Many years later, in 1941, the company built a factory in Hanyu and received their licence to produce alcohol in 1946, under the eyes of Isouji Akuto. It was here that they started to produce whisky in the 1980s, and in the 1990s they released a single malt whisky. Sadly, production stopped in 2000 (coincidentally close to the time when Karuizawa, another renowned Japanese distillery stopped production too), and was finally closed in 2004. However, the story of Hanyu doesn’t stop there. While much of the distillery was dismantled, Ichiro Akuto (Isouji’s grandson) managed to purchase the remaining stocks of Hanyu whisky and currently sells these through his own brand, Ichiro.

Lying in a hollow to the south of Forres and taking its water from the Altyre Burn, the distillery was built on the estate of Alexander Edward of Sanquhar. Renamed Dallas Dhu (pronounced ‘DAL-assDOO’), deriving from the Gaelic ‘dail eas dubh’ or ‘dark water valley’. In 1899, the spirit was used in Wright and Grieg’s blend ‘Roderick Dhu’. The blend had good overseas sales, particularly throughout Australasia and India. The distillery has changed hands several times, following rise and falls in demand. Dallas Dhu was purchased by JP O’Brian in 1919 and then in 1921 by Benmore Distillers Ltd. In 1929, Distillers Company Ltd acquired the distillery and it passed on a year later to Scottish Malt Distillers, now part of Diageo. Following the whisky recession of the 1980s, Dallas Dhu was closed, alongside the first wave of distillery closures, in 1983 and its licence was revoked in 1992. It was reopened in 1988, though not as a distillery; the site now holds a visitor centre and a whisky production museum.

The single malt matured in a first-fill oloroso sherry hogshead, yielding a total of 330 bottles, without added colour or chill filtration. Glenrothes 18 Year Old Cask #7479 Dram Mor Single Malt Scotch Whisky 700ML Tasting Notes Nose: "That Spanish sun dried fruits are there in abundance smothering the warm Spanish oak it has been wedded to for all these years." Palate: "Oh boy! The most luxurious and sumptuous of Sherry bombs. This is so moreish you will need to hide the bottle. Sweet stewed dried fruit and nut, chocolate and ginger and cinnamon dance across the tastebuds. A touch of old leather and alcohol soaked prunes." Finish: "This is going to stay with you for an age! Delightful, playful and warming its way to the tip of your toes." Distillery Information "Mashing is speedy, while fermentation in a mix of steel and wood is on the shorter side. A ratio of two wood to one steel balances any differences in character, while the length of the fermentation introduces a cereal note beneath the fruit. Distillation, however, is long in very tall stills with boil bulbs which help to maximise reflux and allow the full range of Glenrothes’ complexities to be teased out."

Distillery Information The Glenrothes story begins in 1878 when a distillery was founded by James Stuart and Co in the town of Rothes on the banks of the river Spey. Production commenced in 1879. The group also owned the nearby Macallan distillery. James Stuart, a principle of the group, left to focus his efforts on Macallan and three remaining members of the syndicate; William Grant, Robert Dick and John Cruickshank, formed William Grant and Co. In 1887, William Grant and Co. merged with Islay Distillery Co to form Highland Distillers Company (a forerunner of the present day Edrington Group). This included the Glenrothes distillery, as well as Bunnahabhain on Islay. The capacity was increased with the addition of further stills in 1898. 1922 disaster struck when the No 1 bonded warehouse caught fire and hundreds of casks of whisky exploded. Over 2500 barrels of whisky were lost. It is said that the locals had a field day scooping up all the whisky that had poured into a nearby burn.
