The domaine was formed in 1946. There are 5 hectares (12 acres) of manually harvested vineyards, currently in conversion to organic status. As well as avoiding sulfur, there are no chemical additions, chaptalization or acidity management, and no fining or filtration of the base wines. Fermentations use native yeasts. All of the white cuvées are made entirely from first-press juice. The Blanc D'Assemblage Brut Nature is the core non-vintage release with around 9000 bottles. It combines 47 percent each of Chardonnay and Pinot Meunier with 6 percent Pinot Noir. The base wine is vinified entirely in thermoregulated stainless steel. Both the Blanc de Chardonnay and Blanc de Meunier have zero dosage though the former is labeled as an Extra Brut and the latter as a Brut Nature. Output for both is about 3,700 bottles. The Rosé de Saignée is two-thirds Pinot Meunier, one-third Pinot Noir. Only around 1,000 bottles are released. Eureka! is a Brut Nature based on Pinot Noir (70 percent) with equal parts of Chardonnay and Pinot Meunier. Production is around 2000 bottles. Distillery Information Bodegas Lustau is a famous Sherry producer in Andalucia and is arguably the most recognized fortified wine producer in the world. It was was founded in 1896 by José Ruiz-Berdejo as an almacenista, which also grew its own vines. Almacenistas generally bought young wine (Ruiz made his own) and matured them in their own soleras, before selling them to larger houses, who would either blend it with older wine, or mature it longer in their larger soleras. It wasn't until the 1950s that Ruiz's son-in-law Emilio Lustau Ortega began bottling and exporting his own wine. Now based in Jerez, Lustau is the only winery that has sites in all three cities of the Sherry triangle: Jerez de la Frontera, El Puerto de Santa María and Sanlúcar de Barrameda. Lustau buys fruit from vineyards, while also maintaining two of its own. The first is the Montegilillo vineyard, which is on the white limestone albariza soil local to the region. The second is the Las Cruces vineyard, which is on sandy coastal soils. Lustau now produces a range of Sherry, but achieves the most recognition for its Almacenista collection. Continuing the tradition, the collection is series of single offerings from smaller producers that Lustau bottles and distributes. Distillery Information Martin Miller’s London Dry was launched in 1999, launched around a decade ahead of the gin boom. Martin Miller quested to create a seductive gin so good that it would rejuvenate the market, experimenting with different combinations and proportions of botanicals. The gin is distilled at Langley’s distillery in the west midlands using traditional methods, with the help of the beloved copper pot still named ‘Angela’. Once the distillation is over, slightly absurdly, the gin is then taken on a 3,000 mile round trip to Iceland to be blended with some of the world’s purest water. Sadly, Martin Miller passed away in 2013, though he left behind him a heritage that will long be remembered.
