Palate: Rich dried fruits with dark chocolate covered figs and sugar dusted roast nuts. Finish: Long finish with combination of dry tannins and spice, coupled with remaining dried fruit character. Distillery Information Teeling Distillery was officially opened in 2015. The brand’s history in actually stretches back to 1782, when a chap called Walter Teeling set up a distillery in the Liberties area of Dublin. Fast-forward to the present (not forgetting the era when John Teeling owned the Cooley Distillery, before selling it to Beam in 2011) and the Teelings are again at the forefront of Irish distilling. Teeling identifies as a ‘progressive’ distillery. The team, led by Jack Teeling, his brother Stephen, and master distiller Alex Chasko, are leading the Irish whiskey innovation charge. From the ‘re-imagined’ Dublin porter recipes and proprietary fermentation techniques used to create the Teeling wash to the three different stills in operation, the team pushes what’s possible in Irish whiskey-making to create delicious drinks. Teeling's pioneering attitude is underscored by the fact that a whopping 25% of annual production is dedicated to whiskey experiments. Exciting stuff. What does this mean for Teeling whiskey? While the new distillery’s spirit comes of age, Teeling is releasing liquid that showcases the style and character we can expect from years to come. From the flagship (and tasty) Single Malt to expressions like the Brabazon series which celebrate the history of whiskey distilling in Dublin, the Teeling range is well worth exploring.

Longmorn 12 Year Old 2012 Cask #915 - Cask Strength Collection (Signatory) Single Malt Scotch Whisky 700ML Tasting Notes Nose: Delicate and impressive depth on the nose. Palate: Balanced and rich flavors. Finish: Elegant long-lasting aftertaste. Distillery Information A missionary named Maernanaog, or Mo-ernin-og, had brought Christianity to the Picts of Moray during the 7th Century. A church was built just outside of Elgin, following his death in 625AD and named Lann Marnoch, the Church of St Marnoch. Over the course of time, the name 'Lann Marnoch' gradually became Anglicised and eventually the area was known as Longmorn. Construction began on a distillery on the site in 1893 under John Duff and Company, founders of Glenlossie in 1876. In 1894, the build was completed and the total costs amounted to £20,000. Production began in December. John Duff bought out the other members of the group and officially founded the Longmorn Distillery in 1897. A year later he built Longmorn Number 2 next door, changing its name latterly to BenRiach. John Duff went bankrupt in 1909; the Pattison Crisis had left him reeling and he had already failed in his attempts to build distilleries in America and South Africa. The shares were acquired from the bank by James R Grant.

Distillery Information One of a few distilleries built to produce blending whisky, GlenAllachie (pronounced ‘Glen-al-ACK-ee’) was founded by Mackinlay, McPherson and Co to provide malt whisky for Mackinlay blends. The distillery stands in the heart of Speyside, at the foot of Ben Rinnes and in relatively close proximity to Aberlour. Both whisky distilleries draw their water from springs in the mountains. All of the three million litre annual production is intended for blending and it is rare to find single malt whisky from the GlenAllachie distillery. All of the spirit is matured onsite in ex-bourbon casks; the distillery boasts fourteen onsite warehouses. The building was planned as early as 1940, by the famed architect William Delmé-Evans, designer of Isle of Jura, though GlenAllachie was not founded until 1967.

Distillery Information Caol Ila was founded to the North of Islay in 1846 by the pleasingly-named Hector Henderson. It is located near Port Askaig and sits in lush, floral surroundings, overlooking the cove and the Paps of southern Jura. The distillery draws its water from Loch Nam Ban, whose waters travel through limestone and peat before reaching their beneficiary, Caol Ila. The whisky distillery was sold to Norman Buchanan in 1852 and then, following monetary hardship, to the Glasgow-based blenders Bulloch, Lade and Co who renovated the buildings in 1879. Following liquidation, Distillers Company Ltd acquired Caol Ila and the distillery was subsequently transferred to Scottish Malt Distillers. The capacity is moderate at 3.65 million litres annually, the majority of which is used in Johnnie Walker blends. Just 5% is kept for maturation as single malt. From 1999, unpeated single malts have been experimented with and in 2006 the first unpeated bottling was released in the form of an eight year-old. Caol Ila, whose name derives from the Gaelic for ‘Sound of Islay’, has been included in the Diageo Classic Malts range, exhibiting twelve and eighteen year-old expressions as well as a Moscatel-finished Distillers Edition. Independent bottlings can also be found.

