Founded in 1817, the Highland single malt whisky producer today has an annual capacity of 10.2 million litres and distills for brands including Haig Dimple, VAT 69 and Johnnie Walker. Despite its size and stature (it’s Diageo’s third-largest whisky distillery, covering more than 20 acres), there’s not much out there about Teaninich as a whisky in its own right – which is rather a shame as the liquid exudes as much character and body as its two illustrious near-neighbours: Dalmore and Glenmorangie. It was Captain Hugh Munro, head of the local clan, who set up Teaninich more than 200 years ago. Fun fact: in 1887 it became the first distillery north of Inverness to have electricity and a telephone. Teaninich remained in Munro family hands up until 1904, when Robert Innes Cameron, formerly a major shareholder, became the sole owner. After his death in 1932, the site was acquired by Distillery Company Limited the following year. Teaninich was passed from pillar to post through various mergers and acquisitions during the latter part of the 20th century, and today the distillery is of course owned by Diageo. Distillery Information In 1958, Tormore whisky distillery was built by Schenley International, they had intentioned it to supply whisky for their Long John blends. The rather elegant distillery sits in the Cromdale Hills of Speyside, surrounded by pine forest and overlooking the River Spey. The buildings were designed by Sir Albert Richardson, of Royal Academy fame, and are so picturesque they are already B-listed and, furthermore, have been reproduced in scale model form for an exhibition at the Scotch Whisky Heritage Centre in Edinburgh. Production commenced in 1960 and, following a healthy start, the stills capacity was doubled to number eight. Today, Tormore has a capacity of 3.7 million litres annually, all of which is filled at Chivas Bros warehouses. Some of the spirit is returned for maturation at the distillery. Allied Domecq acquired Tormore in 1989 and five years later the first official house bottling was released, Tormore twelve year-old. Independent bottlings are rather rare, and the official range is quite small, one can, however, find Tormore in the Ballantine’s blend. Presently under Pernod Ricard ownership following Chivas’ 2005 acquisition of Allied Domecq.

Closing briefly at the beginning of the 20th century, Tomatin experienced good fortunes and during the 1950s began increasing its stills, installing the last in 1974, bringing its total to an impressive 23, although 11 were dismantled in 2002. Following the 1985 liquidation of prior owners Tomatin Distillers Company, the Tomatin distillery became the first Scottish single malt maker to be purchased by a Japanese company; in 1986 Takara Shuzo and Okara acquired Tomatin, which stands, today, as one of Scotland’s largest distilleries. Tomatin not only has a substantial capacity but also boasts an onsite cooperage and 14 warehouses, nearly as large as Japan’s largest distillery, the Suntory owned Hakushu. There is a profusion of independent bottlings, though there is a rather small house range. The Scotch from Tomatin is also used in many blends, notably in the famed ‘The Antiquary’ range. Distillery Information In 1892, John Morrison purchased the Knock Estate and farm. Shortly after, he uncovered a spring on Knock Hill’s southern slopes. He found the water to have a superb flavour and sent it to a Distiller’s Company Limited-owned Laboratory in Edinburgh for evaluation. They confirmed the water was indeed of outstanding quality and put up an offer for the site. Morrison gladly accepted. The Knockdhu distillery was built in May of 1893 and designed by the Elgin-based architects Gordon and Macbey. The distillery was the first to be built by Distillers Company Ltd. The water is piped from Knock Hill to the distillery and also to those living in the local village, though today five other water sources are used in supplement as well as that from the Ternemney Brook, which proffers the distillery’s cooling water. The capacity is small; the distillery’s pair of stills produce around 900,000 litres yearly. Today, none of the whisky is bottled as Knockdhu single malt. Rather as anCnoc. The name anCnoc was chosen as the current owners, Inver House, deemed Knockdhu too similar to Knockando and relabelled it to avoid confusion. Despite being small, the Knockdhu whisky distillery boasts large onsite storage facilities; its five warehouses have space for 7,600 casks.

In the early 18th and 19th century most Highland malt whisky was distilled illegally. Despite its shady beginnings, Glenlivet had a reputation that reached as far as London. Indeed when George IV visited the region in 1822, he wanted to try the fabled Glenlivet and was given something that was described as “whisky long in wood, long in uncorked bottles, mild as milk, and the true contraband gout in it.” The man behind that famed dram was George Smith, a tenant farmer on land belonging to Alexander Gordon, Duke of Gordon. The Duke, not surprisingly, was a great advocate for reforming the draconian legislation around distilling so that he could commercialise it. 1823 saw the passing of the Excise Act which liberalised distilling but also provided more resources and power to excise officers. One of the first people to take advantage of the new laws was George Smith who built a new distillery at Glenlivet in the Highlands on what was once a farm distillery called Upper Drummin. Threats were made on George Smith’s life by smugglers and the story goes that he took to carrying a pair of pistols to protect himself against those who stood to lose their livelihoods but he held firm. In this he was backed by government legislation and a sympathetic landlord. The statistics tell the story: 14000 illicit distilling activities were uncovered in 1823, but by 1834 it was down to 692. Illicit distillation never became a major problem again.

