Small stills and direct fire are meant to combine to make a heavy style. Here, however, having an early cut point preserves that delicacy. The number of stills is another clue. More spirit could have been made with a smaller number of stills by widening the cut, but that would have meant that character would have been lost. The only solution was to add more stills.

The fires which once raged under the stills added a heavy, mid-palate weight, as did the downward-facing lyne arms. When the fires came out, the distillery team spent seven months creating new steam coils with kinks in them to replicate the ‘hot spots’ in the stills which had contributed this flavour.

Distillery Information In 1958, Tormore whisky distillery was built by Schenley International, they had intentioned it to supply whisky for their Long John blends. The rather elegant distillery sits in the Cromdale Hills of Speyside, surrounded by pine forest and overlooking the River Spey. The buildings were designed by Sir Albert Richardson, of Royal Academy fame, and are so picturesque they are already B-listed and, furthermore, have been reproduced in scale model form for an exhibition at the Scotch Whisky Heritage Centre in Edinburgh. Production commenced in 1960 and, following a healthy start, the stills capacity was doubled to number eight. Today, Tormore has a capacity of 3.7 million litres annually, all of which is filled at Chivas Bros warehouses. Some of the spirit is returned for maturation at the distillery. Allied Domecq acquired Tormore in 1989 and five years later the first official house bottling was released, Tormore twelve year-old. Independent bottlings are rather rare, and the official range is quite small, one can, however, find Tormore in the Ballantine’s blend. Presently under Pernod Ricard ownership following Chivas’ 2005 acquisition of Allied Domecq.

Palate: Balanced and rich flavors. Finish: Elegant long-lasting aftertaste. Distillery Information The Glen Garioch distillery may well be Scotland's first licensed distillery. Varying dates are given as to the founding of the distillery, but all are predated by an article in the Aberdeen Journal on the 1st December 1785, which announced the first distillation of spirit at the site. Glen Garioch (pronounced ‘Glen Geery’) lies at the village of Old Meldrum in Aberdeenshire. The distillery buildings sit huddled on a little outcrop flecked with heather gorse and grasses and surrounded by barley pastures - it is said that some of the best barley in Scotland is to be found there. Having changed hands many times over the course of the 19th and early 20th centuries, Glen Garioch distillery was shut down in 1968. Stanley P Morrison acquired the distillery two years later. In 1973, following extensive renovations, production resumed. The whisky produced was much more reminiscent of traditional Highland single malts, this was due in part to the floor maltings at the distillery and the malt maker’s schooling on Islay, where he learnt the joys of peated whiskies. At a time when the Islay malt whiskies were very fashionable, Glen Garioch’s new, robust character did much for the fortunes of the distillery. The floor maltings were decommissioned in 1979, though recently there has been much talk of using them once more. Today, the distillery is under the Japanese Suntory ownership, after they acquired Morrison Bowmore in 1994. Glen Garioch currently runs at three quarters of capacity, producing around 700,000 litres per annum and selling roughly one third of this yearly, much being exported for the Asian market. There are several house bottlings, as well as a few exotic finishes and a handful of independent expressions.

Distillery Information Holding the impressive distinction of being Glasgow’s only grain distillery, Strathclyde was initially built by London distiller Seager Evans in 1927 on the site of an old cotton mill. Established predominately to supply neutral grain spirit for gin, it wasn’t until 1936 that Seager Evans entered the whisky-making market, when he purchased the Long John brand. Strathclyde hasn’t always solely made grain-based whiskies, however. In 1956 a set of stills were installed within the distillery to produce a single malt Scotch whisky named Kinclaith. This was the doing of Schenley Industries of New York, who acquired the company in the same year and invested heavily in the site. The days of malted whisky at Strathclyde came to an end in 1975 however, when Whitbread purchased the distillery and removed Kinclaith, as well as the blending and warehousing site next door, to make more room for grain whisky production. Today, Strathclyde predominately makes grain whisky for use in blends for brands such as Ballantine’s and finds itself a part of Chivas Brothers’ impressive roster. While there are no Strathclyde or Kinclaith official bottlings, the result of a fresh water supply from Loch Katrine and a distillation process in a 2 column system does produce a single grain whisky of such quality that independent bottlers such as Berry Bros. & Rudd and Douglas Laing have attained a number of casks for numerous ranges, the likes of which you can see below.
