It was not the only time Tobermory had been used for purposes other than whisky distillation; in 1982 the buildings were leased to a dairy company who used them for storing cheese. Distillery Information The Kilchoman whisky distillery was founded in 2005 at the Rochside Farm, not far from Machir Bay at Islay’s West Coast. Kilchoman is Scotland’s most Westerly whisky distillery and draws its water from a spring on Cnoc Dubh, just above Rochside Farm. The Kilchoman distillery is the brainchild of Anthony Wills, a former wine industry professional who wished to found a small-scale, traditional distillery. Subsequently Mark and Rohaise French, of the Rochside Farm, were keen on using local produce (and had their own food label, Islay Fine Food), so the idea of establishing an artisan, traditional distillery fitted in perfectly with their ethos. The farm is entirely self-contained, Barley is grown and malted at the distillery, maturations will take place onsite, as will bottling. The resultant single malt Scotch whisky will not undergo chill-filtration nor will spirit caramel be added, the standard strength will be at 50% abv, reduced with Islay water. Distillation commenced in November of 2005 and 80% of the spirit is matured in ex-bourbon casks, from Buffalo Trace distillery in Kentucky, the remaining spirit will be matured in Oloroso sherry butts. There is a visitor centre on the site and a Kilchoman new make spirit has already been released, exhibiting a distinct nuttiness and a sumptuous peat even at this early stage. The two stills at the Kilchoman whisky distillery proffer a total capacity of just 90,000 litres per annum, in terms of scale the Kilchoman distillery is of roughly equal capacity to the Edradour distillery.

The name derives from the Gaelic 'Am Baile Meadhnach' meaning 'the middle farm'. The distillery was sold in 1922 and subsequently became part of Distillers Company Limited in 1925 before it was acquired, in 1930, by Scottish Malt Distillers (SMD). Following liquidation, Distillers Company Ltd acquired Caol Ila and the distillery was subsequently transferred to Scottish Malt Distillers. The capacity is moderate at 3.65 million litres annually, the majority of which is used in Johnnie Walker blends. Just 5% is kept for maturation as single malt. From 1999, unpeated single malts have been experimented with and in 2006 the first unpeated bottling was released in the form of an eight year-old. The name derives from the Old Norse ‘Bru’r aa’ meaning ‘the bridges river’. Brora was purchased in 1930 by Scottish Malt Distillers, who later became a subsidiary of Diageo. In 1835, a new distillery was built, sited on the side of its namesake, the 840m peak which looms over Speyside. Alongside four other distilleries, Benrinnes draws its water from springs on the mountain, tapping the Rowantree and Scurran Burns. Following a devastating fire at the end of the nineteenth century, BenRinnes was rebuilt, converting to electric power. The distillery has an unusual distillation method; the six stills are used to partially triple-distil the make. Benrinnes made use of a Saladin Box maltings system from 1964. In 1984, it was decommissioned and malt was bought in instead. Despite the long history of Benrinnes, there has only been one official bottling - in 1991 a fifteen year-old was released. Save for a few independent bottlings, the majority of the spirit has been used in blends, notably Johnnie Walker and J&B. Today, single malt whiskies from Benrinnes remain a rare treat. Benriach, named for the Gaelic for ‘speckled mountain’, saw an upturn in fortunes in the 1960s, however, and from 1965 onwards was run by new owners The Glenlivet Distillers. Seagrams purchased the distillery in 1978, then in 1985 two extra stills were added bringing the total to four. When Pernod Ricard took over Seagram’s whisky division in 2001 Benriach was mothballed, but in April of 2004, Benriach was sold, along with several thousand casks, for £5.4million to the South African company, Infra Trading, combining their efforts with Burn Stewart director Billy Walker. They reopened the distillery the following year and soon established the Benriach Distilling Co. In 2008, the Benriach Distilling Co acquired a second distillery from Chivas Brothers in the shape of GlenDronach, before adding Glenglassaugh Distillery to its portfolio in 2013. Brown-Forman, the Louisville, Kentucky-based producer of Jack Daniel's, in-turn bought the Benriach Distilling Co in 2016 for £281 million. Today, Benriach is back in full production and has become a firm favourite for many Scotch whisky fans since it was reinvigorated under Walker and co. Accordingly, the current owners Diageo use the space to store maturing spirit from other distilleries in addition to that of Mannochmore. The site also hosts a dark grains plant, processing draff and pot ale. Equally sizeable, the facility processes 1000 tonnes of dark grains for animal feed every week. The whisky distillery was built in 1971 by Scottish Malt Distillers, later to become a part of Diageo. It was managed by John Haig and Co. It was only comparatively recently - in 1992 - that single malt Scotch whisky was released from Mannochmore; for many years it had been a blending component and was a constituent of Haig blends.

