This whisky was distilled back in 1996, and given 25 years of maturation, before being bottled in 2021 at cask strength. Only 307 bottles were produced. Well-aged whisky, drawn from a delicious dessert wine cask – sounds fabulous to us! Glencadam 25 Year Old 1996 (cask 9746) - Sauternes Barrel 700ML Tasting Notes Nose: First a few floral aromas, then the orange peel gains the upper hand, limes are added and then pineapple. Palate: On the palate first again the pineapple with lime and other fruit notes. Very creamy. Finish: Very long, balanced and still the fruity notes. Sensational for such an old barrel. Distillery Information In 1825, George Cooper founded the Glencadam whisky distillery. The distillery changed hands several times during the 19th century, but only twice in the 20th century. In July of 1954, Andrew Stevenson and Harry Southwell sold Glencadam to Hiram Walker for the sum of £83,400. Five years later Hiram Walker renovated the buildings and in 1987 Allied Lyons, who later became Allied Domecq, purchased the distillery from them, who by then had also changed to Hiram Walker Gooderham & Worts. Allied mothballed the Glencadam distillery at the turn of the millennium and then sold it in 2003 to Angus Dundee. Despite being closed for three years, the distillery had been left in such superb condition by Allied, Angus Dundee were able to reopen it just two months after the acquisition. Glencadam was the second distillery Angus Dundee had purchased, Tomintoul being the first. Glencadam lies a half mile from the River Esk and quenches its thirst from Loch Lee, at the River Esk's headwaters, from where the water is piped the thirty miles to the distillery. The water is very soft and produces a 'creamy' single malt; prior to closure by Allied, the distillery had supplied whisky for Stewart’s Cream of the Barley blend. The Glencadam distillery runs at capacity, its two stills producing some 1.4 million litres annually and boasting eleven warehouses, there is plenty of room for the spirit to be matured on-site in ex-bourbon casks.

In 1920, Macdonald and Muir acquired the distillery and once more spirit flowed from the stills. The distillery operated its own floor maltings, converting to a Saladin Box in 1957, which remained in use until 1978. During the 1970s, the two original stills were replaced and two further stills were added, giving the distillery a total yearly capacity of two million litres. In 1996 Macdonald and Muir Ltd renamed itself Glenmorangie Plc and in 2004 the group was acquired by Louis Vuitton Moët Hennessy, for the princely sum of £300 million. The Glenmorangie distillery pioneered exotic wood finishes and Glen Moray championed white wine finishes, releasing a Chardonnay finish and two Chenin Blanc finishes in 1999. Most of the whisky from Glen Moray has long since been used in blended Scotch. More recently, the Glenmorangie Co decided to cease producing whisky for blending and subsequently, in 2008, the distillery was put up for sale. There are several official house bottlings, but independent bottlings are rather rare.

The heart of the range, a ten-year old, exhibits an unconventional charm, uncharacteristic of a highland single malt. Edradour was acquired in 1982 by drinks giant Pernod Ricard. Following the acquisition, three quarters of the distillery's yield was initially used in the production of blended whiskies, notably including ‘House of Lords’ and the auspiciously named ‘King’s Ransom’. It was not until Signatory acquired the distillery in 2002, that Edradour concentrated its efforts, almost solely, on producing single malts. Renowned for experimenting with various outlandish wood finishes, Edradour has released various malts matured in some rather interesting casks, a ‘Chardonnay Finish’, a ‘Côte de Provence’ and a curious ‘Tokaji Wood Finish’ being among the number. Today, Tormore has a capacity of 3.7 million litres annually, all of which is filled at Chivas Bros warehouses. Some of the spirit is returned for maturation at the distillery. Allied Domecq acquired Tormore in 1989 and five years later the first official house bottling was released, Tormore twelve year-old. Independent bottlings are rather rare, and the official range is quite small, one can, however, find Tormore in the Ballantine’s blend.
