What we have here is a tremendous seven-year-old Canadian corn whisky that's been finished exclusively in sherry casks. The clue is indeed in the name here, and you can expect plenty of sweet nuttiness coming through for sure. Distillery Information Ben Nevis sits just at the base of its namesake, Scotland’s highest mountain. A coastal distillery in the Western Highlands, Ben Nevis draws its water from the Allt a’Mhuilinn which originates from two pools, Coire Leis and Coire na’Ciste, which are both sited a good way up the mountain. The distillery was founded in 1825, by the gloriously named ‘Long John’ MacDonald, for whom the renowned Long John blended Scotch was named. After Long John’s death in 1856, ownership was passed down to Donald McDonald, his son. A second distillery was sited nearby in 1878 and named Nevis Distillery. In a bid to keep up with growing demand, both distilleries eventually became one in the early twentieth century. The distillery joined the ranks of those experimenting with continuous distillation, installing a Coffey still in 1955 which remained on the site for twenty-six years. The famed Japanese company Nikka acquired the distillery in 1989 and subsequently the quality was markedly improved. The heart of the range has been, for some time, the ten year-old. He produced his spirit in a similar manner to that used to create French eaux-de-vie. Bally distilled fresh sugar cane juice to produce a distinct selection of rums. In 1917, Jacques Bally began ageing his rums in oak casks. This imparted both colour and flavour. In 1924, the rum was first packaged in the characteristic rectangular bottles. Distillery Information Caol Ila was founded to the North of Islay in 1846 by the pleasingly-named Hector Henderson. It is located near Port Askaig and sits in lush, floral surroundings, overlooking the cove and the Paps of southern Jura. The distillery draws its water from Loch Nam Ban, whose waters travel through limestone and peat before reaching their beneficiary, Caol Ila. The whisky distillery was sold to Norman Buchanan in 1852 and then, following monetary hardship, to the Glasgow-based blenders Bulloch, Lade and Co who renovated the buildings in 1879. Following liquidation, Distillers Company Ltd acquired Caol Ila and the distillery was subsequently transferred to Scottish Malt Distillers. The capacity is moderate at 3.65 million litres annually, the majority of which is used in Johnnie Walker blends. Just 5% is kept for maturation as single malt. From 1999, unpeated single malts have been experimented with and in 2006 the first unpeated bottling was released in the form of an eight year-old. Caol Ila, whose name derives from the Gaelic for ‘Sound of Islay’, has been included in the Diageo Classic Malts range, exhibiting twelve and eighteen year-old expressions as well as a Moscatel-finished Distillers Edition. The location was chosen for its proximity to a rail line and main road. Indeed, the Glentauchers distillery boasts its own railway siding.The distillery was designed by a Keith-based architect, John Alcock, and the construction was directed by the famed Charles Doig, an Elgin-based architect who was instrumental in the design of many Scotch distilleries. James Buchanan merged with Dewars in 1915 and during the 1920s the distillery went through considerable renovations. This included the rebuilding of the mash house and floor maltings. The newly formed Buchanan-Dewars merged with Distillers Company Limited in 1925 and five years later the distillery was transferred to Scottish Malt Distillers. During the 1960s, further stills were installed, bringing the total capacity to 3.4 million litres per annum.

Lying in blissful serenity in the Highlands, not far South of the town of Nairn, Brackla's life blood is the pure waters of the Cawdor Burn. Its capacity today is large at some 3.9 million litres and all of this, save for a few thousand casks, is used in Dewar’s blended products. The distillery was founded in 1812, by Captain William Fraser and it was not until 1919 that it parted from Fraser-family hands, after it was acquired by the Aberdeen-based James Leict and John Mitchell. Brackla ran in-house maltings for some time, though they were closed in 1966. Four years later the still capacity was increased with the addition of two further stills. Royal Brackla is currently under John Dewar and Sons ownership - Dewars was acquired by Bacardi in 1998, ending Diageo tenure, save for the warehousing which the drinks giant still rent as part of a long time lease. Accordingly Royal Brackla spirit is matured elsewhere. An official ten year-old was released in 2004 and there have been several independent bottlings throughout the years.

The exact date of Jasper Newton ‘Jack’ Daniel’s birth is unknown for his birth records were destroyed in a courthouse fire. Varying sources suggest 1846 and the brand themselves maintain it was in September of 1850. There is similar doubt as to the founding of the distillery though it was certainly at some stage between 1860 and 1880, it was located in Lynchburg, Tennessee. Jack had Welsh and Scottish blood and was one of thirteen children. He employed the services of his nephew, the Steinbeckian sounding Lem Motlow. Lem was adept at mathematics and ran the company bookkeeping. In the early hours of one morning, Jack Daniel was attempting to open his safe. It is said that he often forgot the combination and, maddened by the safe’s recalcitrance, he duly delivered it a sound kicking. Such was his fervour that Jack suffered an infection in one of his toes which eventually led to blood poisoning. In 1907, Lem was given the distillery, for Jack’s health was worsening. Sadly, Jack Daniel died in 1911. During the former years of the twentieth century alcohol was becoming outlawed. Tennessee prohibited it in 1910 and Lem Motlow relocated the distillery to St Louis, Missouri and to Birmingham, Alabama, though local laws and the eventual arrival of Prohibition forced closure. Lem became a Tennessee state senator and helped repeal the state prohibition laws and production began once more in 1938. During the Second World War, distillation paused nationwide between 1942 and 1946, the quality of grain was an issue and Lem did not restart production until 1947 when he found a good supply. It...
