Linkwood is home to two stillhouses, Linkwood A, which is currently not in use, houses the two original stills and Linkwood B, in which a further four stills operate. Founded in 1779, by John Simpson, Bowmore is Islay’s oldest distillery. Following purchase in 1837, by William and James Mutter, the distillery was resold in 1892 to the Bowmore Distillery Company Ltd. Changing hands twice during the late 1920s, in 1963 the distillery was purchased for £117,000 by Stanley P Morrison. Bowmore has had a long affiliation with Japanese pioneers Suntory, who acquired a stake in the company during the late 1980s. In 1994, they bought the company outright. Bowmore enjoys a curious middle-ground as far as flavour is concerned; far from being a lighter offering - à la Northern Islay-based Bunnahabhain - the spirit is not as heavily peated nor as smoky, as its three Southern cousins surrounding Port Ellen. Distillery Information Lagavulin is one of a trio of distilleries sat on the south coast of Islay. Lagavulin produces some of the smokiest whisky Scotland has to offer, with the Lagavulin 16 Year Old standing as their most storied expression. Located on the shores of the Lagavulin Bay, the Lagavulin distillery is home to two pairs of stills. Lagavulin has a long distillation time, and many believe this imparts the intense richness of the famous single malt whisky. John Johnston founded the Lagavulin distillery in 1816, though there had been as many as ten illicit distilleries in the area since 1742. Lagavulin was home to legal distilling under Johnston’s eye, however. Shortly after it opened, a distillery named Ardmore was opened close by, though this became part of Lagavulin a few decades later. In 1836, John Johnston died and Lagavulin was bought by Alexander Graham, a spirits merchant from Glasgow. 25 years later, the distillery came under the ownership of James Mackie, who brought in his nephew Peter Mackie to work at Lagavulin shortly afterwards. During his time at the Lagavulin distillery, Peter Mackie became well known for working incredibly hard indeed, earning the nickname Restless Peter. Mackie founded the Malt Mill distillery in disused Lagavulin buildings in 1908, though it closed in 1962. However, its legacy lives on throughout Lagavulin. The buildings now house the Lagavulin visitor centre, the stills have been incorporated into Lagavulin’s distilling equipment and a sample of Malt Mill whisky is kept at Lagavulin. Lagavulin decommissioned their own floor maltings in 1974 and they began to get their malt from Port Ellen.

Distillery Information The Fettercairn whisky distillery lies not far from the River Esk in the Eastern Highlands. Here, at the foothills of the untamed Cairngorm Mountains, Fettercain sits in its namesake town, far from any other Scotch distillery, its cooling waters trickling down from the untamed peaks. Originally sited a good two miles further up the slopes of the Cairngorms, the Fettercairn distillery was founded in 1824 by Sir Alexander Ramsay, who licensed it a year later. In 1830, Sir Alexander sold the distillery as well as Fasque Estate to Sir John Gladstone, father of William Ewart Gladstone who would be Prime Minister on four occasions over the course of the 19th century and, during which time, he would not only legalize the selling of bottled whisky to the public, but also scrap the Malt Tax. In 1887, a fire rendered the distillery almost totally destroyed and it did not reopen until 1890. Fettercairn closed in 1912 and production did not recommence until 1939 when Associated Scottish Distillers acquired the distillery. Today, Fettercairn whisky is generally light and balanced, the only official bottling being a twelve year-old which replaced the previous ten year-old. In the1960s, the company thrived as never before and Mario Rossi decided that it would be time to take a decisive step forward by beginning to import whisky from the land of its origin - Scotland. Due to the tastes of the time, the first whiskies imported were blended sorts and it took - even in Italy, where palates are most refined - nearly ten years before the taste buds of Mario Rossi’s clients demanded a more distinguished taste. Distillery Information The Glen Garioch distillery may well be Scotland's first licensed distillery. Varying dates are given as to the founding of the distillery, but all are predated by an article in the Aberdeen Journal on the 1st December 1785, which announced the first distillation of spirit at the site. Glen Garioch (pronounced ‘Glen Geery’) lies at the village of Old Meldrum in Aberdeenshire. The distillery buildings sit huddled on a little outcrop flecked with heather gorse and grasses and surrounded by barley pastures - it is said that some of the best barley in Scotland is to be found there. Having changed hands many times over the course of the 19th and early 20th centuries, Glen Garioch distillery was shut down in 1968. Stanley P Morrison