les-Beaune. Domaine Rapet produces three grand cru wines from plots in Corton, Corton Pougets and Corton-Charlemagne. The Corton-Charlemagne grand cru is the only white wine in this trio and is made from Chardonnay. After fermentation in 30 percent new oak barrels, the wine is aged on its lees and bottled after 12 months.
