Dave continued to work at a couple of other bars in town, before joining Jason at Preservation & co. a couple of years later to manage production and operations. At that point, we had a combined 33 years working in the hospitality industry and were not sure if we were ever going back. However, while running Preservation & co, we realized that selling the mix was just a part of the drink, and we wanted to complete the cocktail. After a little bit of liquid courage, we decided to start a distillery and attempt to be the first to successfully do so in Sacramento. It took nearly 2 years, but we were finally able to get it done! We opened the distillery and restaurant in the same facility that we have been in for the last 10 years.
