Palate: Balanced and rich flavors. Finish: Elegant long-lasting aftertaste. Distillery Information The Aurora Spirit distillery, where Bivrost is made, is in Arctic Norway. It sits near the Lyngen Alps and under the Northern Lights. This unique location is perfect for whisky making. They use northern barley, local plants, and water from ancient glaciers. Bivrost spirits show their Arctic roots. Aurora Spirit's distillation process shows innovation and skill. They worked with Kothe coppersmiths to make a special still. This still can be a pot still, for some whiskies, or use parts of the column, for gin. For vodka, it uses all 15 plates and a five-meter tower for high-quality spirit. The water used is over 5,000 years old. It comes from the Lyngen Alps as glacial meltwater. This water is ideal for making and fermenting malt. It is low in calcium ions, so it needs no treatment before diluting the spirits. The distillery stores casks in NATO bunkers, close to the Arctic Sea. These bunkers were coastal forts in the Second World War. They have the right temperature and humidity for whisky to mature slowly. Here, the whisky concentrates the flavour. Because of the cold, the distillery uses smaller casks for faster ageing. They use various casks, including some from around the world. The Arctic, home to Aurora Spirit, is the Earth's northernmost area. It has seasonal ice and snow and is a unique ecosystem. The distillery draws its water from Loch Nam Ban, whose waters travel through limestone and peat before reaching their beneficiary, Caol Ila. The whisky distillery was sold to Norman Buchanan in 1852 and then, following monetary hardship, to the Glasgow-based blenders Bulloch, Lade and Co who renovated the buildings in 1879. Following liquidation, Distillers Company Ltd acquired Caol Ila and the distillery was subsequently transferred to Scottish Malt Distillers. Originally part of the group IDV, comprising of W A Gilbey and Justerini & Brooks, in February of 1972 the group was purchased by Watney Mann and, in July, merged with Grand Metropolitan. After the merger between Guinness and Grand Metropolitan in 1997, Auchroisk is currently under the ownership of Diageo. Distillery Information The distillery was built in 1891 in Banffshire at the very heart of Speyside, between Rothes and Dufftown. Here are green pastures and heather-field and the distillery is in close proximity to the blissful confluence of rivers Spey and Fiddich. From the whisky distillery, perched high on the rock of Craigellachie, one can gaze over the village and namesake, and the quaint John Telford-designed bridge which crosses the river Spey. The water is drawn from a spring on Conval Hill and feeds the 3.6 million litre annual capacity of Craigellachie distillery. Co-founded by Alexander Edward, of Aultmore fame, and Peter Mackie, of the blending company White Horse, the buildings were designed by the reputable Speyside architect, Charles Doig. Lodgings were provided for the workforce in the form of terraced cottages. Each had their own small garden and every year White Horse would award the tenant with the best-kept garden. The casks and subsequent maturations are based off-site and the new make spirit is transported from Craigellachie to Dewar's Glasgow warehousing facilities. Dewar's have owned the distillery since Bacardi Martini acquired the company from Diageo in 1998. There have been independent bottlings as well as the sole official house bottling, the 2004-released fourteen year-old Craigellachie single malt.