acquired the distillery two years later. In 1973, following extensive renovations, production resumed. The whisky produced was much more reminiscent of traditional Highland single malts, this was due in part to the floor maltings at the distillery and the malt maker’s schooling on Islay, where he learnt the joys of peated whiskies. At a time when the Islay malt whiskies were very fashionable, Glen Garioch’s new, robust character did much for the fortunes of the distillery. The floor maltings were decommissioned in 1979, though recently there has been much talk of using them once more. Today, the distillery is under the Japanese Suntory ownership, after they acquired Morrison Bowmore in 1994. Glen Garioch currently runs at three quarters of capacity, producing around 700,000 litres per annum and selling roughly one third of this yearly, much being exported for the Asian market. Distillery Information Glen Scotia is one of just three distilleries in Campbeltown producing single malt at the moment (along with Springbank and Glengyle). It was founded in 1832 by Stewart, Galbraith and Co and sited to the north of the town. The distillery draws its cooling waters from the Crosshill Loch and two bore holes, drilled over twenty metres into the rock below. Campbeltown was the capital of Scotch whisky production before the US Prohibition was enacted. There were some twenty-eight distilleies, though after the act was passed only three survived. Glen Scotia was acquired by West Highland Malt Distillers in 1919 and five years later the company went bankrupt. Duncan MacCallum, a director, purchased the company. The distillery was closed again in 1928 and a couple of years later, following great financial trouble, Duncan MacCallum threw himself into the very loch from which the Glen Scotia distillery draws its water. It is said that his ghost haunts the distillery. Glen Scotia survived the Second World War, having restarted production in 1933 after the repeal of Prohibition. In 1954, Hiram Walker acquired the distillery and shortly after it was purchased by A Gillies and Co. In 1979, £1 million was spent on reconstruction which lasted until 1982 and two years later the distillery closed once more. Glen Scotia was acquired by Glen Catrine Bonded Warehouse Ltd and in 2000 Loch Lomond distillery took over, providing staff and running the operations. Fermentation times range from 70-92 hours in the four stainless steel washbacks and the distillery has a single 1.1 tonne semi-lauter mash tun. Both unpeated and peated spirits are produced and filled into a combination of ex-bourbon hogsheads and quarter casks as well as ex-Oloroso Sherry casks (roughly a third going into each). Caol Ila 15 Year Old 2007 (bottled 2022) - Wilson & Morgan 700ML Tasting Notes Nose: Earthy notes of leathery oak are softened by tangy marmalade, with whisps of woody spice and smoked tea. Palate: Waxy citrus and heaps of oaken spice, with polished cedar, anise, and clove leading towards sweeter candied fruits and damp, smoky peat. Finish: Stewed apples and more bittersweet peels balance hearty smoke and pungent, charred earth. Distillery Information Caol Ila was founded to the North of Islay in 1846 by the pleasingly-named Hector Henderson. It is located near Port Askaig and sits in lush, floral surroundings, overlooking the cove and the Paps of southern Jura. The distillery draws its water from Loch Nam Ban, whose waters travel through limestone and peat before reaching their beneficiary, Caol Ila. The whisky distillery was sold to Norman Buchanan in 1852 and then, following monetary hardship, to the Glasgow-based blenders Bulloch, Lade and Co who renovated the buildings in 1879. Following liquidation, Distillers Company Ltd acquired Caol Ila and the distillery was subsequently transferred to Scottish Malt Distillers. The capacity is moderate at 3.65 million litres annually, the majority of which is used in Johnnie Walker blends. Just 5% is kept for maturation as single malt. From 1999, unpeated single malts have been experimented with and in 2006 the first unpeated bottling was released in the form of an eight year-old. Caol Ila, whose name derives from the Gaelic for ‘Sound of Islay’, has been included in the Diageo Classic Malts range, exhibiting twelve and eighteen year-old expressions as well as a Moscatel-finished Distillers Edition. Jura 30 Year Old 1992 (bottled 2022) - Wilson & Morgan 700ML Tasting Notes Nose: Green apples and soft grape notes, soft baked cereal bars, lemon and lime fondant icing, banana bread and soft chewy toffee, soft spices and a little hint of beeswax, a light coastal aroma, farmhouse bread and salted butter. Palate: Fruity with some herbal notes including a deliciously balanced spiced apple and toasted waffles, some rich waxiness with Jasmine tea. Finish: very subtle lemongrass, ripe banana, a nice tannic flavour that balances out the rich fruity herbal notes across the lingering finish.