Distillery Information aol Ila was founded to the North of Islay in 1846 by the pleasingly-named Hector Henderson. It is located near Port Askaig and sits in lush, floral surroundings, overlooking the cove and the Paps of southern Jura. The distillery draws its water from Loch Nam Ban, whose waters travel through limestone and peat before reaching their beneficiary, Caol Ila. The whisky distillery was sold to Norman Buchanan in 1852 and then, following monetary hardship, to the Glasgow-based blenders Bulloch, Lade and Co who renovated the buildings in 1879. Following liquidation, Distillers Company Ltd acquired Caol Ila and the distillery was subsequently transferred to Scottish Malt Distillers. The capacity is moderate at 3.65 million litres annually, the majority of which is used in Johnnie Walker blends. Just 5% is kept for maturation as single malt. From 1999, unpeated single malts have been experimented with and in 2006 the first unpeated bottling was released in the form of an eight year-old. Caol Ila, whose name derives from the Gaelic for ‘Sound of Islay’, has been included in the Diageo Classic Malts range, exhibiting twelve and eighteen year-old expressions as well as a Moscatel-finished Distillers Edition. It is the second biggest-selling Scotch in the world after Johnnie Walker – albeit with less than half the sales volume of its competitor – and has a traditionally very strong presence in southern European and Asian markets. Similar to Johnnie Walker, the brand has its roots in a small grocery store, this time set up in Edinburgh by farmer's son George Ballantine. In 1865, he opened a wines and spirits business in Glasgow, creating his own blends and developing an international client list. The firm was sold in 1919 and the Ballantine's name was retained as a brand for the new owners' blends. It was then acquired by Hiram Walker of Canada in 1937. By the 1960s, trade was focused on mainland Europe. The brand moved to Allied Domecq in 1988, then Pernod Ricard in 2005. The core product, Ballantine's Finest, is a blend of around 50 single malts with emphasis on the Chivas-owned Miltonduff and Glenburgie distilleries. There are also various aged expressions, including a 40-year-old whisky, which is one of the most expensive blended whiskies on the market. In 2002 the Dumbarton Grain distillery was mothballed, with production moved to the Strathclyde Grain distillery in the Gorbals district of Glasgow. The company still operates a bonded warehouse and bottling plant in its original location.

The distillery has quite a small annual capacity of just one million litres and runs at but three quarters of this. In 1930, the distillery closed and was used as a power plant. It was not the only time Tobermory had been used for purposes other than whisky distillation; in 1982 the buildings were leased to a dairy company who used them for storing cheese.

Boasting a bold ABV of 63.9%, it's a robust and complex sipper, with notes of damp oak, dark cherry chocolate, and roasted hazelnuts. Palate: Red fruits and berries, boozy cherries, and cacao with a bold backdrop of rich oak and roasted hazelnuts. Finish: More of those dense dark fruit notes, shavings of dark chocolate, and gently drying oak. Distillery Information Bruichladdich was built by Barnett Harvey in 1881. Five years later, the Bruichladdich Distillery Company was founded and renovation and refurbishment commenced. The ‘Laddie’, as it is affectionately known, is often considered to be the fruitiest, most inventive Islay malt and, indeed, there has been some contention as to whether it has truly attained Islay-status. Bruichladdich countered this with the introduction of the Port Charlotte range and later with the 2008-released Octomore, the world’s most heavily peated whisky with a phenol content of 131ppm. Then the distillery went almost the complete opposite direction and created The Botanist Gin! The gentle character of the spirit is attributed by some to the milder weather conditions at Bruichladdich's locality, sheltered, as it is, from Mother Nature by the Rhinns, the rugged Islay mountain range. Following the death of the then owner, Barnett’s son William Harvey IV in 1936, the distillery was run by Kenneth Harvey and sold a year later to Joseph Hobbs for the sum of £23,000. Silent for the latter part of the Second World War, Bruichladdich closed its in-house maltings in 1961, bringing malt in from the Islay maltings at Port Ellen. Enjoying good fortunes, further stills were added in 1975 to grapple increasing demand. Blenders Whyte and Mackay acquired the distillery under Invergordon Distillers in 1993. Just two years later, production ceased and in 2000 the distillery was purchased by Murray McDavid for £6.5m.
