It’s mixed with pure island spring water sourced from the Allt Breacach and the Allt Gleann burns in a 1.5-tonne mash tun before long fermentation (at least 70 hours, going as high as 120) occurs in eight, 8000-litre capacity Douglas Fir wooden washbacks. Distillation takes place in two traditional copper pot stills custom made by Forsyths of Rothes, an 8000-litre wash still and a 5000-litre spirit still. More than 50% of Torabhaig whisky is aged in first-fill bourbon casks, but the brand also has Port, Madeira, Cognac, Sauternes, Bordeaux wine, virgin European oak and refill casks in its warehouses, which includes a spread of dunnage, racked and palletised. Over the course of time, the name 'Lann Marnoch' gradually became Anglicised and eventually the area was known as Longmorn. Construction began on a distillery on the site in 1893 under John Duff and Company, founders of Glenlossie in 1876. In 1894, the build was completed and the total costs amounted to £20,000. Production began in December. John Duff bought out the other members of the group and officially founded the Longmorn Distillery in 1897. A year later he built Longmorn Number 2 next door, changing its name latterly to BenRiach. John Duff went bankrupt in 1909; the Pattison Crisis had left him reeling and he had already failed in his attempts to build distilleries in America and South Africa. The shares were acquired from the bank by James R Grant.

The site would produce a smashing 39 million litres of spirit each year before it was closed for good. Distillery Information The Glenrothes story begins in 1878 when a distillery was founded by James Stuart and Co in the town of Rothes on the banks of the river Spey. Production commenced in 1879. The group also owned the nearby Macallan distillery. James Stuart, a principle of the group, left to focus his efforts on Macallan and three remaining members of the syndicate; William Grant, Robert Dick and John Cruickshank, formed William Grant and Co. In 1887, William Grant and Co. merged with Islay Distillery Co to form Highland Distillers Company (a forerunner of the present day Edrington Group). This included the Glenrothes distillery, as well as Bunnahabhain on Islay. The capacity was increased with the addition of further stills in 1898. 1922 disaster struck when the No 1 bonded warehouse caught fire and hundreds of casks of whisky exploded. Over 2500 barrels of whisky were lost. It is said that the locals had a field day scooping up all the whisky that had poured into a nearby burn. Despite such set-backs, Glenrothes was much in-demand by blenders and plays an important role in Berry Bros. & Rudd’s Cutty Sark blend which was launched in 1922 and went on to be one of the best-selling whiskies in the world. In 1987, the famous St. James’s wine merchant became the agent for Glenrothes and eventually in 2010 bought the distillery from Highland Distillers though they sold it on to Edrington, Macallan’s parent company, in 2017.
