The distillery draws its water from Loch Nam Ban, whose waters travel through limestone and peat before reaching their beneficiary, Caol Ila. The whisky distillery was sold to Norman Buchanan in 1852 and then, following monetary hardship, to the Glasgow-based blenders Bulloch, Lade and Co who renovated the buildings in 1879. Following liquidation, Distillers Company Ltd acquired Caol Ila and the distillery was subsequently transferred to Scottish Malt Distillers. The capacity is moderate at 3.65 million litres annually, the majority of which is used in Johnnie Walker blends. Just 5% is kept for maturation as single malt. From 1999, unpeated single malts have been experimented with and in 2006 the first unpeated bottling was released in the form of an eight year-old. Accordingly, the spirit was given a year in sherry casks, which produced a much fuller, and fundamentally, more complex flavour. Although not sold as Auchroisk (pronounced ‘OH-thrusk’) - the company deemed the name difficult to read - the distillery’s own bottlings were first sold, up until 2001, under the name Singleton and in 1986 the first bottling, a twelve year-old, was released under this name. A very large distillery with substantial storage facilities- enough to hold 265,000 casks - Auchroisk is large enough to hold storage for other distilleries as well. Originally part of the group IDV, comprising of W A Gilbey and Justerini & Brooks, in February of 1972 the group was purchased by Watney Mann and, in July, merged with Grand Metropolitan. After the merger between Guinness and Grand Metropolitan in 1997, Auchroisk is currently under the ownership of Diageo. The distillery is still young and, as such, the range is small, based mainly around the ten year-old.

Next to the distillery is a large and rather beautiful reservoir which plays host to a variety of local wildlife including ducks and swans, the latter can be seen gracing the label of the twelve year-old bottling. Linkwood is home to two stillhouses, Linkwood A, which is currently not in use, houses the two original stills and Linkwood B, in which a further four stills operate. The Glen Ord distillery lies in the village of Muir of Ord to the north of Inverness. It was during the 13th century that King Alexander III gave areas of land to the Mackenzie’s of Ord. In 1820, Thomas Mackenzie inherited a plot of land and used much of it to grow barley. The Black Isle, as the area is known, has long since been associated with the cultivation of barley and accordingly the Ord Distillery Company was founded in 1838 and licensed to Donald MacLennan and Robert Johnstone. The pair filed for bankruptcy some nine years later, but continued to run the distillery illegally until Thomas McGregor and Alexander McLennan applied for a new licence in 1855. There have been several bottlings over the years, including a few limited releases and a couple of twelve year-olds, including the Singleton of Glen Ord, which is destined for Asian consumers.

After purchase in 1896 by James Ainslie & Heilbron, a Glasgow-based blending company, the distillery was rebuilt and still retains the floor maltings and kiln that were then installed. In 1967, a build commenced on a new distillery, also named Clynelish, located just across the road from the original Clynelish. The build was completed a year later and the former Clynelish distillery was renamed Brora (pronounced ‘Broar-err’) in 1969. The name derives from the Old Norse ‘Bru’r aa’ meaning ‘the bridges river’. Brora was purchased in 1930 by Scottish Malt Distillers, who later became a subsidiary of Diageo. Closing in May of 1983, the buildings that made up the Brora distillery are now used by the new Clynelish distillery as a visitor centre and warehouse.
