Finish: Elegant long lasting aftertaste. Distillery Information In 1655, the English under William Penn captured the island of Jamaica from the Spanish. With Penn’s invading force was a Frances Dickinson from Somerset. For his part in the capture of the island, he was granted 6,000 acres of land. Included in this grant was a sugar plantation that became known as the Appleton Estate in the Nassau Valley. This is far inland, about 80 miles from Kingston. Penn had three sons Ezekiel, Caleb, and Vickris, and the estate remained in the family until 1847. The first mention of this as a rum-producing estate was in 1749. Even then it was famed for the quality of its rum. Appleton Estate was acquired by another famous name in Jamaican rum, Wray and Nephew, in 1916. In 2012 the company was bought by the Italian Campari group. Today, Appleton Estate is considered one of the finest rums in the world. Only sugarcane from the estate which covers around 11,000 acres is used. Fermentation takes place using wild yeasts and lasts between about 36 and 48 hours. This relatively short ferment means that Appleton doesn’t have the big high ester flavours which occur during the longer fermentations used by certain other Jamaican distilleries. For distillation Appleton uses a mixture of pot and column stills. The pot stills are made in Scotland to Appleton’s unique specifications and the new make comes off at about 80% ABV. Most of the estate’s rums are blends of the two distillation styles but you do see some rare single pot still releases. Jamaican rum is very tightly regulated: the age statements follow the same rules as do those on single malt whiskies; the age stated must be that of the youngest spirit in the blend. Distillery Information The Hennessy story begins with Richard Hennessy, son of Lord Ballymacmoy. He was born in 1724 in Cork but left Ireland at the age of 20 as part of the ‘Wild Geese’ generation of Irish Catholics to fight for France against Britain. Hennessy arrived in France at the age of just 20. According to one story, he was injured at the battle of Fontenoy in 1745 in present day Belgium during the War of Spanish Succession. Later he settled on the banks of the Charente River, near the town of Cognac. In 1765, he went into the brandy business with two partners and the help of loans from Parisian banks. He married a local woman called Helene and had a son called Jacques, or James as he was also known. It was James Hennessy who turned his father’s brandy business into an international concern. His choice of wife was a canny one, Martine Martell, who he married in 1795. She was the daughter of Jean Martell, a British, or sort of British, he was from Guernsey, Cognac merchant. Hennessy began exporting to the US, the first shipment arrived in New York in 1794. Richard Hennessy died in 1800. In 1804, the firm took the big step of exporting in glass bottles rather than barrels. This meant that Hennessy had full control of the product from grape to the customer’s glass so that adulteration and outright counterfeiting were much harder. In 1806 Jean Fillioux was appointed master blend. Amazingly enough eight generations later his descendant Renaud Fillioux de Gironde is Hennessy’s master blender - a bit of almost unprecedented continuity in the Cognac industry.