The distillery has a capacity of 2.24 million litres per annum and the majority of the whisky produced is used for blending, notably in Johnnie Walker. In 2008, three twenty-six year-olds were launched, notable for their 50cl bottles and having spent the last fourteen years of their maturation in either rum, red wine or port casks. There have been quite a number of independent bottlings in recent times, joining a few special editions and the Flora and Fauna twelve year-old. The Linkwood distillery was founded in 1821 by Peter Brown and rebuilt fifty-one years later following William Brown’s inheritance of the distillery in 1868. Distillery Information The Glenlivet rather grandly styles itself as “the single malt that started it all” but there’s more than a grain of truth to its claim. In the early 18th and 19th century most Highland malt whisky was distilled illegally. Despite its shady beginnings, Glenlivet had a reputation that reached as far as London. Indeed when George IV visited the region in 1822, he wanted to try the fabled Glenlivet and was given something that was described as “whisky long in wood, long in uncorked bottles, mild as milk, and the true contraband gout in it.”

Finish: Elegant long-lasting aftertaste. Distillery Information Built in 1811 at the highest point in the city of Glasgow, at its peak Port Dundas was the largest distillery in Scotland, termed the blending powerhouse of Scotland. The distillery was one of the founding members of the grain distillers’ conglomerate DCL. In 1860, it merged with a neighbouring distillery, Cowlairs and another neighbouring distillery, Dundashill, was also absorbed by the site in 1902. It managed to survive two fires at the start of the 20th century, though it was closed for the duration of World War II. Port Dundas produced grain whisky used in the Johnnie Walker, J&B, Bell's, Black & White, Vat 69, Haig and White Horse blended whisky brands owned by Diageo - maybe you’ve heard of one or two of them? The site would produce a smashing 39 million litres of spirit each year before it was closed for good. Unfortunately, after over a century of distilling, in 2010 Diageo decided to focus their efforts on grain production elsewhere, and in 2011 the site was demolished.

Distillery Information The distillery was built in 1895 by Benrinnes-owner Alexander Edward, who sited it just north of Keith in the heart of Speyside. Just two years later, the company was under the management of Oban & Aultmore Glenlivet Distilleries Ltd and production was greatly increased with the addition of a steam engine to power the facilities - in fact the distillery would employ the ten horsepower steam engine twenty-four hours a day for the next seventy years. Following the Pattison Crisis, Aultmore (pronounced ‘Ollt-MORE’) closed for several years. The distillery briefly reopened in 1903, but was forced into closure once more owing to the barley shortage during the First World War. In 1923, the distillery was acquired by John Dewar & Sons for £20,000 and, two years later, became part of Distillers Company Limited, today a subsidiary of Diageo.

Finish: Leather, nutmeg, bitter cocoa, and sweet pipe tobacco. Indeed when George IV visited the region in 1822, he wanted to try the fabled Glenlivet and was given something that was described as “whisky long in wood, long in uncorked bottles, mild as milk, and the true contraband gout in it.” The man behind that famed dram was George Smith, a tenant farmer on land belonging to Alexander Gordon, Duke of Gordon. The Duke, not surprisingly, was a great advocate for reforming the draconian legislation around distilling so that he could commercialise it. 1823 saw the passing of the Excise Act which liberalised distilling but also provided more resources and power to excise officers. One of the first people to take advantage of the new laws was George Smith who built a new distillery at Glenlivet in the Highlands on what was once a farm distillery called Upper Drummin.
