Producer Information Founded in 1987 in Chippis in Valais, “Les Bernunes” was at the time a very young estate. Winemaking then took place in the cellar of the family home. It is with great attention and work respectful of the vines that the estate has grown, improving its quality over time. In 1994, the Zufferey family finally built their cellar in Les Bernunes. Expansion work was carried out in 2013 to build, among other things, a wine workshop, a barrel cellar, a reception room and a terrace with a magnificent view of the vineyards. The family farm employs 5 to 6 people, joined by occasional help during pruning and green work. The transmission of knowledge and know-how between generations has begun. Respect for the environment, the product and the land is a common concern. The promotion of the Bernunes terroir is another. The Zufferey family puts product quality at the center of its work and demonstrates this in particular with the creation of a range of wines specific to the Bernunes terroir.

Quality Accepts No Compromise. Therefore our innovative vineyard concept called Diva Viticulture reduces the yields per plant from traditional 2-3 kg down to less than 250 g. This radical and expensive approach leads to a very high and long lasting aroma concentration. For the winemaking we use an ancient wine cellar from the 17th century, “Cave de La Petite Revolution.” It was carefully restored and brought back into the traditional methods of producing wine. This micro cellar, with a maximum capacity of only 6 barriques per vintage, is located in the ancient centre of the romantic village of Roquebrune sur Argens. He had previously been the winemaker at Domaine Billaud-Simon, which had been a shining light in the old school Chablis clubhouse of quality. Since the creation of his own label, Samuel has met with great success and moved into a new winery space in 2015 as well as purchasing four hectares of vines that had previously belonged to Domaine Billaud-Simon. The new winery lies in the heart of Chablis and used to belong to Stéphane Moreau-Naudet. It is set up so that Billaud only needs to pump his wines once, then gravity does the rest. The rest of the facilities consist of brand new stainless steel tanks and underground storage for barrels. The recently purchased hectarage includes land in the grand crus Les Clos, Vaudésir, Montée de Tonnerre, Mont de Milieu, Séchet, and in the village level vineyards Les Pargues and Chapelot, as well as a Petit Chablis parcel directly to the north of Les Clos. The 2015 vintage is the first for which he will have full control of the land for the entire year. He is also newly sourcing fruit from the grand crus Blanchots, Valmur, and Bougros. Due to his deep roots in Chablis, Samuel is able to purchase grapes from some of the finest, most well- established growers. n the cellar, the premier and grand cru wines see about 15% new wood in the form of large 450 and 600 L barrels, which offsets any overt “oakiness.” The rest is fermented in small stainless steel tank. Producer Information Chablis has seen a real renaissance the last few years, with critics such as Neal Martin stating, Chablis “articulates terroir with greater transparency than any other wine region”. He goes on to say “… in talented hands Chablis can satisfy both the senses and the intellect…the finest Chablis wines are uncompromising, challenging and cerebral.” In the same article Neal Martin identifies Samuel Billaud as one of the best in the business, including him amongst a handle of producers that are making Chablis on almost the same level as Raveneau and Dauvissat. The quality of Samuel’s winemaking cannot be overstated and he is being rewarded with seriously positive press. We probed Samuel to find out what are the secrets behind his stunning set of Chablis wines. Although Samuel’s domaine is fairly new, the first vintage being 2009, Samuel is one of the most experienced producers in Chablis having made wine in the region since the 1985 vintage. He produced over 20 vintages working for his family’s historic domaine - Domaine Billaud Simon, initially under the tutorage of his grandfather until his death in 1990. From 1991 he went on to produce the wines at the domaine on his own. Following the death of his grandfather, Samuel started to fall out with his uncle whom he shared the domaine’s ownership with and the two eventually separated. A few years ago, Domaine Billaud Simon was finally sold to the large Burgundian negociant – Faiverley. In the terms of sale Samuel was allowed to pick his favoured plots of vineyards for his own domaine. This enabled him to secure some of the finest vineyards in Chablis – historic sites that have always been under the ownership of the original Chablis families of Billaud Simon, Raveneau, Dauvissat, Droin etc. Having such knowledge of the vineyards and now access to some of the top historic plots these have to be central factors behind the upswing in quality of the wines now being produced at the domaine.
