They start with a mix of corn, rye and malted barley which is fed into a 10,000-gallon cooker where they add a portion of the old mash from the last distillation. This helps to ensure consistency and transform the mash into “sour mash.” Unlike other whiskeys containing water with iron, Kentucky sits on a natural limestone shelf that acts as a filter, creating iron-free, calcium-rich water. This helps to craft the slightly sweet, golden-brown bourbon we all know and love. Once the mash is cooked, it is transferred to the fermenter and yeast is added to eat the sugars and create alcohol. After the fermentation process, the alcohol is transferred into a 65-foot-tall column still where it is heated to around 200°F. Jim Beam taps their high wine into brand-new, level-4 char, American White Oak barrels. This caramelizes the sugars within the wood to create a richer flavor with fewer tannins. Widow Jane 14 year Old The Vaults 2019 Straight Bourbon Tasting Notes Nose: The base of vanilla and brown sugar, but with a substantial trimming of spearmint and fir tree-style evergreen scent, Palate: The flavor opened with that evergreen and mint spiciness before the sweet vanilla sweet side came up to occupy center stage again. Finish: The finish was really the only thing that held this Whiskey back from an A-. It ran with a light sprinkle of wood spices before fading quickly. Distillery Information Widow Jane Distillery was founded in 2012 and is owned by Cacao Prieto. Founded by the inventor Daniel Prieto Preston, the company produces a number of whiskeys that are both sourced and distilled in-house. With an office in Brooklyn, NY and distillery 105 miles north of NYC in Red Hook, NY, the Whiskey gets its name due to the fact that the company uses water that comes from the Widow Jane Mines in Rosendale, NY.