Size: 700ML Proof: 100 (50%ABV) Origin: Scotland Distillery: Kilchoman The 2025 release of the 100% Islay Sherry Cask Matured single malt from Kilchoman was distilled from the 2011, 2012, and 2013 barley harvests. The variety was Publican, and the whisky was aged for a minimum of 11 years in 16 oloroso sherry butts. During maturation, layers of dried fruits and rich spices have infused into the whisky, which balance beautifully with the natural citrus sweetness and peat smoke of Kilchoman. Kilchoman 100% Islay 11 Year Old Sherry Cask Matured (2025 Release) Single Malt Scotch Whisky 700ML Tasting Notes Nose: Orange peel, dried fruits, light peat smoke and sweet spices. Palate: Rich smoke, and dark chocolate with honey, cooked apples, and malty sweetness. Finish: Grilled fruits, plums, currants and lasting wood smoke. Distillery Information The Kilchoman whisky distillery was founded in 2005 at the Rochside Farm, not far from Machir Bay at Islay’s West Coast. Kilchoman is Scotland’s most Westerly whisky distillery and draws its water from a spring on Cnoc Dubh, just above Rochside Farm. The Kilchoman distillery is the brainchild of Anthony Wills, a former wine industry professional who wished to found a small-scale, traditional distillery. Subsequently Mark and Rohaise French, of the Rochside Farm, were keen on using local produce (and had their own food label, Islay Fine Food), so the idea of establishing an artisan, traditional distillery fitted in perfectly with their ethos. The farm is entirely self-contained, Barley is grown and malted at the distillery, maturations will take place onsite, as will bottling. The resultant single malt Scotch whisky will not undergo chill-filtration nor will spirit caramel be added, the standard strength will be at 50% abv, reduced with Islay water. Distillation commenced in November of 2005 and 80% of the spirit is matured in ex-bourbon casks, from Buffalo Trace distillery in Kentucky, the remaining spirit will be matured in Oloroso sherry butts. There is a visitor centre on the site and a Kilchoman new make spirit has already been released, exhibiting a distinct nuttiness and a sumptuous peat even at this early stage.

The whisky was bottled at a bold 57.1% ABV for Signatory's 100 Proof Editions in 2025, without added colour or chill filtration. Distillery Information In 1958, Tormore whisky distillery was built by Schenley International, they had intentioned it to supply whisky for their Long John blends. The rather elegant distillery sits in the Cromdale Hills of Speyside, surrounded by pine forest and overlooking the River Spey. The buildings were designed by Sir Albert Richardson, of Royal Academy fame, and are so picturesque they are already B-listed and, furthermore, have been reproduced in scale model form for an exhibition at the Scotch Whisky Heritage Centre in Edinburgh. Production commenced in 1960 and, following a healthy start, the stills capacity was doubled to number eight. Today, Tormore has a capacity of 3.7 million litres annually, all of which is filled at Chivas Bros warehouses. Some of the spirit is returned for maturation at the distillery. Allied Domecq acquired Tormore in 1989 and five years later the first official house bottling was released, Tormore twelve year-old. Independent bottlings are rather rare, and the official range is quite small, one can, however, find Tormore in the Ballantine’s blend. Presently under Pernod Ricard ownership following Chivas’ 2005 acquisition of Allied Domecq.

Distillery Information The distillery was built in 1891 in Banffshire at the very heart of Speyside, between Rothes and Dufftown. Here are green pastures and heather-field and the distillery is in close proximity to the blissful confluence of rivers Spey and Fiddich. From the whisky distillery, perched high on the rock of Craigellachie, one can gaze over the village and namesake, and the quaint John Telford-designed bridge which crosses the river Spey. The water is drawn from a spring on Conval Hill and feeds the 3.6 million litre annual capacity of Craigellachie distillery. Co-founded by Alexander Edward, of Aultmore fame, and Peter Mackie, of the blending company White Horse, the buildings were designed by the reputable Speyside architect, Charles Doig.
