The whisky distillery is located in Blackford, Perth and Kinross, close to the Ochil Hills and the Danny Burn, their main water sources. The distillery was mothballed in 1995 by then owner Whyte & Mackay.

It is located near Port Askaig and sits in lush, floral surroundings, overlooking the cove and the Paps of southern Jura. The distillery draws its water from Loch Nam Ban, whose waters travel through limestone and peat before reaching their beneficiary, Caol Ila. The whisky distillery was sold to Norman Buchanan in 1852 and then, following monetary hardship, to the Glasgow-based blenders Bulloch, Lade and Co who renovated the buildings in 1879. Following liquidation, Distillers Company Ltd acquired Caol Ila and the distillery was subsequently transferred to Scottish Malt Distillers. The capacity is moderate at 3.65 million litres annually, the majority of which is used in Johnnie Walker blends. Just 5% is kept for maturation as single malt. From 1999, unpeated single malts have been experimented with and in 2006 the first unpeated bottling was released in the form of an eight year-old. The sea beats the coast; her salty air and the island’s geology contribute to the rich character of Highland Park single malts. The distillery draws its water from the mineral rich springs to the east of the distillery as well as the Crantit Spring. Highland Park was founded in 1798, by David Robertson on what was once the site of Magnus Eunson's cottage. Eunson was not only a beadle at the local church but also a notorious smuggler. Highland Park was officially licensed in 1826. After James Borwick inherited the distillery in 1869, the production at Highland Park was slowed; James was a priest and believed that whisky production contradicted with his religious status. Accordingly, in 1876 Stuart and Mackay moved in and dramatically helped sales through overseas exportation.

Distillery Information CEO Annabel Thomas left her job as a consultant in London after a whisky road trip prompted her to see if she could create a distillery with a difference. By March 2017, Nc’nean (pronounced Nook-knee-anne, it’s an abbreviation of Neachneohain, a witch-queen in Scots Gaelic folklore), was founded as the first fully organic modern distillery in Scotland powered by 100% renewable energy. The wood chips for the biomass boiler are sourced from a local forest, while all by-products are recycled as animal and plant feed on Drimin Estate where the distillery is located. The distillery employs long mashes times and slower fermentation with varying yeast strains not commonly used in distillation. The unusual lamp-glass-shaped stills with have horizontal lyne arms and shell and tube condensers produce a light and fruity spirit, something the brand worked to achieve with the late distilling consultant Jim Swan, who “masterminded the design of the distillery and the base whisky recipe”. The new-make is rich, malty and has plenty of stone fruit. Two dunnage warehouses, located on the hill behind the distillery, feature temperature regulators to allow Nc’nean greater control over the flavour generated in cask over time.
